So I followed his steps but made few changes based on what I had and it was really delicious. I didn’t have broth so I added chicken maggie cubes which I think is similar to broth. Also, what I did was in seperate pot boiled the broccoli and half of that I put in blender with like 2 spoons of water to allow it to blend, and used all the parts of the broccoli (didn’t throw any parts of it as its all healthy). And the other half I just cut smaller pieces bc I thought it looked nice to have some pieces of broccoli show. Anyways same directions as him with the onions and garlic then I added the chopper broccoli then the broccoli from the blender, a little bit of water maybe 2 cups. I added about 3 spoons of black pepper and half a tablespoon of salt (as maggie has some salt in it). Let it boil for a few minutes then added the whipping cream. Didn’t have flour either so didn’t add any flour. Nonetheless, it was really tasty and my picky son loved it!
Yummy sounds great. I can't believe he wasted do much, first the cream and then all the stems, the stems have alot of flavor and vitamins. This dude is so wasteful. Ill try yours sounds great ❤❤❤

Thank you for this! I am trying to reduce flour as much as possible, a potato is a great idea to add starch. You steamed the potato and then added cream to a pan with the potato, like making mashed potatoes?

I agree that broccoli stems add great flavour when peeled and sliced. It stands to reason when you think about it. All the goodness and nutrients from the earth have to pass their way through the stem to reach the head of the plant. 🤔🤔

I would incline to cook the broccoli in less than ten minutes to retain the nutrients and just add the cream into the soup minus more butter with a bit of cornflour mixture.

This is similar the recipe I use, except mine was adapted from potato soup. I use a little less broccoli, add 2 potatoes I leave the skin on. I like the flavor (and am lazy) and use sour cream instead of cream.

This is like the 4th recipe on broccoli soup I found and it's the 4th different iteration D: I guess I'll just try to combine the ideas of all of them and fortify some stock and then see where that gets me. From what I gathered it's "aromatics in butter, stock, simmer broccoli bits, thicken". Nice quick video, though. Would be easier to cook with metric measurements, but I'll just improvise.
I like the stems better than the flowerets. Put in salads or tuna or salmon salad. I usually have eaten all of it before I finish cooking the tops. Thin or thick they are delicious. I would melt the reserve 2 tablespoons of butter add the flour cook that into a roux and then add the cream. No lumps. Great video thank you!

You can also add rice flour to thicken, among other starchy ingredients

I used tinned / canned Coconut milk. It is a great replacement for dairy :)

Frozen works just fine. I use whatever is cheaper. No dairy for me so I either make a roux or use coconut cream or even non dairy coffee creamer.
You needed to cook down the flour before addind the cream.
