Out of all of the cooking channels that I watch on UA-cam, Lauren has to be the most sincere during the final tasting. I don't really believe other UA-camrs when they tell me how good the food tastes, but I always believe Lauren! She gets so excited and her eyes light up!!! Makes me hungry! :)

When she said her first ingredient was going to be chips my first thought was "what?!". .. When she first pulled out the chips the first thing I thought of was an episode of chopped. that TV show where they used to give the chefs really bizarre ingredient that they had to incorporate in whatever they were making and whoever's was more creative and tasted better won

I always get the tofu that is vacum sealed and has absolutely no water or sponginess to it. I have never had success with other kinds of tofu, i can never seem to get enough of the water out.
I always dry mine like half an hour before cooking. I sandwich it between two paper towels and put a heavy plate on it. Make sure you cut the tofu block in half. More surface area = more draining
At this point ive given up, the other tofu is really firm and easier to work with - no draining. Everytime I've tried to drain water from tofu it ends up a crumbly mess, and i aint got time fo that when im hungry!
I buy the same stuff and throw it in the freezer and put it on my stove to defrost really fast or just throw it on my steamer basket in my rice cooker.

I am not even vegan - Paleo actually - but I use a lot of vegan recipes because they got me through rough recipe times after I discovered my dairy allergy, long before I went Paleo, and I love the added healthy variety.
