It's a good thing (only in this case / video) that we cannot see the number of down votes. I say, "only in this case" because I want to see down votes for the liberal videos out there. My sister is diabetic and cannot have any sugar I made your exact recipe without the sugar I added hot water to my cup and I added two tablespoons of the cocoa and milk powder which I sifted all together along with the corn starch and the salt then I just used one sweet and low and one Splenda I also added one tablespoon of coffee creamer it was the yummiest cocoa
For those of us who are diabetic, I came across a recipe for making stevia powdered "sugar" that could work for this. It's 1 cup of Stevia to 2 tblsp of cornstarch. You put it in your blender and blend well. Then use it as you would powdered sugar.
Dont have to worry about tbe shelf life in my house...the homemade hot cocoa wouldnt last that long!😉☕❤️ I didnt know thats what sucanat meant! Thanks again for another informative video with your gentle spirit.

Mrs. Mary, just made a half batch using store brand sweetener for us diabetic folks to make sure I liked it. I used dark chocolate powder and a cup of artificial sweetener and heated milk on the stove and it was delicious, I think I would probably add a little less sugar and I loved using milk instead of water even though it had powdered milk. I will try with water but thanks so much for all you do. I learned how to make bread during the beginning of Covid and passed around to friends, kept me busy since I couldn’t work. ❤️
Last week I found a cute box pattern to make out of paper and I thought that would be great for Christmas hot cocoa ... this week here you are... THANK YOU Can't wait to try this..... I did find the OVEN DEHYDRATE method for marshmallows Preheat the oven to the LOWEST setting you can get. Preferably 200°F or lower. Place marshmallows on a single layer on the baking sheet. Toss every 20 minutes and bake until marshmallows are completely dry. (It is a good idea to leave the oven door cracked open so you can keep a good eye on the marshmallows and avoid getting them too hot). Let marshmallows cool and store in an airtight jar in the pantry.
If you’re using powdered sugar from the store you will not need the cornstarch since there is cornstarch already in it. It’s there to prevent caking as well although powdered sugar without cornstarch is available also.
Hi Mary, I like to ask an expert.....is this correct that powdered sugar from the store has corn starch in it ???? I have never heard that before ....:) My Son when he bakes if he doesn't have powdered sugar he grinds the regular sugar and makes his own.....he was the one who told me this...so I learn something from my Son who does a lot of cooking at his house....and he makes a mean Apple Pie....last time he visited us, he made us one of his fav. Pies....all his Daughters when he goes for a visit he has to at least make them one of His Apple Pies:) they love it too....I just think that is so neat....he makes his own crust....I told him he puts my pie to shame...I cheat and use store bought pie crust LOL
I did not know this about powdered sugar......but I want to use Monk sweetener......white sugar feeds cancer and is so bad for us, I try to stay away from it when I can use a safer substitute.... and Bobby Flav City says this Monk sugar is a Bobby approved sweetener....you can check his blog, he is up to date on everything.....can learn a lot from him.....

I love this mix, thanks Mary!Canned evaporated milk also makes smooth tasty hot chocolate. Add water or not. A few Tbsp of sugar in a sauce pan, 2 or 3 tsp cocoa, a tiny pinch of salt, a can of evap. and water to taste. Stir and heat. Nice in a pinch. I always keep a few cans on hand, especially when baking strikes my fancy on a snowy day and I'm out of milk.

Many years ago in I had a recipe for something similar but I know it wasn’t as healthy a recipe as this. Also I would add finely ground instant coffee sometimes for cappuccino.
I made this recipe this morning. One thing I like to do is put hot cocoa mix in my coffee when it’s cold outside. I am absolutely in love with McDonalds peppermint mocha but thought if I made this with powdered sugar & drop a peppermint disc in to dissolve, the disc would add the extra sweetness needed. Well, no peppermints in the house that I could find so I added the 1/4 cup mix and a packet of stevia….pure awesomeness!!! I can’t wait to try it with peppermint cause the hot chocolate is divine & not overly sweet! Thank you Mary’s Nest for another home run recipe!!
I made this since I got married at 19 yr old and I just can't buy or drink the package anymore...I am going to try the Sucanat for sure...and everyone loves these as gifts! I only had one daycare child want the package stuff, but my 4 children all love it ☺ So glad u shared this!
I really enjoyed this mix, I made the first batch with a powdered whole milk, Nido by Nestles and dark chocolate powder and I used a sugar substitute so there wouldn’t be any more than what was already in the milk. I made another batch with powdered fat free milk, regular chocolate powder and powdered sugar, I didn’t care for it as much. I used milk in both rather than water. The Nido was more expensive but well worth the price, I found it during the beginning of Covid and it was the only one left on the shelf luckily I picked it up and saw the English writing, it is mostly in Spanish. As a diabetic I use stevia. Other sugars are not recommended for us. Also, I like to add a little Glycerna as a " creamer " for my coffee or to make a hot chocolate with or without coffee. They don't have a powder form yet, I don't think. That would be a good combo as for dry cocoa mix and the Glycerna. Bringing fresh milk isn't always an option. With this, both are shelf friendly to start, putting the once opened Glycerna in the cooler.

I have just made this but in half cup/quarter cup ratio to see what it is like. All blended in a bullet for speed. It took 5 heaped teaspoons to taste great. I also added 1T of powdered coffee mate to the liquid and blended in the bullet. Oh my. Really great and saved me from going out to buy chocolate today! Thanks Mary
I like to make own home made flavorful marshmallows. Rasberry would be awesome with the cocoa. When I cut out shapes, there are always scraps. This is such an excellent use of the scraps. I never thought of dehydrating them!

In fact, I'm going to do a dairy-free version using coconut milk powder and coconut sugar. I might decrease the sugar and add powdered stevia to make up for the sweetness. Oh Mary...I had to comment on this recipe! My youngest daughter and I made this and it tastes EXCELLENT!!! We did make it sugar-free by using the equivalent of Sweetleaf Stevia packets, and the only thing we changed was the arrowroot powder. I saw another recipe online that used chocolate pudding mix as a thickener, so we used the same measurement of that instead of the arrowroot powder. Both my kiddos said this was a winner! 👍🏾👍🏾
WW here! Thanks for the sugar free chocolate pudding mix idea! Swiss Miss reduced calorie cocoa mix is almost $4 a box in my area! I buy Organic Cacao Powder at Walmart and add 1 tablespoon to the Swiss Miss and Trader Joe’s Organic Stevia Extract to the cup and stir. Turns it into 2 cups and the cacao powder has more chocolate flavor!😋 Joe’s Stevia is made of just 🍃 no stems or fillers and it has a tiny little spoon in the bottle to measure a tiny amount. Lasts forever! Thanks Mary for the recipe now I won’t be buying Swiss Miss any more! ❤️ watching you cook and I have learned so much!
I have made hot chocolate mix before. I love the use of the arrowroot idea. I will try it. I like to use the dark chocolate powder. I also add vanilla powder. i want it in my pantry for the coming winter.
best cocoa mix....darkest choc you can find...sugar .pinch of salt.mix in sauce pan with a couple tablespoons water..bring to a boil..add milk and vanilla..warm to liking..add cinnamon and nutmeg... make it fresh and drink it all up!! soooo good for sleighriders!!

Dehydrating those marshmallows are fantastic because they all stay dry and you can mix them in with your hot chocolate mix without it sucking up into the marshmallow due to moisture
Ohhhh---I'm doing this! This will add to our hygge atmosphere! I keep a little hot drink 'bar' in our dining room with our coffee pot, a slow cooker going with chaga in it (I refuse to call it tea as I am a coffee-lover. ;) ), and a basket of cocoa and tea blends. I made some with Aldi’s version of splenda (im diabetic). Its so fluffy and light it mixed right up. Its a homemade Christmas this year. Everyones getting a jar of this mix in their basket! Thank you for sharing!!
When I make hot cocoa, I always add vanilla. In the future, I plan to make some vanilla flavored sugar first to add to this mix. Since this is a dry mix, vanilla sugar would give that added flavor I like.

Oh, Mary! This recipe reminds me of when I went off to college. My Mom thought you had to have this mix along with an immersion heater to heat your water with. Brings back great memories. I've been looking for a recipe like this, thanks. I find with any hot cocoa mix, that if I put 1/4 of the liquid in the cup with the dry ings and then mix that well, then add rest of liquid, it mixes much easier and less possible splashing.
The problem I have with the homemade Chocolate Mix or the Coffee Creamer is , the instant milk I'm using won't dissolve in hot water. It makes for a nasty cup hot chocolate or coffee. I add a little cold water to the mix in the cup and dissolve the instant milk before adding the hot water. Thank you for this shelf stable recipe, it is a Godsend to me. I'm not a very good cook and I glean your pages for shelf stable recipe ideas and this is my favorite

Hi Love your videos. Just to let you know that I have retired to Belize. The brown sugar as it is called here is a lot cheaper than white. We love it. It has more molasses in it because it is not as processed and it natural.
I love Tom Horton's Holiday Peppermint Hot Chocolate. Its crazy good. They put crushed candy cane in it on top of whipped cream. So pretty. The crushed candy canes could be substituted for the marshmallows in the jars. Yummm

In the 70's, we had a very popular instant hot chocolate mix, made it every winter. Somewhere along the way, I've lost the recipe but it used a can of Nestles chocolate mix for hot or cold drinks,, a container of coffee creamer, sugar and dry milk,,fatless. Cocao itself seems to separate and settle in a cup but the Nestles instant mix didn't do that. I think we used the same amount of mix over cup too, as your instructions. I'm thinking, later on, there was no coffee creamer but didn't miss it at all...maybe used more powdered milk. Didn't use whole dried milk either. Had to be careful too, that our hot water wasn't boiling because it will cook the instant milk.... I was thinking of this mix tonight just for us oldies....and suddenly you appeared on my UA-cam scanning. Thank you.

Used cacoa, sweetener (xylatol) and whole milk as I wanted a "dark" hot chocolate. Works like a dream, just used your proportions. Hot water and a whisk. Very happy diabetic subscriber, thank you

I love this ❣️ I personally would make a little out of the parchment paper, put the marshmallows in it and tie it off with a decorative twist tie or more ribbon so that they wouldn't have to put them in something else or have the marshmallows rolling all over the counter.

Thank you. I don’t do dairy but they make soy powdered or coconut powdered milk. The expiration date would be sooner. One could do the sugar, arrowroot and cocoa together and add the non dairy milk separately. Dehydrate mini marshmallows are awesome.
Yes, you could definitely use those alternatives! And you could also leave out the milk powder and then use the mix mixed with your choice of hot liquid and prepare it on the stove. Love, Mary
Thanks for the tutorial. I noticed that you have 'under cabinet lighting'. That is an excellent idea for light where you need it for making coffee and the microwave.
You can also use dehydrated strawberries or freeze dried strawberries ground up into a powder. You can also buy powdered strawberries those are a little expensive. I usually do the swap 1 for 1 sometimes you can cut it down depending on the recipe. Just about any chocolate recipe it’s easy to disguise the strawberries used as sugar instead of sugar. I am diabetic and it runs in the family so I do it with a lot of desserts little ones don’t even know.

My sister is diabetic and cannot have any sugar I made your exact recipe without the sugar I added hot water to my cup and I added two tablespoons of the cocoa and milk powder which I sifted all together along with the corn starch and the salt then I just used one sweet and low and one Splenda I also added one tablespoon of coffee creamer it was the yummiest cocoa
For those of us who are diabetic, I came across a recipe for making stevia powdered "sugar" that could work for this.
It's 1 cup of Stevia to 2 tblsp of cornstarch. You put it in your blender and blend well. Then use it as you would powdered sugar.
Dont have to worry about tbe shelf life in my house...the homemade hot cocoa wouldnt last that long!😉☕❤️ I didnt know thats what sucanat meant! Thanks again for another informative video with your gentle spirit.

Mrs. Mary, just made a half batch using store brand sweetener for us diabetic folks to make sure I liked it. I used dark chocolate powder and a cup of artificial sweetener and heated milk on the stove and it was delicious, I think I would probably add a little less sugar and I loved using milk instead of water even though it had powdered milk. I will try with water but thanks so much for all you do. I learned how to make bread during the beginning of Covid and passed around to friends, kept me busy since I couldn’t work. ❤️

DEHYDRATE method for marshmallows
Preheat the oven to the LOWEST setting you can get. Preferably 200°F or lower. Place marshmallows on a single layer on the baking sheet. Toss every 20 minutes and bake until marshmallows are completely dry. (It is a good idea to leave the oven door cracked open so you can keep a good eye on the marshmallows and avoid getting them too hot).
Let marshmallows cool and store in an airtight jar in the pantry.
If you’re using powdered sugar from the store you will not need the cornstarch since there is cornstarch already in it. It’s there to prevent caking as well although powdered sugar without cornstarch is available also.
Also. Because of this For gluten free necessity, make sure store bought powdered sugar is gluten free.

My Son when he bakes if he doesn't have powdered sugar he grinds the regular sugar and makes his own.....he was the one who told me this...so I learn something from my Son who does a lot of cooking at his house....and he makes a mean Apple Pie....last time he visited us, he made us one of his fav. Pies....all his Daughters when he goes for a visit he has to at least make them one of His Apple Pies:) they love it too....I just think that is so neat....he makes his own crust....I told him he puts my pie to shame...I cheat and use store bought pie crust LOL
I did not know this about powdered sugar......but I want to use Monk sweetener......white sugar feeds cancer and is so bad for us, I try to stay away from it when I can use a safer substitute.... and Bobby Flav City says this Monk sugar is a Bobby approved sweetener....you can check his blog, he is up to date on everything.....can learn a lot from him.....

I love this mix, thanks Mary!Canned evaporated milk also makes smooth tasty hot chocolate. Add water or not. A few Tbsp of sugar in a sauce pan, 2 or 3 tsp cocoa, a tiny pinch of salt, a can of evap. and water to taste. Stir and heat. Nice in a pinch. I always keep a few cans on hand, especially when baking strikes my fancy on a snowy day and I'm out of milk.

Many years ago in I had a recipe for something similar but I know it wasn’t as healthy a recipe as this. Also I would add finely ground instant coffee sometimes for cappuccino.

I made this recipe this morning. One thing I like to do is put hot cocoa mix in my coffee when it’s cold outside. I am absolutely in love with McDonalds peppermint mocha but thought if I made this with powdered sugar & drop a peppermint disc in to dissolve, the disc would add the extra sweetness needed. Well, no peppermints in the house that I could find so I added the 1/4 cup mix and a packet of stevia….pure awesomeness!!! I can’t wait to try it with peppermint cause the hot chocolate is divine & not overly sweet! Thank you Mary’s Nest for another home run recipe!!
I made this since I got married at 19 yr old and I just can't buy or drink the package anymore...I am going to try the Sucanat for sure...and everyone loves these as gifts! I only had one daycare child want the package stuff, but my 4 children all love it ☺ So glad u shared this!
I really enjoyed this mix, I made the first batch with a powdered whole milk, Nido by Nestles and dark chocolate powder and I used a sugar substitute so there wouldn’t be any more than what was already in the milk. I made another batch with powdered fat free milk, regular chocolate powder and powdered sugar, I didn’t care for it as much. I used milk in both rather than water.
The Nido was more expensive but well worth the price, I found it during the beginning of Covid and it was the only one left on the shelf luckily I picked it up and saw the English writing, it is mostly in Spanish. Thanks Mrs. Mary!
As a diabetic I use stevia. Other sugars are not recommended for us. Also, I like to add a little Glycerna as a " creamer " for my coffee or to make a hot chocolate with or without coffee. They don't have a powder form yet, I don't think. That would be a good combo as for dry cocoa mix and the Glycerna. Bringing fresh milk isn't always an option. With this, both are shelf friendly to start, putting the once opened Glycerna in the cooler.
Fruit cups filled with the baby marshmallows, turned upside down on a wide mouth canning lid would look nice on a gift jar.
Honestly Mary i'm sure you're in my head. I was thinking about making a box of goodies each for my three daughters for christmas including jars of cookie and hot chocolate mixes. Then you upload videos for exactly that. Thankyou so much. Keep up the good work xxx

I have just made this but in half cup/quarter cup ratio to see what it is like. All blended in a bullet for speed. It took 5 heaped teaspoons to taste great. I also added 1T of powdered coffee mate to the liquid and blended in the bullet. Oh my. Really great and saved me from going out to buy chocolate today! Thanks Mary
I like to make own home made flavorful marshmallows. Rasberry would be awesome with the cocoa. When I cut out shapes, there are always scraps. This is such an excellent use of the scraps. I never thought of dehydrating them!

Oh Mary...I had to comment on this recipe! My youngest daughter and I made this and it tastes EXCELLENT!!! We did make it sugar-free by using the equivalent of Sweetleaf Stevia packets, and the only thing we changed was the arrowroot powder. I saw another recipe online that used chocolate pudding mix as a thickener, so we used the same measurement of that instead of the arrowroot powder. Both my kiddos said this was a winner! 👍🏾👍🏾
WW here! Thanks for the sugar free chocolate pudding mix idea! Swiss Miss reduced calorie cocoa mix is almost $4 a box in my area! I buy Organic Cacao Powder at Walmart and add 1 tablespoon to the Swiss Miss and Trader Joe’s Organic Stevia Extract to the cup and stir. Turns it into 2 cups and the cacao powder has more chocolate flavor!😋 Joe’s Stevia is made of just 🍃 no stems or fillers and it has a tiny little spoon in the bottle to measure a tiny amount. Lasts forever! Thanks Mary for the recipe now I won’t be buying Swiss Miss any more! ❤️ watching you cook and I have learned so much!
I have made hot chocolate mix before. I love the use of the arrowroot idea. I will try it. I like to use the dark chocolate powder. I also add vanilla powder. i want it in my pantry for the coming winter.
best cocoa mix....darkest choc you can find...sugar .pinch of salt.mix in sauce pan with a couple tablespoons water..bring to a boil..add milk and vanilla..warm to liking..add cinnamon and nutmeg... make it fresh and drink it all up!! soooo good for sleighriders!!

Dehydrating those marshmallows are fantastic because they all stay dry and you can mix them in with your hot chocolate mix without it sucking up into the marshmallow due to moisture

@@rhondavanmeter5015 I would start with 1-2 tsp cinnamon and 1/4tsp cayenne. Adjust to your liking. I like strong cinnamon taste.
I add little vanilla and splash of cream. Dry milk is nonfat - blech
When I make hot cocoa, I always add vanilla. In the future, I plan to make some vanilla flavored sugar first to add to this mix. Since this is a dry mix, vanilla sugar would give that added flavor I like.

Oh, Mary! This recipe reminds me of when I went off to college. My Mom thought you had to have this mix along with an immersion heater to heat your water with. Brings back great memories. I've been looking for a recipe like this, thanks. I find with any hot cocoa mix, that if I put 1/4 of the liquid in the cup with the dry ings and then mix that well, then add rest of liquid, it mixes much easier and less possible splashing.
And if you microwave it for about 15-20 seconds, it makes it taste even better!
The problem I have with the homemade Chocolate Mix or the Coffee Creamer is , the instant milk I'm using won't dissolve in hot water. It makes for a nasty cup hot chocolate or coffee. I add a little cold water to the mix in the cup and dissolve the instant milk before adding the hot water. Thank you for this shelf stable recipe, it is a Godsend to me. I'm not a very good cook and I glean your pages for shelf stable recipe ideas and this is my favorite

I love Tom Horton's Holiday Peppermint Hot Chocolate. Its crazy good. They put crushed candy cane in it on top of whipped cream. So pretty. The crushed candy canes could be substituted for the marshmallows in the jars. Yummm

In the 70's, we had a very popular instant hot chocolate mix, made it every winter. Somewhere along the way, I've lost the recipe but it used a can of Nestles chocolate mix for hot or cold drinks,, a container of coffee creamer, sugar and dry milk,,fatless. Cocao itself seems to separate and settle in a cup but the Nestles instant mix didn't do that. I think we used the same amount of mix over cup too, as your instructions. I'm thinking, later on, there was no coffee creamer but didn't miss it at all...maybe used more powdered milk. Didn't use whole dried milk either. Had to be careful too, that our hot water wasn't boiling because it will cook the instant milk.... I was thinking of this mix tonight just for us oldies....and suddenly you appeared on my UA-cam scanning. Thank you.

Used cacoa, sweetener (xylatol) and whole milk as I wanted a "dark" hot chocolate. Works like a dream, just used your proportions. Hot water and a whisk. Very happy diabetic subscriber, thank you

Thank you. I don’t do dairy but they make soy powdered or coconut powdered milk. The expiration date would be sooner. One could do the sugar, arrowroot and cocoa together and add the non dairy milk separately. Dehydrate mini marshmallows are awesome.
Yes, you could definitely use those alternatives! And you could also leave out the milk powder and then use the mix mixed with your choice of hot liquid and prepare it on the stove. Love, Mary

Thanks for the tutorial. I noticed that you have 'under cabinet lighting'. That is an excellent idea for light where you need it for making coffee and the microwave.
You can also use dehydrated strawberries or freeze dried strawberries ground up into a powder. You can also buy powdered strawberries those are a little expensive. I usually do the swap 1 for 1 sometimes you can cut it down depending on the recipe. Just about any chocolate recipe it’s easy to disguise the strawberries used as sugar instead of sugar. I am diabetic and it runs in the family so I do it with a lot of desserts little ones don’t even know.

My sister in law is allergic to soy. There is soy lectin in most chocolate you buy in the stores. Thanks to your recipe, I can send her some hot chocolate for Christmas.
Love the idea on the marshmallows! My grandkids always want hot chocolate with marshmallows. But I always end up having to throw out the left overs cause they only visit every few months. I started finally freezing them but I never thought about dehydrating them , yea I can have my freezer space back . Thanks

@@MarysNest sorry to bug - one quick question.... I have both organic raw cocoa and organic baking cocoa in my cupboard... which one should I use?... thinking maybe the baking since it will be "cooked" but was wondering which you would choose? we never got a peek at your cocoa package :)
