  • My Favourite Butter Cookies - Happy New Year to all my dear Subscribers and Friends! I hope to bring you more wonderful treats recipes. I do understand cookie recipes are very easy with simple few ingredients. However, the precision of ingredients and method used will result in the outcome you desire. So here is my favourite version of butter cookie recipe. Enjoy!

    FAQ: Why my cookies flattened while baking in the oven?
    It might be due to the butter's condition. The consistency is very important if you're piping these cookies. Solution: You can fold in 1 or 2 tbsp of flour, then check if the consistency is slightly thickened. Do not over add the flour. Another way is after piping, you can pop them into the fridge for about 30min, just to hardened it a little, then bake it. If you find after adding 1 or 2 tbsp of flour is comfortable you can bake it straight away.
    Ingredients:
    this recipe yields about 20-22 cookies
    113g (1/2 cup) unsalted butter, softened
    60g (1/4 cup+1 tbsp) fine sugar
    ¼ tsp salt
    1 egg yolk
    1 tbsp heavy cream
    1 tsp vanilla extract
    125g (1 cup) cake flour
    16g (2 tbsp) cornstarch
    Piping tip: 1M
    Instructions:
    1. Preheat oven at 170°C/340°F.
    2. In a large bowl, add the room temp (or softened) butter. Add sugar and salt. Mix them using a spatula so that the sugar the fly out. Then switch to an electric mixer. Mix until creamy, pale and fluffy.
    3. Add the yolk, cream and vanilla extract. Mix till combined.
    4. Sift the cake flour and cornstarch in 2 batches. Fold in using a spatula. Sift the remaining dry ingredients until the flour disappear.
    5. Transfer the dough into a piping bag. I am using 1M tip. Double up the piping bag if yours is thin like mine. A thin piping bag will cause breaking of the bag. Also it will ease your piping.
    6. Bake in preheated oven at 170°C/340°F for about 15-18 min. For 15min, the cookies might be softer than 18min bake, so it really depending on how crispy you desire your cookies to be.
    7. Let it cool completely.
    8. Cookies are ready to serve.

    We love these cookies! We didn't have cake flour, so I took one tablespoon out of the cup of all-purpose flour I had, and added in one extra tablespoon of cornstarch. We also added a small dollop (1/4 tsp) of raspberry jam to the center of each cookie before baking, for a touch of extra color and sweetness. It really took it over the top!

      To make a cup of cake flour, remove 2 tablespoons of flour from a cup of all-purpose flour and add 2 tablespoons of cornstarch to it, and there you have it...your cup of cake flour!

      @@keithross2624 I guess you could do two tablespoons if you want. But I did one tablespoon, and it worked fine. Really delicate and delicious cookies!

    Those were always my favorite. When I was a kid- I used to stop by the town bakery every day on my way home from school and get 1 of those cookies. They were soooo soft they melted in your mouth. Takes me back to my youth 50 yrs ago!!!!!

    this is literally the best recipe video ive ever seen, so neatly executed, no unnecessary chatter, just the strangely soothing sounds of ingredients being blended, added or the simple sounds of the vessels being used it was totally informative but strangely calming to watch i wish wed get to see more such beautifully, tidily executed cooking related videos im very very impressed

    You really can't go wrong with this receipe. I had light cream and not heavy cream in my fridge. I had salted butter and not unsalted ones. The cookies still turned out to taste really good.

    It’s so nice to see demonstrations of cookie making without all those bulky equipments / machines. Sometimes we focus so much on the tools that we forget to rely on our own skills, this recipe is simple enough that if you make it in the summer months, you could actually do it all by hand and still get great results.

    I made it, but since i have celiac, i changed the recipe and used gluten free flour instead of regular flour, and it turned out perfect. Usually it doesn't work when you use regular recipes, and then switch the flour, but it worked! And i love how straight to the point the video is, no talking, just going straight to the recipe. Thanks for this amazing video! Loved the cookies sooo much!!!🩷

    I made this and this recipe is just perfect, not gonna try any other butter cookie recipes. It tastes just like the Kjeldsens Danish Butter Cookies. Love it!

    I've always wanted to try making these but thought they would be difficult...guess I was wrong. The cookies came out perfectly on the first try, using this recipe. They flattened a tiny bit but the taste was AMAZING!!! Thanks so much for sharing this recipe ❤️

    Watching you bake these cookies was an enjoyable experience. The pleasant music and having no dialogue was calming. The silencing the music when you broke the cookie in two to make us hear the crisp sound was a nice touch, very professional!Thank you.       CORRECTION!:
      Thanks for writing down the recipe ingredients amounts! But the video actually lists 1 TABLESPOON (Tbsp) heavy cream, not 1 teaspoon (tsp). (She lost me re flour amount - finally found that on RIGHT side of screen after watching many times & all previous ingredients on left side, lol!)

    I tried this recipe with all purpose flour and used water instead of cream. The batter turns out to be A LOT thicker and it’s hard to squeeze out so I added about 3-4 table spoons of water in place of cream in total. I also added additional 10 grams of sugar because I thought the recipe needs more sweetness. This recipe makes about 30 cookies. The cookies turned out amazing so you don’t NEED cake flour or cream to make this.

    I didn't have heavy cream at home so I used just milk with a little bit of butter(more butter can't hurt in this recipe), that was probably reason that the cookies didn't rise as much as in the video bit they were DELICIOUS. Thank you for the recipe.

    Wow! This is the first silent cooking video I've ever seen and I absolutely loved it - while I found several sounds annoying, it was very relaxing to watch the video in silence. It gave me such an impression as if it was me baking the cookies. A perfect tutorial for all the introvert cooks. 😃👏🏻👍🏻
