And....I did this one today! Absolutely LOVE it. I used half lower fat butter product and half unsweetened applesauce to cut down on the fat (I'm not keto; I'm just low carb low cal). So mine came up with a slightly higher carb but lower fat in the macros. It really is a delicious pound cake! I would note, though, that on my packages, monkfruit has 8 times as many grams per serving than my granular stevia (which I powdered before adding). So I would recommend anyone using something other than monkfruit to go by the 2/3 cup, not the grams on sweetener. Also, my bread loaf pan was way too big but the recipe as written fits perfectly in Souper Cubes from Amazon. Thank you Janet!

I made this again. It turned out perfectly the first time but this time it crumbles to dust when I try to cut it. I used liquid egg whites instead of whole eggs - do you think that was where I went wrong? Thanks. By the way, I'm still eating the crumbs - they are delicious!
You definitely need the yolks in this recipe. They create the stickiness that holds everything together

Can this recipe be tweeked to become a chocolate pound cake with a chocolate glaze?
Yes. In order to make this a chocolate poundcake you would decrease the coconut flour to 90 grams (3/4 cup), add 25 grams (1/4 cup) cocoa powder and omit the lemon juice (unless you want chocolate lemon poundcake). For a chocolate glaze add 1 to 2 TBS of cocoa powder and instead of lemon juice use warm water. You may need to use a little bit more water it depends on how thick or thin you want your glaze
