  • This healthy banana bread is very easy to make.
    Ingredients:
    1. 2 cups plain flour
    2. 3/4 teaspoon baking soda (or bicarbonate of soda)
    3. 1/2 teaspoon salt
    4. 1 cup honey (or use maple syrup, golden syrup, rice syrup)
    5. 1/4 cup butter, softened
    6. 2 large eggs
    7. 1 1/2 cups mashed ripe banana
    8. 1/3 cup plain yoghurt
    9. 1 teaspoon vanilla extract
    Method:
    1. Preheat oven to 175 C (350 F). Grease and line with non-stick baking paper loaf pan measured 9 x 19 cm.
    2. Combine flour, baking soda and salt in a bowl, stirring with whisk. Place honey and butter in a large bowl and beat with electric mixer at medium speed until well blended (about 1 minute). Add eggs, one at a time, beating well after each addition. Add banana, yoghurt and vanilla; beat until blended.
    Add flour mixture; beat at low speed until just moist. Spoon batter into prepared loaf pan. Bake for 1 hour or until skewer inserted into centre comes out clean.
