For those using a glass bread pan, it takes 1hour and 5 minutes to bake at 350 degrees. The cake is delicious but a little oily, so I would cut the amount of coconut oil by half and substitute the other half with butter. Also, a dash of poppy seeds complements it nicely :)
I wish I had read your comment prior to making it the first time....the second time around I halved the oil bc 2/3 is too much for my tastes..fingers crossed it comes out great

This recipe is to die for! I love it. One issue that I had and want to share with you all is that I didn't have a nice silicone pan like Sonal did. I used an aluminum one. I sprayed it with coconut oil spray and cooked it at 355 F for 45 minutes in my convection oven. It cooked all the way thru just fine, however, it stuck to the pan bad. The second time I cooked it, I lined the pan with parchment paper. Success. Great cake, no stick. The third time I cooked it, I left the lemon juice out and added unsweetened chocolate powder (4 tbl). It was good, but a tad bit dry. Next time I might add something like butter to make up for the missing liquid from the lemon juice. But thank you Sonal for this great recipe.
So happy to hear that you have made this thrice and enjoyed it. How about adding a little vinegar when you make the chocolate flavour and want to leave out the lemon juice. The acidity helps in making it rise. Not too much though.

I was worried that I had wasted all of those ingredients. LOL. However, when it was finished baking and the toothpick came out clean, I let it sit for about 10 minutes before turning it out onto a plate. It sliced up splendidly, and tasted so good I was able to sit in front of an entire plate of Christmas cookies without fighting the temptation. This cake is that good, and I didn’t even glaze it :) The hostess asked me for the recipe because her husband loved it! I didn’t even take any credit. I’m sending your link to her.
If you mix your soda and baking powder into your coconut flour, and add it after you've mixed in your almond flour, you won't get such a mess. The rising will be more controlled, and won't be wasted by mixing it back down. It will make for a fluffier cake.
polly jetix the mess was the reaction between baking soda and lemon I guess adding these two in the end will make a fluffier cake as the mixing will knock off carbondioxide. But still the end result was a very yummy fluffy cake.
I made this cake and topped it with Keto lemon curd.It is the best I have ever eaten and improves with age. I keep it cold. I only have a small square as a treat and so love the texture and marvelous flavor, thank you for sharing.

OHMYGOODNESS !!!!! I just made this and it is delicious !!!! It tastes just like regular pound cake. I used 3oz of melted butter instead of coconut oil and used 4 drop extra of Young living lemon oil. My husband loved it and he is not having to eat Gluten Free. It is sooooo good and only 2 carbs!!! Hi I tried your recipe. Yes it's a lovely recipe. I just tweaked it by using half qty of erithritol n half of xylitol. As I don't like d aftertaste of stevia. And added black poppy seed. Turned out yumm. A big thanks. Yes its difficult to figure out that's it's a keto cake.
I just used d qty mentioned by sonal n used half of it with erithritol n half of it with xylitol. But mind you xylitol causes stomach distress to most people. Erithritol is safer.
Oceanic Blue - Erythritol and stevia act synergistically together. Erythritol takes away the aftertaste of stevia, and stevia removes most of the cold mouth feel of the erythritol.

I made this with some substitutions, but I basically stuck with the recipe, and somehow made an even tastier treat. I think I made a keto version of frangipane. I cooked some pears and baked it in a dish. I think I'm in love.
I used vanilla bean, I added poppyseeds and almond flavoring. I mixed it altogether and did not do it the way she did. It took 1 hour and 20 minutes on 350. Once the cake is done, it’s delicious and you cannot tell it’s keto. I’ll try doing it exactly like her next time and see if there’s a difference. For the cream, I would put more cream cheese and less heavy cream. Otherwise, a great recipe.

@@xercer8503 Sorry for late response. I love Gelatin for health reasons so I throw in a tablespoon for every egg. You will have to play with it to figure out what works best for you.
This cake was soo yummy. If you are not used to keto cakes, I think the cake tastes best the next day after it has set. I used a mix of butter and coconut oil as well as added some maple to the batter. the icing came out lovely as well. I added only tsps of the sweetner.

Just made this and I was sceptical about the glaze, because I have found stevia/other natural sweeteners are harder to hide if they're not in a baked good, but I'm astonished! I added a little more vanilla and lemon juice to mine, so had to bake for 60 minutes, but it's phenomenal! I completely understand what you were saying about the delicious smell, too. The whole house is sweet and lemony! We live in the south eastern region of the US where moist, buttery, sweet pound cakes are a staple, but I could feed this to my in-laws without mentioning the keto factor and they would be none the wiser. I think I'd add lemon zest to the batter to up that yummy lemon flavor. You can also sub a tbsp of psyllium husk and a tbsp of water for one egg. Just depends if people think it's too "eggy". Looks yummy and easy, can't wait to try it

Lauren Groombridge welcome to this channel. Please make sure you have the oven temp right. 180 C or 350 F. Cover and bake for 10 min out of the total time.
Anne-Marie Brooks the total baking time was 40 min. Out of that bake it covered with a foil for about 10 min. So that it is cooked as well as brown from top. Poke a toothpick and check if it comes out clean. Then you can get it out.

I substituted coconut oil for melted butter, Erythritol for Xylitol 1:1 (I should've added a dropper more of stevia) and did not have a lemon on hand, so used 1/3 store bought lemon juice and 1/3 cup of fresh orange juice (Asian variety that looks like a naval but isn't as sweet). I also mixed all dry ingredients (besides sugars) separately and added that in slowly to the wet. Took about 38 minutes on 350F - I really like how it turned out! Thanks so much!

I tried this last night for my diabetic parents and instead of stevia I used lemon MIO with the called for erythritol. OH my goodness, my father who loves lemon anything......was in bliss. It is now become the go to for a sweet treat. I also made the whipping cream cream cheese using lemon Mio as well. It was so good. Thank you, thank you, thank you for this recipe.

Yes, I noticed that too. It was a bit disturbing to me but I tried to ignore it. 😂Might make the cake wobble with an uneven bottom. Some people cut cake tops even, perhaps cut the bottom straight. Or I always wonder if the cake rises up and you place that side face down will it sink down a bit. Plus the bottom can be a bit soggy and that crusty , golden top is nice on top. Does it really make a difference? Probably not, to each their own. It’s just the way people have been taught to do it.

awesome recipe. made it today, added monkfruit/erythritol sweetner. its so good. next time will cut down on the oil but overall so good. i felt guilty eating it, had to look at the ingredients again to remind myself it was a healthier version.👌

Thank you for the recipe. It tastes really well. However I was quite disappointed that the macros and calories in the description are misleading. Each serving turns out to have 305 cal. 29gr fat, 8 g protein and 5.3 g carbs. I am not a calorie counter per se but for people following a Keto diet it is so important to get the macros right. People buy all these ingredients and spend time and money to make the recipe and I think it is only fair that the information in the description is as accurate as possible.
Paola Ganum glad to hear that you like the recipe. As far as I know the macros are correct. There can be a difference in the ingredients and thus macros. Also it may depend on the number of slices you make. Are they the same as mine.

I checked the macros as well and came out at 6 turns out extra fine almond flour is higher carb than raw almond flower made the change and the macros came out at 1.6g

I don't like the taste of Stevia alone. But I find that a combination of Erythritol and Stevia works quite well for me. I consider keto desserts too as a treat. So, eat some and store the rest in the fridge or freezer, so you do not eat too much.
Erythritol and Xylitol are the closest tasting to sugar and are FAR safer than the horrid aspartame, sucralose and other chemical based ones. Stevia has a metallic after taste that I dislike but mixed with Erythritol it's nit bad. Xylitol is my personal favourite for baking.

I tweaked the recipe a little and made this into cake layers, adding a chocolate mascarpone and whipped cream frosting. Made this cake for my son's birthday last week, and the family loved it so much they requested it again. So I made it twice in one week :) Thanks for the amazing recipe!
Hi, this cake crumbs tasted delicious, but mine was totally wet inside after 40 mins on 180 degrees celsius (not fan forced). So I kept it in for 50 mins, and it was still uncooked in the middle when I tried to turn it out. Sonal - so you mean 180 celsius AND fan forced? I see you use a silicon mould, mine was thick aluminium. HELP! It could have been wonderful, Second question, if i substitute butter for coconut oil, I weighed 2/3 cups of oil to be 150 grams. Is that the amount of butter to use? Thanks!!
Robert Thomson to substitute with butter I would use that.much and a tablespoon on almond flour too. As for the temperature of the oven it is 180 C and about 350 F. Hope you finally managed to cook it. All ovens are different so cook until a toothpick come out clean when inserted into the centre. Good luck the next time.
Robert Thomson Are you using refrigerated ingredients? If so, don’t. It’s very important that all ingredients are room temperature before baking certain cakes. The wet inside issue used to happen to me often. After reviewing the printed recipe I discovered the only step I wasn’t following was using room temperature ingredients. When I started using room temperature ingredients, I never suffered a soggy middle again! Good luck and happy baking!
Also, it depends what elevation you're at as well. I'm at 4300 ft and I always have to add as much as 10-30 min extra to cooking anything...also, yes the temp is 350℉.
Are you a pilot LOL? I used Convection oven or fan forced seems to work in 40 minutes, but I agree higher altitude, less dense air.. yes I do fly - @@tracys7057
I'm sorry to say, this was awful. The consistency was like a sponge, terrible aftertaste. it looked great coming out of the oven, but the taste, no can do.

Wow I just made these they were awesome I made 6 jumbo muffins because that was the only pan i had to use they came out divine I will try to use less coconut oil it was very oily but delicious you do have a great recepie thank you for sharing I to have diabetes and it didn't affect my sugars.
I have used this basic recipe to make all sorts of keto muffins, including blueberry, and other berries. This is a great basic recipe. It makes 12 muffins, so the macros per muffin are the same as each slice of cake. You could actually use sugar free chocolate chunks or chips or nuts. It has such a great texture.Thanks, Sonal!

Make Ghee when butter goes on sale. It last forever and frees up space in your fridge.

This is by far the BEST cake ever! I use the measurements for a coconut, pineapple, blueberry and chocolate cakes too which all came out fabulous! Love this recipe, it is my go to!

This was excellent - just made it. I used butter and no coconut oil and used a glass bread pan at 350 F for one hour and it was great. Thank you Sonal for a great recipe and CG for the tip.

I have lately started adding beef gelatin to my cakes. Gives them good texture without needing too many eggs.

This cake was soo yummy. If you are not used to keto cakes, I think the cake tastes best the next day after it has set.
I used a mix of butter and coconut oil as well as added some maple to the batter. the icing came out lovely as well. I added only tsps of the sweetner.

I made this last night and it was good. I would probably add more lemon juice next time, it had more of a coconut taste so I would scale back on the coconut flour. The texture good . I would definitely make this again. Thanks for sharing.

Just made this and I was sceptical about the glaze, because I have found stevia/other natural sweeteners are harder to hide if they're not in a baked good, but I'm astonished! I added a little more vanilla and lemon juice to mine, so had to bake for 60 minutes, but it's phenomenal! I completely understand what you were saying about the delicious smell, too. The whole house is sweet and lemony! We live in the south eastern region of the US where moist, buttery, sweet pound cakes are a staple, but I could feed this to my in-laws without mentioning the keto factor and they would be none the wiser. I think I'd add lemon zest to the batter to up that yummy lemon flavor. You can also sub a tbsp of psyllium husk and a tbsp of water for one egg. Just depends if people think it's too "eggy". Looks yummy and easy, can't wait to try it

Lauren Groombridge welcome to this channel. Please make sure you have the oven temp right. 180 C or 350 F. Cover and bake for 10 min out of the total time.
I'm confused. How long do you bake @ 350 degrees F?
Anne-Marie Brooks the total baking time was 40 min. Out of that bake it covered with a foil for about 10 min. So that it is cooked as well as brown from top. Poke a toothpick and check if it comes out clean. Then you can get it out.

I did a couple of changes due to not having a few items in my pantry/being horribly prepared.
I substituted coconut oil for melted butter, Erythritol for Xylitol 1:1 (I should've added a dropper more of stevia) and did not have a lemon on hand, so used 1/3 store bought lemon juice and 1/3 cup of fresh orange juice (Asian variety that looks like a naval but isn't as sweet).
I also mixed all dry ingredients (besides sugars) separately and added that in slowly to the wet.
Took about 38 minutes on 350F - I really like how it turned out! Thanks so much!

I tried this last night for my diabetic parents and instead of stevia I used lemon MIO with the called for erythritol. OH my goodness, my father who loves lemon anything......was in bliss. It is now become the go to for a sweet treat. I also made the whipping cream cream cheese using lemon Mio as well. It was so good. Thank you, thank you, thank you for this recipe.

Nah. Not a culture thing. I learned from baking class that you put the flat side up for easy frosting ( even flat surface😊).

Yes, I noticed that too. It was a bit disturbing to me but I tried to ignore it. 😂Might make the cake wobble with an uneven bottom. Some people cut cake tops even, perhaps cut the bottom straight. Or I always wonder if the cake rises up and you place that side face down will it sink down a bit. Plus the bottom can be a bit soggy and that crusty , golden top is nice on top. Does it really make a difference? Probably not, to each their own. It’s just the way people have been taught to do it.

Thank you for the recipe. It tastes really well. However I was quite disappointed that the macros and calories in the description are misleading. Each serving turns out to have 305 cal. 29gr fat, 8 g protein and 5.3 g carbs. I am not a calorie counter per se but for people following a Keto diet it is so important to get the macros right. People buy all these ingredients and spend time and money to make the recipe and I think it is only fair that the information in the description is as accurate as possible.
Paola Ganum glad to hear that you like the recipe. As far as I know the macros are correct. There can be a difference in the ingredients and thus macros. Also it may depend on the number of slices you make. Are they the same as mine.

I checked the macros as well and came out at 6 turns out extra fine almond flour is higher carb than raw almond flower made the change and the macros came out at 1.6g

I just tried this recipe. Oh my goodness!! I am so happy right now. I did add 1/4tsp of lemon extract because I love lemon. Two thumbs up. If I had more thumbs, I would put them up too!! 😁😁😁

OMEEE It looks so good. I hate the taste of stevia tho. Isnt the other added sugar alternatives bad for you?
I don't like the taste of Stevia alone. But I find that a combination of Erythritol and Stevia works quite well for me. I consider keto desserts too as a treat. So, eat some and store the rest in the fridge or freezer, so you do not eat too much.
Erythritol and Xylitol are the closest tasting to sugar and are FAR safer than the horrid aspartame, sucralose and other chemical based ones. Stevia has a metallic after taste that I dislike but mixed with Erythritol it's nit bad. Xylitol is my personal favourite for baking.
I have never tried xylitol. I will look for it and give it a try now.

I tweaked the recipe a little and made this into cake layers, adding a chocolate mascarpone and whipped cream frosting. Made this cake for my son's birthday last week, and the family loved it so much they requested it again. So I made it twice in one week :) Thanks for the amazing recipe!

Hi, this cake crumbs tasted delicious, but mine was totally wet inside after 40 mins on 180 degrees celsius (not fan forced). So I kept it in for 50 mins, and it was still uncooked in the middle when I tried to turn it out. Sonal - so you mean 180 celsius AND fan forced? I see you use a silicon mould, mine was thick aluminium. HELP! It could have been wonderful, Second question, if i substitute butter for coconut oil, I weighed 2/3 cups of oil to be 150 grams. Is that the amount of butter to use? Thanks!!
Robert Thomson to substitute with butter I would use that.much and a tablespoon on almond flour too. As for the temperature of the oven it is 180 C and about 350 F. Hope you finally managed to cook it. All ovens are different so cook until a toothpick come out clean when inserted into the centre. Good luck the next time.

Are you using refrigerated ingredients? If so, don’t. It’s very important that all ingredients are room temperature before baking certain cakes.
The wet inside issue used to happen to me often. After reviewing the printed recipe I discovered the only step I wasn’t following was using room temperature ingredients. When I started using room temperature ingredients, I never suffered a soggy middle again!

Also, it depends what elevation you're at as well. I'm at 4300 ft and I always have to add as much as 10-30 min extra to cooking anything...also, yes the temp is 350℉.

Mine did the same it was totally wet inside and after cooking it for 1 hour and 30 minutes I still don't hold together needs to be eaten with spoon

I have used this basic recipe to make all sorts of keto muffins, including blueberry, and other berries. This is a great basic recipe. It makes 12 muffins, so the macros per muffin are the same as each slice of cake. You could actually use sugar free chocolate chunks or chips or nuts. It has such a great texture.Thanks, Sonal!
