Express Sweet & Sour Chicken
I've made a more complex version of this dish, however this time I wanted to do something to make use of some leftover pineapple juice, tomatoes and a single chicken breast. You can make this work with what you have - the key is something sweet and something sour. The rough measurements for this recipe are below:
For the chicken:
1 chicken breast
1/4 tsp salt
1/4 tsp cornstarch
1 tbsp shaoshing wine
1 tbsp light soy sauce
For the stir fry
1 each red and yellow bell pepper
1 sweet onion
1 garlic clove
1/3 cup cashews or peanuts
1/4 cup diced pineapple (canned)
2 tbsp vegetable oil
For the sauce
Juice from one can of diced pineapple (approx 1 cup)
1 tbsp apple cider vinegar
1 tbsp sugar
3 tbsp tomato sauce (from canned tomatoes) (can sub ketchup)
2 tbsp cornstarch in 2 tbsp water
Slice the chicken and marinade in the salt, cornstarch, wine and soy while preparing the vegetables. Chop the vegetables in a large dice, and mince the garlic. Mix the sauce ingredients except for the cornstarch - adjust seasoning and sugar to taste.
Stirfry the chicken until not quite cooked through in a hot wok with the oil. Add the vegetables and stir fry for about 4 minutes, until they start to char but are still crisp. Add any leftover pineapple you have from the canned pineapple, if available, as well as cashews. Stirfry for about 30 seconds then add the sauce, mix, and then add the cornstarch slurry and mix and let come to a boil. Once the sauce is thickened (about 2 minutes) it is ready to serve. Enjoy with white rice.

These waffles are a great way to use up leftover egg whites which you may have from making pasta or another egg yolk intensive recipe! Just because you have a small grill doesn't mean you can't have great pizza. Pizza on the grill is great in summer as it can be done while socializing, and doesn't heat up the kitchen. Here I am using pre-made dough from whole foods, so it is super easy. As far as recipes go it doesn't get much simpler than this. There are debates on whether Alfredo sauce should contain cream - this version doesn't but there are those that do. So many people can't cook a good egg
I used a well seasoned carbon steel pan for this one, which makes a nice crispy egg. I prefer over medium, so flipped it - but it would have been a great sunny side up.

If I want 1 hour pizza, I buy pizza dough from Trader Joe's. The effort to make pizza dough from scratch in 1 hour isn't worth the effort and doesn't taste any better than TJ's dough. If I make dough, it takes a day of resting and I make enough of it so I can make and freeze 10-12 balls of pizza dough for further use. Spend more time and do it right or skip the dough prep altogether and get TJ's is my opinion :)
I would do that too - however we don’t have Trader Joe’s up here in Canada! Best option is Whole Foods dough, which is OK. I will also freeze dough when I make extra but have limited freezer space living in a condo. I’m working my way through these 1 hour dough recipes as an experiment in the hope I find one that is great - I’m still looking!

Could be - I’ve always found the definitions unclear. Since these noodles weren’t fresh, and were stir fried with the fillings I considered them chow mein. I’d consider fresh noodles cooked separately and then topped with the stir fry lo mein. But I’m no expert on this!
@@billcooks around me chowmein is like groung meat and cabbage with crunchy noodels on top, i did just watch another vid where they called a dish like this chow mein so maybe its regional...
@@billcooks From my home country, we call this chao mian (chow mein in your language). Lao mian is the one you cook in boiling water.

i got an idea for you (not sure if itll work since i havent tried it) Make your scallion pancake a bit thinner. Stack chicken onto it. Fold in into a form resembling an empanada/calzone. Either pan fry it or air-fry (after liberally brushing it with oil) it.
