ok i'm mexican, and normally when i see "mexican" recipes they disappoint me, but this one looks REALLY GOOD! and the those "taquitos" are called Flautas :)

You're SUCH a natural in the kitchen! I want to suggest an alternative for the fried taquitos for you/anyone who's interested. You can put them in a 400º F oven for 14-16 minutes until golden brown. That's how I make mine and my sensitive tummy approves ;) I wish I could eat fried food because it's soooo good. But alas, acid reflux says no.
Do you oil the tortilla or just heat it up first then roll it then bake it?! Also does the cheese ooze out? Im so excited about this comment and my serious case of GERD
The oil is not the cause of your reflux. The flora in your stomach is out of balance. You need more acid to digest your food properly. You need more bile production. You need to focus on restoring you the environment in your gut. Start with good bacteria and work from there. Dr. Berg is a good reference. But your could just do a cold search.
I'm a trained culinarian[chef is a bit poncy a title for me] and all I can say is that I am very impressed with your gut instincts in the kitchen; you can't train that into a person. Well done! Thanks for posting : )

Every time I make pasta I struggle with what to do with the leftover sauce... makes a great base for tortilla soup, would have never thought beyond the label!

I made this last week and it was so yummy! I have a quick tip for the cheesy taquitos. As I was making them, the tortillas kept breaking when I rolled them. To fix this, I heated the tortillas a bit over the stove and that made then much more pliable and easy to roll without breaking!
I think I did really well at creating my own Recipe?! for those tacitos I just needed to use more oil for the crispy bits..... I can't begin to tell you how much confidence you have given me to experiment in my newish vegan kitchen. xxx
