Top tip! If you wanna make these extra special, half the batch and put it in two separate trays, then you put jam (usually raspberry jam but you can use strawberry or another kind of berry jam), between the two halves before covering them in icing and coconut. This is how my family does it (yes I am Aussie) and I think it just adds that extra something :)

I saw these made when I was little and for years I have struggled finding the recipe. When I did find it, I have started making them every Christmas. The only difference is I coat them in crushed walnuts and I add either rhum or orange liqueur in the chocolate icing. Great minicakes indeed
I LOVE lamingtons! My Pa used to call them dandruff cakes 😂 He and my Nan would have a little production line when they made them. And they always made them “plain”, like these. An easy level up for a dessert or special occasion is to fill them with jam and cream 😊

We make Lamingtons in South Africa too. When I was a child, we always memorised the birthday of the kids whose mums made Lamingtons for the obligatory school birthday treats at my school.

These are my favourite! In South Africa we call them Ystervarkies, which literally translates to "little porcupines".

Yum, I love a lamington, especially the jam-filled version! I like to use a couple of baking dishes for dunking, because you can just pop them in, flip once to cover in chocolate, then repeat in the coconut!
That's the secret , don't use a bowl use a baking pan to ice them
We have similar cake recipe here in Finland, but the cake batter has also choco powder on it and icing has tiny bit of dark coffee. The icing is then poured on top of the cake and cut to pieces after it has cooled down. Coconut and coffee flavor go so well together. Love it!

You need to make these when the shop opens again! When I visited, along with my amazing cupcakes, I got a coffee and I almost cried because after weeks of crap coffee while touring around the UK and Europe, your coffee tasted exactly like what we get in Australia. I reckon if you had a lammo to go with it there would have been tears!

Australian treat
Strawberry lamingtons are my favourite, and are really delicious as well. You use a not quite set jelly instead of the chocolate sauce, you can make lime, pineapple, whatever jelly you have on hand, and you fill them with whipped cream to eat.
I mean English jelly right? Like crystals not American jelly (jam) because I’m getting confused 😭
@@humi191 Jam is basically just jelly but with pieces of fruit. If you only have jam, you can heat it until it's liquid and strain it, to turn it into jelly.

Second time baking, the Butter is the star of the recipe. It is worth paying a bit for a good quality butter such as Lurpak. When the cake bakes, the entire room smells like that lovely butter. What a joy. This time I made it into a layer cake sandwich with strawberry jam and top with chocolate drizzle and a few strawberries. Love it. ♥️🍓

These are called "chupavci" in Serbia, and they've been around here as one of the classic Sunday family lunch treats, since 70s. Today I learned their Australian name and origin thanks to your video, and you reminded me I should make them this weekend! :) 💕

As an Australian and ex baker you have done a pretty good job. Top tip cut them in half (like cake) and add Jam (strawberry or raspberry)

Tried the recipe, definitely delicious :) Though I cut down the icing sugar of around 30g for the chocolate glaze, I still find it a little too sweet. Would advise you guys to cut a little too. Great recipe, will be making them for Christmas

Here's a written step-by-step version.
Chocolate Lamingtons
(makes around 12)
Vanilla Sponge Cake
Ingredients:
200g caster sugar 200g flour
4 eggs 1 tsp baking powder
1 tsp vanilla essence 100g butter, melted
Chocolate Icing
50g butter, melted 290g icing sugar
160ml milk Pinch of salt (optional)
45g cocoa powder 250g desiccated coconut
Method:
Preheat the oven to 170ºC. Lightly grease a 20cm square cake tin and line the base and two sides with baking paper, or lightly grease and dust with flour.
In a large bowl, add the caster sugar, eggs, and vanilla essence. Using an electric beater, beat until the batter is light and fluffy.
Sieve in half the flour and carefully fold using a wooden spoon. Once the flour is combined, sieve in the baking powder and remaining flour, folding again until fully incorporated.
Add the melted butter into the sponge mixture and fold until combined.
Pour the batter into the prepared tin and bake for 25 minutes or until an inserted toothpick comes out clean.
Once the vanilla sponge cake has baked, remove from the oven and leave it to cool down overnight or place the sponge in the fridge for around three hours.
Trim the edges off the sponge to ensure the sides are flat and square, then cut into twelve even squares.
For the icing, in a medium bowl, pour butter and milk inside and whisk until combined. Next, sieve in the cocoa powder and whisk once more.
Next, sift in the icing sugar and salt (optional) until the icing is thick and chocolatey, ensuring no dry ingredients remain on the sides of the bowl.
Shake the desiccated coconut into a medium bowl, and transfer some of it into a smaller bowl so the whole mixture doesn’t become a chocolate mess
Prepare a large drying rack with a paper towel or sheet of baking paper underneath as you will be placing the lamingtons on top once they are coated in chocolate icing and rolled in coconut.
Drop the vanilla sponge squares into the chocolate icing one at a time and, using two forks, move the sponge around until coated in icing. Allow some of the icing to drip off placing it in the coconut.
Using your hands or a spoon, flick coconut onto the sides before using your hands or a spoon to roll the rest of the lamington in the desiccated coconut. Once covered, place on the drying rack while you make the remaining lamingtons.
Leave in the fridge for 5 to 10 minutes before eating (or don't, if you're like me :D).

The traditional way to serve them is sliced across the middle, spread some raspberry jam on the bottom and pipe in some whipped (chantilly) cream!

I used to eat these in Poland when I was a kid, my friend's mum used to make these and she would also add some booze (maybe in chocolate?) and she called them "Krystynki". Never knew these originate from Australia :D
I tried these lamingtons about 5-6 times and every time I made them they were perfect
Here’s a conversion chart for those of us in the U.S.
- Melted Butter: 3.5 Tbsp
- Whole Milk: 5.41 oz
- Cocoa Powder: 6 Tbsp
- Granulated sugar: 1.5 cups

You can make a pink version too, using raspberry jelly

Lovely to see this. Used to make Lamingtons while working in an Irish-owned pie shop here in Canada. The ones we made had icing made of Hot water , cocoa and sugar. Still, they were yummy.

Turned out he was allergic to flour and then studied to be a TV Technician.

Just made these and couldn't wait to eat them so I put the sponge in the fridge for three hours as suggested. I can honestly say these are the best chocolate lamingtons I have ever eaten. I have tried so many recipes and bought so many from the supermarket. The best part about these lamingtons is that they are homemade so I can eat them whenever I want. I'm going to use the social distancing rule as a reason for why I didn't share these with anyone else and instead ate them for myself :D

@@anniechuie8364 Not at all. It just chills the sponge, making it easier to handle when icing. Otherwise, the sponge remains nice and fluffy for a few days in the fridge.

Spit the side 3/4 way in ,spread Raspberry or Strawberry jam & "PIPE IN FRESH WHIPPED CREAM. Ha ! Your Welcome
Best I've had was a vanilla cup cake (using custard powder in the cake mix) version. When cooled take off the patty pan coat in choc then coconut pop in fridge to set .. Cut the top off the cupcake add jam & cream like a scone, then put the top back on. The custard powder used makes it tastes & looks beautiful. Freeze cupcakes to have on hand, all to do is ice Cheers

If you whisk egg white and sugar to make a white creamy structure and fold all other ingredients later, it becomes super spongy and fluffy. I have tried that method and everyone wants me to bake again and again for them with same recipe.
