New to the channel want to support the channel and I also am learning to can so this is a great video for me to learn how beause I love me some fried green tomoatoes.
yes, you sure can. When I can them next year, I will probably slice just a little thicker, but that is a personal preference. I would recommend slicing just a tiny bit thicker than you would for frying fresh. They shrink a little in the jars when you process them.

Gosh, 45 minutes would leave a mess of green tomato sauce! I never thought to can green tomatoes for frying, I've used them only in chow chow. Great idea, thanks for sharing.

I love fried green tomatoes and I was just wondering how to do them so I can have them in the winter months if I do pint jars do I use the same amount of salt and citrus acid
LOVE LOVE fried green tomatoes! I did 4 jars of salsa the other day in my stock pot using my insta pot rack inside too. 😆 I didn’t want to use all that propane energy heating up a huge water bath canner for 4 little jars!
good morning Mrs Follies i have a big question if i made sure there was no air bubbles in the jars before processing but after processing 15 and after the cool down i found alot of little bubbles in the jars after everything r the tomato still good can i store them like that with the air bubbles or not i used 1pints wide mouth jars ty
@@RodeoCowgirl-55 no because you have tightened the ring on the jar. The purpose of the water over the jar is to keep air out while processing. That’s why the jars seals. The air is evaporated out of the product so it will last longer.
you should cover your jars by at least 1 inch of water when water bath processing. I tend to go with a little more than that - usually 1-1/2 inches just to err on the side of caution.
Great video! Can you use lemon juice in place of the citric acid? Also, you think it would be fine to slice 'em up in chunks instead? Curious, because I have a boat load of jars, but all are small mouth haha TIA!
yes and yes! lemon juice is acid, and will work just fine. I don't always have it on hand. Chunks work just fine. I like slices for frying, but have canned chunks and wedges, as well.
I watched a different UA-cam channel on how to can green tomatoes and I followed their instructions to the tee what a mess you talk about a nasty stink bomb I had 6 quarts of green tomatoes that I had to throw out so I’m gonna try a quart or 2 Your Way and I’m going to extend the cook time since it’s a quart to about 30 minutes do you think That would be adequate
the longer you process them, the softer they will be. in pints and half pints, mine are still soft, but not mush... you just have to be gentle with them when taking them out of the jar. I would suggest trying a couple of pints and see if you are happy with them first.

I love having these in the wintertime. If you have not done yours yet, slice them a little on the thick side, as they get softer with the canning.

They turn out great. I like to drain them and lay them on a paper towel for a couple of minutes before I bread them and fry them.

I use my stockpot for a lot of canning because I usually do small batches for just myself. It is just so much easier!

I love this method for tomatoes. Is it "doable" for yellow squash and or zucchini?
yes, it is good for both!! slice them a little on the thick side because they will be very soft when you take them out of the jar.
Would probably need to pressure can squash, as it's not acidic like tomatoes.

How much water above or below lid in the pot? I could not see inside your pot to see if water below or above lid.
Above the jars she said 1and 1/2 inches.

Are you using cold water?
Please can I use my steaming machine to steam instead of putting on the cooker ?
I have not used a steam canner but my understanding is that you can steam can anything that would be water-bathed for the same amount of time.
So, you cold processed them, right?
You can’t do pints in the stock pot?
Any water bath has to be 1-2 inches above the tops of the jars.
You can process in any pan that covers your jars by at least an inch and has a good lid.

I did mine for 10 minutes and they were wonderful and I still have a jar that I did 10 years ago and they look great
