Someone I know through instagram recently went vegan after seeing your videos and Lauren's more personal channel because she said you felt so real and genuine and it made it easier to connect with you and see why veganism is a great thing.
I always get the tofu that is vacum sealed and has absolutely no water or sponginess to it. I have never had success with other kinds of tofu, i can never seem to get enough of the water out.
I always dry mine like half an hour before cooking. I sandwich it between two paper towels and put a heavy plate on it. Make sure you cut the tofu block in half. More surface area = more draining
At this point ive given up, the other tofu is really firm and easier to work with - no draining. Everytime I've tried to drain water from tofu it ends up a crumbly mess, and i aint got time fo that when im hungry!
I buy the same stuff and throw it in the freezer and put it on my stove to defrost really fast or just throw it on my steamer basket in my rice cooker.

BUT i made them recently and I also coated them in panko, like you said to do when you were in LA, and I upped my oven tempeture, as well as making my own BBQ sauce!
