Matcha Neapolitan Cookies recipe - a medley of flavors in one cookie

I make a cookie box to give out to friends and family every Christmas and every year, I always find myself making this one! I usually make it classically with the chocolate flavor but this time, I replaced it with some delicious matcha to make one of my favorite combinations: strawberry matcha! I love this cookie. :)

I like to make larger batches of cookies so I doubled the recipe making around 40 cookies.
Ingredients:
728 grams (5 cups + 2 tablespoons) all-purpose flour
1.5 teaspoons baking soda
1.5 teaspoons salt
16 grams (1 cup) freeze-dried strawberries
4 sticks (2 cups/454 grams) unsalted butter, room temperature
700 grams (3.5 cups) sugar
2 large eggs and 2 large yolks
4 teaspoons vanilla extract
4 tablespoons matcha powder

It’s easier to just layer the 3 dough colours, roll them, and cut slices. And looks spectacular.

Yeah! I love having varied flavors with each bite. And I was so confused when spell check kept marking my spelling of neopolitan. Then I went… oh. Hahaha.
Currently baking my first two trays, and damn, you weren't kidding about the difference between the matcha dough and the vanilla. Side note, its 11:30 pm and I'm so tired
Dang late night baking!!! Haha. Hope they turned out delicious! And yeah. I was a bit concerned about the vast difference in dough textures hahaha
@@joshuacooksthendraws They came out wonderfully! Only had a couple left after Christmas Eve and Day, which is always a good sign. Especially since they were competing with a lot of desserts from a really good Italian bakery.

Its pretty sweet for my tatses. I think it could do with less sugar but I dont know how it would affect the texture of the cookie.
Looks great! I saw another UA-cam video on Neapolitan cookies where she put the layers in a rectangle tray like ice cream and scooped them with an ice cream scoop. Yeah. Im always surprised how much sugar is in certain baked goods when I make them haha. Ill try looking into more diabetic friendly desserts!
