    Kodiak muffins: makes 12 (1 point each)
    1 1/2 c kodiak pancake and waffle mix
    1 tsp baking powder
    1/2 c unsweetened applesauce
    1/2 c water
    1/4 c monk fruit sweetener
    1/2 tsp cinnamon* optional
    1/2 tsp vanilla
    Pinch of salt
    1 egg
    1 c blueberries
    Optional* pumpkin seeds, butter or I can’t believe it’s not butter light,sugar free maple syrup
    Preheat oven to 350. Mix together all ingredients except blueberries. Once there are no clumps, fold in blueberries. Spray a muffin tin or use liners. Fill, top with pumpkin seeds and press in and bake for 15-18 minutes. Optional* Serve each muffin with 1/2 tsp I can’t believe it’s not butter light and 1 tbsp sugar free maple syrup

    Lunch- Italian wrap:
    1 extreme wellness wrap
    1 light laughing cow wedge
    1/4 tsp Italian dressing mix
    Turkey deli meat
    12 Turkey pepperonis
    You favorite veggies (I used spinach, red onion and peperoncini)
    Ate with air fried carrot sticks. Seasoned with salt, pepper, garlic powder, onion powder and smoked paprika. Cooked on 380 for 15 minutes, stirring once during cooking.

    1/2 c light OJ
    1/2 c unsweetened almond milk or cashew milk
    1 scoop vanilla protein powder (I use garden of life raw organic plant based protein)
    1/2 frozen banana
    1/3 c frozen blueberries
    1/3 c frozen cherries
    1 c spinach
    Dinner: Smothered Chicken with mashed potatoes and carrots

    2 servings:
    10oz chicken cutlets
    2 cups carrots
    4oz mushrooms
    2 green onions
    12oz Yukon gold potatoes
    4 tbsp light sour cream
    1/2 tsp better than bouillon chicken base
    1/4 c reduced fat Monterey Jack cheese
    2 tbsp butter
    Preheat oven to 425 and adjust rack to talk position. Wash and dry produce. Peel and cut carrots into 1 inch pieces. Slice mushrooms, Finley sliced scallions, separating whites from greens
    Toss carrots on baking sheet with a drizzle of oil and season was salt and pepper.
    Roast on top rack until tender about 25 to 30 minutes. Meanwhile, diced potatoes and to half inch pieces (Peel first if you want a smoother texture). Place in a large pot with enough salt water to cover by 2 inches. Bring to a boil and cook until tender about 15 to 20 minutes. Reserve half a cup of potato cooking liquid. Drain and return potatoes to pot. Keep covered off heat until ready to mash. While potatoes cook, Pat chicken dry with paper towels and season all over with salt and pepper. Spray pan with olive oil on medium high heat. Add chicken and cook until browned and cooked through about
    3-5 minutes per side. Turn off heat and transfer to plate.
    Heat pot with drained potatoes over low heat. Add 1 tablespoon of butter and half of the sour cream. Mashed potatoes until smooth and creamy adding splashes of reserve potato cooking liquid as needed.
    Season with salt and pepper Spray pan The chicken is cooked in with olive oil spray. Add mushrooms and Green onion whites. Season with salt and pepper.
    Cook, stirring, until softened, 2 to 4 minutes. Stir in better than bouillon and 1/4 cup of water. Bring to a boil and then reduced to a low simmer. Cook until slightly thickened about 1 to 2 minutes.
    Store in 1 tablespoon of butter in remaining sour cream until melted in combined. Season with salt and pepper
    Heat pan with sauce over medium low heat, add chicken and spoon sauce over top. Even the top chicken with Monterey Jack. Cover pan until cheese has melted about 1-2 minutes. Divide chicken carrots and potatoes between plates. Spinning remaining sauce over chicken and potatoes. Garnish with green onions.

    Thank you for doing you! I watched one of your videos at the beginning of my journey on Weight Watchers . You have inspired me to be able to stay on program for 43 days & 20 # loss.
    In addition you have inspired me to me to try & figure out wearing makeup & color my hair so that I can look my best. I need to rewatch your makeup video as I need to buy products.

    Oh Ams has some knife skills! And also great tips I never knew, washing mushrooms with a damp paper towel, using potato water to thin out mashed potatoes, adding water to pan so that chicken doesn't get too brown on the bottom and stick. You are a wealth of information! Thank you so much! You are spot on about creating a life where we enjoy our food, not feel restricted! I've passed the 30 days mark, and am down only 3 lbs. But I'm 65 years old so that is good! Last night, I used my weeklies at a japanese restaurant. Had a glass of merlot, miso soup, and 4 pieces of tempura prawns and tempura vegetables. So satisfying!

      My mom wasn’t very culinary so I watched a lot of food network growing up 😝 if you lost 3lbs a month for a year, you’d be down 36lbs while enjoying all the tasty things life has to offer. Sounds great to me 😉

    Amber, You do you boo!! Dont listen to the negativity from some. What you are doing works for you and that is all that matters!! As you have said many times before “you do what works for you”. I dont understand some people feeling the need to comment in the negative. Everyone has their own journey and what works for one may not work for another. All you do is show what is working for YOU!     Love your channel! Blender recommendation: get a vita mix. I’ve had mine since my son was 1 and he’s 12 now. It’s as good as new and has never broken! Worth the money.

    Thank you Amber for your videos. You have so many great ideas. I was just visiting in Texas in a town called Katy, Texas. It was so beautiful. I loved it there. I was wondering have you ever tried Fairlife milk to add more protein? I have stomach issues with regular milk but I can drink fairlife since it is lactose free. Look forward to more of your videos.

      We have the H-E-B version of fairlife but I don’t really enjoy the taste of milk. My daughter drinks it though since it’s lactose free. I can tear up some chocolate fairlife though 😝 it’s sooo good.

    I don't know what they currently cost, but I bought a Blendtec in 2005 and it's still going strong! Blends anything!

    The turkey luncheon meat if it is only turkey breast and no artificial or caramel coloring etc then don’t scan track as zero. Most luncheon meats have something else added. ❤️ your UA-cam page!

    Do you take any multivitamins? If so what Brand do you take? Mine are 2 points! Is that a lot for vitamins? I guess they are 2 points because they are gummies. It seems like a lot of points. I just started WW , I love your channel!!!

      I take a women’s multi vitamin from HEB. Gummies normally have sugar which is probably why they have points. That does seem high points for vitamins though. Take a look at how many grams of sugar there is. I bet it’s pretty high.

      Ok two more things lol 1- the carrot sticks in the air fryer is genius 2-I throw peeled hard boiled eggs in the peppercini jar when the peppers are gone but you still have all the juice, let them sit for a few days in the fridge💯💯💯💯 delish

      I used to be a lunch lady and we put peppercini on the salad bar line, so I used to get the gallon jugs of them when we used all the peppers. My boss let me take the juice. One of my sons wrestled in high school so he ate a lot of hard boiled eggs and he loved them in the pepperoncini pickle juice. But you can still get a few eggs in that little jar to try it out

    So, I've just discovered your channel and kind of new to WW as well, I was on it 30 years ago and it was a lot different....so you're saying the chicken is 12 points...is that per serving or 12 points for the whole pan which I guess would be 6 per serving....??

      First of all, thank you for the quick answer and I can't wait to make this chicken dish and the muffins....I pulled up this video on UA-cam and clicked on the link and it did just as you said it would do, took me to the app and then I could book mark it....I've tried things like that before where people say go here, do this, to that...click here....etc...and it never works, but this worked like a charm!       They don’t taste like fries, they have that sweet carrot taste but they are a good fry replacement for when you need to add more veggies.

    I just discovered your channel, and subscribed immediately! Love it.
    Look up ninja ss101 foodie smoothie . Today, on sale 79$. My family uses it and we all think it’s great. It has a small footprint on counter. I also have a vitamin, but this ninja is quite good.

      It’s called Ovasitol. I added the link I use to the description box. It’s to regulate blood sugars. It’s $70 but it’s a 3 month supply. You take it twice a day. I have noticed a big difference in my cravings since starting it.

    30 years ago I was doing the WW diet. Didn’t lose a pd so I went vegan. Best decision of my life. I can off handedly thank this debunked diet plan for radiant health now.

      I’m happy you found what works for you. I went vegan for 6 months and gained 30lbs due to all the carbs. All of our bodies are different and want different things.

      I’m vegan and overweight so I find the combo with Ww has helped me lose 35 lbs so far. I watch these videos for ideas and I like to see someone that is actually doing the program.

      Actually I did it for 6 months, started birth control, stopped loosing weight, stopped weight watchers and tried calorie and macro counting that didn’t work at all for me and then stopped birth control and got back on weight watchers about 6 months ago and relost what I gained and now moving forward. Soooo I’ve lost 60lbs but 42lbs down from my heaviest. I’ve been an open book about all of it in my videos.

      @@nicoles7126 she really helps me with what to eat on my eating plan. I’m not on weight watchers anymore, but she has helped me so much with creative ways to jazz up lower point or lower calorie foods.

      @@idontkknowyou9518 it is sustainable. But if you don't want to permanently change how you eat the you will regain weight. That was my experience. It definitely works and is sustainable. But when I decided I didn't want to track anymore and wanted to go back to eating dessert with every meal then no surprise I gained back.
      I advise you ro go into it not doing anything you aren't willing to do for the long haul if you want lasting results. There are plenty of people who have gotten to a healthy weight and have kept it off for years and years!
