Recipe for my "Orange" Sour Cream Chicken Pasta
Ingredients
1 Lbs Chicken
skin on thighs preferred, (skinless thighs or breasts worked too)
2 Medium Sized Onions- sliced into strips
1 Cup of Mushrooms (optinoal)
1 & ½ Cups of Orange Juice
1 Cup of Chicken Stock
⅔ Cup of Sour Cream
2 Tbl Sp Butter
3 Cloves of Garlic
Taragon
Salt and Pepper
First you will put the chicken and orange juice into a container to marinate for 1-2 hours
After Marinating, you will drain off the chicken, place into a pan, and salt and Pepper them generously.
Both Sides
Make sure you keep the orange juice you used for marinating.
Now to Start Cooking!
Get your heat to Medium High and let your pan get nice and warm.
Place your butter and olive oil if you have in the pan.
Mix around and let that get warm.
Once thats nice and hot, place your chicken into the pan and sear. Cover.
After 2-3 minutes (or chicken is nice and golden) flip over and sear the other side. Cover
After 2-3 minutes, remove cover, and deglaze the pan with white wine if you want, but a little chicken stock will work fine.
At this point you will start cooking your onions.
Place the onions to the side of the chicken.
Add garlic at this time as well.
Stir Gently, make sure the chicken isn't sticking and cover for another 2-4 minutes.
Once the onions are starting to sweat you can add your mushrooms if you are using them.
Cover and cook for another 2 minutes.
Make sure you are starting to boil your pasta water.
Once your Mushrooms and Onions are soft you can start to add your liquids.
Add both the Orange Juice and the Chicken Stock.
Add enough to just barely cover your chicken and vegetables.
Salt and Pepper Yo!
Turn down the heat to medium, leave uncovered and let it sit simmering for 20-30 minutes.
Stir Occasionally
After 20-30 minutes, your sauce should have reduced by almost half.
You have the right consistency when the sauce dribbles off your spoon.
Next you add your Sour Cream.... oooh you know you want it.
Just mix around, cover, and let this cook for another 5-10 minutes.
Your almost done...
Make sure the Sour Cream is dissolved into the sauce.
Add the "Tarragon" into the sauce and mix just before serving!
Wha La!
Make sure you have your pasta ready by this time.
You can serve this on rice too..... its goooood!
You can keep this on low heat until you are ready to serve or your pasta is done. - Навчання та стиль
