I made these for the first time yesterday. My husband and I really like these rolls. He called them "Shockingly good!" (He's tried a lot of my keto experiments, so you know he means this!) Next time I would like to add some finely grated cheddar, and brush the baked buns with a mixture of butter, garlic and Old Bay seasoning to make keto Cheddar Bay Biscuits like Red Lobster. Thank you for this very easy recipe.
Instead of the xanthan gum, you could add psyllium husk powder or flaxseed meal. Those both act as binders. No extra egg needed. Or Chia seeds that have been soaked in a little bit of water.
Made these tonight. Soooo good. More a biscuit I think but don’t mind.Had chicken with cream sauce on top a La chicken a la king. One of best keto meals I’ve EVER had! 10/10. Janets rule!!!!!
Oooh Perfect! I just made these and could not wait until dinner to try one! Absolutely delicious!!! I cooked mine for 23 minutes and turned the oven off and let them cook a few minutes more to cook all through. This is the best coconut flour roll recipe I have found! Thank you soooo much Janet! That’s one of the reasons I miss having a dog! When I had leftover egg wash, egg yolks or egg whites, I could fry them up , cool them off, and give him a treat! ♥️

These are in the oven right now. I used Bob's Red Mill coconut flour and the liquid to flour ratio was perfect!! I used a scale to weigh everything but the salt and butter. I know I should have weighed the butter too but I didn't. Lol! My husband just found out one of his arteries is 1/3 blocked so he has to change his diet. It has been a nightmare! I was making almond flour wraps to put his meat on every day but he says they are flavorless. Lol! I will let you know how much better he likes the rolls. He loves coconut so fingers crossed! I wonder if a dollop of yogurt or cream cheese would add to an even softer texture and taste? Also, if we're to use instant yeast and prove it before baking? Although it looks 100% delicious in its own right and I thank you whole heartedly for this wonderful healthy recipe.
you're welcome. Adding yeast to this recipe would definitely make it taste more like traditional bread however it will not make it rise. Adding yogurt or cream cheese would be great as long as you don't add too much. Coconut flour is very sensitive to moisture. You want to get the ration just right.
I've been looking for a recipe for Thanksgiving rolls ... one vegetarian, one low sodium, 2 low carb (not keto but reg bread is way too high in carbs), one eats anything. This looks fun. I don't have an 8" cake pan but, I have an oval baking dish which has an area a little bit bigger than an 8" cake pan. Hopefully it works OK.

Now that my health has improved so much from being on the carnivore diet (especially my gut) I can have low oxalate, low carb treats once in awhile. It's the same for my my young child. We both have oxalate toxicity and crystals coming out of us. That's why I'm glad for coconut flour because it's low oxalate and low carb. The rolls will be an enjoyable treat. Thank you.
I tried the recipe, followed all of the steps, but the inside was not fully cooked. I sliced each biscuit in half and placed it back in the oven, it helped somewhat. The I saw on the website that it was 3 stars, but I couldn't read the comments. I see why, I will have to go back to my tested biscuit recipe.

Yes arrowroot can work sometimes. Basically for this recipe you something that is going to bind your ingredients and keep the dough flexible. Similar to what gluten does.

@@davidhoque5864 You can probably substitute out part of the coconut flour and be ok. I wouldn't substitute all of the coconut flour. If you do substitute some of the coconut flour I would let the dough sit for 7 to 10 minutes rather than just 5. That way the fiber can soften

Unfortunately coconut flour cannot be substituted with any other flour. It is very absorbent and requires a lot more liquid and binders. Sometimes you can combine lupin flour and oat fiber and come close but this can result in a very dense bread or a very wet bread.
I don't know what it is but hearing you say 'button' just tickles me pink. What keeps going through my mind is "Button, button who's got the button." Hey, maybe you could remind us to press the button with, Button, button press that button? Anyway, rolls look great!

I noticed that you used all coconut flour. I'm concerned about the overwhelming coconut flavor. can I use almond flour or a combination? I've also recently been introduced with a protein powder I wonder if this will work
You can not replace coconut flour with almond flour. Sometimes you can replace part of the coconut flour with oat fiber or whey protein powder but you will moist likely have to adjust the egg and liquid. Coconut flour is very absorbent and requires a lot more liquid and binders than other flours.
In the Keto world when someone says "super moist on the inside' I know what "super moist inside' means. It's what we used to get with the 90-second bread... SOGGY. After revamping the 90-second bread so that it's not soggy on the bottom, I continue to make it because it's so quick and there are so many variations of sweet or savory that it stands in for just about ANY bread I ever need except for tortillas. After it's gone out of fashion (not talked about on the internet anymore) I continue to make it after having perfecting it. YUM!!! No more soggy bread!
3 years of watching UA-camrs then making their Keto baked goods, I’ve come to the same conclusion ….. Moist = Soggy 🙁 If the UA-camr shows a close-up, then I can almost tell what the “texture” is going to be. I’d try this but I don’t like the flavor of coconut in my savory baked goods. Sorry 😞

I've not made it at all, because of others' reviews saying the same about the sogginess(of "90 Second" bread), so I'm sure curious to try yours~ if you have a minute of course. P.S. *These rolls (Janet's above recipe, I mean) were absolutely not soggy, imho. They were soft yet firm, buttery fluffy deliciousness w/a slightly crispy top & bottom. I believe she really did mean "moist" as in not overly dry/crumbly.
I've been hunting for a keto sandwich bread. Would love a recipe I could make in my bread machine. Would like a large loaf that I can slice for several sandwiches.
I'm wondering if adding yeast to the recipe gives a close taste to bread. I guess you'd need to activate the yeast with a tiny bit of real sugar but that wouldn't hurt the carb count too much. Cheers.
I add yeast to a lot of my bread recipes for flavor. I use instant dry yeast and stir it in with my dry ingredients. You don't need to add sugar or anything because you are just using it for flavor. It doesn't help coconut flour bread rise

Yes you can swap the butter out for coconut oil or any oil of choice. Just make sure to check your dough after everything is combined to make sure the texture is correct. Depending on the fat content the coconut flour to liquid ratio may need to be adjusted just slightly
Yes you can use egg whites just make sure it is the same equivalent to whole eggs. Also you might want to beat the egg whites separately to soft peaks before folding them into the other ingredients. This just helps with better binding and fluffines
At last! Measurements in grams. Well, not all are in grams, but most. Cups, tablespoons and teaspoons have different weights/volumes in different countries. I'm craving bread so I really want these to work.

I made this for dinner! Tasted great but mine did not cook through. I will increase the temp. next time. My oven seems to be on low side. Thank you!

No unfortunately coconut flour cannot be substituted for any other flour. Coconut flour is very absorbent and very unique how it reacts with liquid

Xanthan gum is super expensive but I bought a jar of arrow root on sale. I hope that works the same.
Yes arrowroot can work sometimes. Basically for this recipe you something that is going to bind your ingredients and keep the dough flexible. Similar to what gluten does.

@@davidhoque5864 You can probably substitute out part of the coconut flour and be ok. I wouldn't substitute all of the coconut flour. If you do substitute some of the coconut flour I would let the dough sit for 7 to 10 minutes rather than just 5. That way the fiber can soften

Unfortunately coconut flour cannot be substituted with any other flour. It is very absorbent and requires a lot more liquid and binders. Sometimes you can combine lupin flour and oat fiber and come close but this can result in a very dense bread or a very wet bread.

Super easy to make and taste good too! Are there ways to soften the Powder-ly texture of the coconut. I.e. not too crumbly in the mouth?
You can add a small amount of sour cream or Greek yogurt to help give a little more moisture. Just don't add too much
I noticed that you used all coconut flour. I'm concerned about the overwhelming coconut flavor. can I use almond flour or a combination? I've also recently been introduced with a protein powder I wonder if this will work
You can not replace coconut flour with almond flour. Sometimes you can replace part of the coconut flour with oat fiber or whey protein powder but you will moist likely have to adjust the egg and liquid. Coconut flour is very absorbent and requires a lot more liquid and binders than other flours.
In the Keto world when someone says "super moist on the inside' I know what "super moist inside' means. It's what we used to get with the 90-second bread... SOGGY. After revamping the 90-second bread so that it's not soggy on the bottom, I continue to make it because it's so quick and there are so many variations of sweet or savory that it stands in for just about ANY bread I ever need except for tortillas. After it's gone out of fashion (not talked about on the internet anymore) I continue to make it after having perfecting it. YUM!!! No more soggy bread!

3 years of watching UA-camrs then making their Keto baked goods, I’ve come to the same conclusion ….. Moist = Soggy 🙁 If the UA-camr shows a close-up, then I can almost tell what the “texture” is going to be. I’d try this but I don’t like the flavor of coconut in my savory baked goods. Sorry 😞

@Peter Piper~Would you consider sharing what alterations you have made to perfect your 90- second bread? I've not made it at all, because of others' reviews saying the same about the sogginess(of "90 Second" bread), so I'm sure curious to try yours~ if you have a minute of course.
P.S. *These rolls (Janet's above recipe, I mean) were absolutely not soggy, imho. They were soft yet firm, buttery fluffy deliciousness w/a slightly crispy top & bottom. I believe she really did mean "moist" as in not overly dry/crumbly.

I'm wondering if adding yeast to the recipe gives a close taste to bread. I guess you'd need to activate the yeast with a tiny bit of real sugar but that wouldn't hurt the carb count too much. Cheers.
I add yeast to a lot of my bread recipes for flavor. I use instant dry yeast and stir it in with my dry ingredients. You don't need to add sugar or anything because you are just using it for flavor. It doesn't help coconut flour bread rise
Nutritional yeast will also give a yeast flavor. Very healthy alternative.

For the lactose intolerant, obvs the milk could be desired for nut/oat milk, but can one swap butter for oil? Same amount?
Yes you can swap the butter out for coconut oil or any oil of choice. Just make sure to check your dough after everything is combined to make sure the texture is correct. Depending on the fat content the coconut flour to liquid ratio may need to be adjusted just slightly

Can I substitute the three whole eggs with the equivalent in egg whites? I’m allergic to egg yolks.
Yes you can use egg whites just make sure it is the same equivalent to whole eggs. Also you might want to beat the egg whites separately to soft peaks before folding them into the other ingredients. This just helps with better binding and fluffines

You're welcome. I don't think these would turn out in a bread maker. The temperature is too high in a bread maker and the cook time is too long.
At last! Measurements in grams. Well, not all are in grams, but most. Cups, tablespoons and teaspoons have different weights/volumes in different countries. I'm craving bread so I really want these to work.

When I am using psyllium husk powder as a substitute for xanthan gum I use equal amounts just make sure to use psyllium husk powder not the whole husk
