- Lamingtons are little pillows of sunshine. Moist sponge cake, velvety whipped cream, sharp acidic jam and crunchy coconut...all covered with a luscious coating of raspberry or chocolate.
There's been a long standing rivalry between New Zealand and Australia claiming the lamington's state of origin. Whatever its birthplace, we can both agree that it’s a cake well worth fighting for!

Recipe: Chocolate & Raspberry Lamingtons - Chef Mark Simmons
Yellow Sponge Cake Ingredients:
cooking spray or butter (for greasing cake pan)
4 eggs (room temperature)
1 cup powdered sugar
1/4 teaspoon vanilla extract
1 cup all purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 tablespoons melted butter
Raspberry Jam Ingredients:
2 pints fresh raspberries
1 cup sugar
1/8 teaspoon allspice
1/8 teaspoon cinnamon
1/4 cup water
1/8 teaspoon salt
Whipped Cream Ingredients:
4 cups heavy cream
1 tablespoon powdered sugar
1/8 teaspoon vanilla extract
Raspberry Jello Ingredients:
1 package of raspberry jello
1 cup hot water
1 cup cold water
Chocolate Ganache Ingredients:
1 cup bittersweet chocolate chips
1 cup whole milk
8 oz package of unsweetened shredded coconut
optional: fresh raspberries (cut in half) and mint leaves for garnishing
Yellow Sponge Cake:
1. Preheat oven to 350F
2. Grease surface of an 8x8 inch square cake pan. Line with parchment paper then grease surface again.
3. Whisk eggs until frothy then gradually add powdered sugar.
4. Add vanilla and continue whisking.
5. Continue to whisk until the ribbons of the batter falling off the whisk remain on the surface for a few seconds.
6. Sift flour, salt and baking powder and then delicately fold together with wet ingredients.
7. Fold in melted butter.
8. Carefully pour batter into cake pan.
9. Bake for 30 minutes until the top is golden brown and a toothpick inserted comes out dry.
10. Cool cake on a wire rack for 10 minutes before removing from cake pan and then let cool to room temperature. Place in refrigerator uncovered for 30 minutes (this will help to achieve cleaner cuts).
11. Remove all outer crust from sponge cake and cut into 2 inch cubes. Refrigerate for 30 minutes (this will help dry the sponge cake out, allowing it to absorb the chocolate and raspberry coating more effectively).
Raspberry Jam:
1. Combine raspberries, sugar, allspice, cinnamon, water and salt into a heavy bottomed pot and simmer on low heat for approximately 30 minutes until thick and shiny.
2. Place a spoonful of jam on a chilled plate and run your finger through it. If a clean path remains, the jam is the correct consistency.
Whipped cream:
1. Combine heavy cream, powdered sugar and vanilla into a pre chilled mixing bowl and whisk until you achieve stiff peaks.
2. Fill a piping bag with the whipped cream then refrigerate.
Raspberry Jello:
1. Whisk together raspberry jello powder and hot water without causing aeration.
2. Add cold water and whisk until thoroughly combined (when dipping your sponge cake, jello should be just above body temperature).
Chocolate Ganache:
1. Place a heat proof bowl over a pot of simmering water to create a bain marie.
2. Combine bittersweet chocolate and milk in bowl.
3. Cover bowl with plastic wrap to help chocolate cook more efficiently. After a few minutes stir together until emulsified.
Assembly:
1. Setup 3 bowls for: raspberry jello, chocolate ganache and unsweetened shredded coconut.
2. Dip each side of the sponge cake (about 1/2 centimeter deep) into raspberry jello or chocolate ganache until well coated.
3. Sprinkle each side with unsweetened shredded coconut.
4. Place cubes on a wire rack and refrigerate for 30 minutes so the coating can firm up.
5. Starting at the top edge of the sponge cake, slice halfway down at a diagonal to create an opening for the filling.
6. Smear the inside of the opening with a 1/2 teaspoon of raspberry jam.
7. Pipe in whipped cream.
8. Place a halved raspberry and sprig of mint on the whipped cream for garnish.
Plate and enjoy.

I use the Edmonds’s Three minute sponge recipe and cook it in 12 muffin pans because I found the cut edge put crumbs in the icing. At least round ones give out the message they aren’t store bought! But I can never stop my hands getting covered in icing and I’m too impatient to stand for ages watching icing drip from a piece of cake so I get far too much on each cake. I fill with unsweetened whipped cream (why spoil such a tasty product with sugar and flavouring?) and home made jam, not necessarily raspberry. If I must use a jam from the supermarket I use Anathoth.

My kiwi grandmother was making these over 80 years ago ... 2 batches a week , one strawberry and 1 chocolate ... and yes, i remember her using Greggs Strawberry Jelly packets for the strawberry ones. Confess i was not a huge fan but as kids we got to lick the bowls after she had finished so win win

He's right raspberry is not the best it's the token variety of Lamington you make when you've ran out of chocolate ingredients.
When I lived in Australia, I never ever saw a raspberry or pink lamington, This is a very Kiwi thing, it seems. I don't know why Jeremy is being so fussy, but the pink variety is more popular.
