Southland Cheese Roll | Kiwiana
Mark takes you on a tour of his hometown Invercargill, birthplace of the famous cheese roll. It's New Zealand's answer to the grilled cheese...buttery and golden on the outside, warm cheesy goodness on the inside.

Recipe: Southland Cheese Roll
Ingredients:
- 1 can evaporated milk
- 1 packet onion soup mix (like Lipton)
- 2 slices of ham diced
- 1 tablespoon dijon mustard
- 1/3 cup cheddar
- 1/3 cup pecorino romano
- 1/3 cup smoked gouda
- 2 tablespoons finely sliced scallions
- 1 loaf unsliced white bread
- softened butter
Method:
1. To make the cheese sauce add evaporated milk and onion soup mix into a pot and whisk over medium heat until combined.
2. Add diced ham, dijon mustard, cheddar, pecorino romano and gouda. Mix until nice and creamy.
3. Lastly, add scallions and stir briefly to combine.
4. Slice loaf of bread lenghtwise into 8mm thick slices. Then remove crust.
5. Place a slice of bread on a sheet of plastic wrap that is about 3 times larger in size than the slice of bread.
6. Spread a generous amount of cheese sauce onto the bread, making sure to leave a 1cm lip at the top.
7. Using the plastic wrap, lift the bread up and over forming a roll, like you are making a jelly roll. Continue rolling, wrapping the plastic around the bread to form it into a nice tight cylindrical shape. Pinch the two free ends of the plastic wrap and roll the tube of bread away from you allowing the plastic to cinch down and compress the cheese roll. Tie off the two loose ends of plastic into a knot.
8. Place cheese rolls in the freezer for 30 minutes to help them solidify that nice shape.
9. Remove the cheese roll from the plastic and generously spread softened butter all over the surface of the bread.
10. Place cheese rolls on a greased baking tray and broil in the oven for approximately 20 minutes until nice and golden brown. Rotate your baking tray to achieve a nice even color (the heat of each broiler varies so adjust broiler to low if cheese roll is toasting too quickly).
11. Remove from oven and allow to cool for 5 minutes.
12. Slice each cheese roll into quarters.
Eat. Enjoy. Serve with Central Otago Chardonnay for spring afternoon tea.
Alternative Plating for Passed Hors d'oeuvres:
Ingredients:
- 1 onion fine dice
- 6 cloves garlic minced
- 2 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 tablespoon brown sugar
- 1 can crushed tomatoes
- fresh basil
Method:
1. Caramelize onions and garlic in olive oil.
2. Add cumin, brown sugar, and crushed tomatoes.
3. Simmer for 30 minutes.
4. Slice cheese roll into 1 inch rounds.
5. Garnish the top of each round with a pea sized dollop of tomato compote and a sprig of basil.

I was missing these so much. I followed your recipe and made them yesterday and these tasted even better than the store bought ones. My cravings were satisfied and everyone was so impressed. Such a cute and delicious treat. The Raspberry one was my favourite. Thank you so much for the recipe!
I use the Edmonds’s Three minute sponge recipe and cook it in 12 muffin pans because I found the cut edge put crumbs in the icing. At least round ones give out the message they aren’t store bought! But I can never stop my hands getting covered in icing and I’m too impatient to stand for ages watching icing drip from a piece of cake so I get far too much on each cake. I fill with unsweetened whipped cream (why spoil such a tasty product with sugar and flavouring?) and home made jam, not necessarily raspberry. If I must use a jam from the supermarket I use Anathoth.

He's right raspberry is not the best it's the token variety of Lamington you make when you've ran out of chocolate ingredients.
When I lived in Australia, I never ever saw a raspberry or pink lamington, This is a very Kiwi thing, it seems. I don't know why Jeremy is being so fussy, but the pink variety is more popular.

My kiwi grandmother was making these over 80 years ago ... 2 batches a week , one strawberry and 1 chocolate ... and yes, i remember her using Greggs Strawberry Jelly packets for the strawberry ones. Confess i was not a huge fan but as kids we got to lick the bowls after she had finished so win win
