Hot chocolate and olive oil cake

  • This yummy cake is very easy to make. Great for all occasions.
    Ingredients:
    1. 7 eggs separated
    2. 1 cup castor sugar
    3. 100 ml extra virgin olive oil
    4. 1 cup self-raising flour
    5. 1 3/4 cups drinking chocolate (not cocoa)
    6. 125 ml warm water
    7. 1/4 cup sugar when beating egg white
    Method:
    1. Preheat the oven to 350F (180C). Grease and line with non-stick baking paper 23 cm (9 inch) cake tin.
    2. Beat the egg yolks with castor sugar until fluffy. If the mixture tends to be thick, add 1 tablespoon of warm water. This will help the mixture turn fluffy again.
    3. With the beater on medium speed add olive oil, bit by bit, like making mayonnaise. Add dry ingredients to the mixture on low speed and beat until all combined. Add the water.
    4. Whip the egg whites until thick, add the remaining 1/4 cup sugar and beat until it dissolves.
    5. Gently but swiftly fold in the egg whites. When well combined pour into a prepared cake tin and bake for one hour or until skewer inserted in to center of the cake comes out clean. Once baked let cool for 15 minutes in the cake tin then invert onto ware rack to cool completely down.
