Thank you so much. We have had pretty good luck wrapping them like that. Wrap individual green tomatoes in newspaper: Layering wrapped tomatoes in a box, no more than 2 layers deep. Place the box in a dark, dry spot and check weekly for progress. It usually takes 3-4 weeks for the tomatoes to ripen, but check frequently and remove any fruits that show signs of rotting. I’m so glad I found you folks and this recipe! Hello from NJ! Love this great tutorial. I've never worked with green tomatoes and I do have quite a few that I wonder If I can do anything with. First question is can I use Roma tomatoes as well with this recipe, and secondly, can I use underdeveloped tomatoes? Underdeveloped meaning about a third or half the size of a full grown. Thank you :)
Hi and thank you! Yes, you can use Roma tomatoes. If your underdeveloped tomatoes are about to be lost due to a frost or freeze, I would definitely give it a try. You can pickle just about anything so I’m sure it would work. You would probably just have pieces that are firmer and more dense. Good luck! 😊 ~ Josie
Nola Lewis - hi and thank you so much! I’m so thankful we have a basement food storage and equipment room. At our previous house we kept everything in two different closets. I love this video! You make it so easy to understand. I am new at all this and I have a question for anyone's input. After finishing my water bath, the liquid in my jars is cloudy. What am I doing wrong, and are they safe to eat?
Hi and thank you for your question. Did you by chance use table salt in your recipe? The additives in regular table salt can cause a cloudy brine. Thank you for watching and have a great weekend 😊
@@OzarkMountainGoats Thank you for replying so fast! No, I used canning salt and brown sugar instead of white, oh and some diced garlic in it's juice. Could it be the store bought garlic in the juice maybe?
Hi, I'm from Greenbrier Arkansas and this is the recipe video I was hoping to find, thank you. Only question is, how hot is the hot water bath, boiling, simmering? My grandmother used to always make pickles every year and they were so good...
rawzone1 - Hi, and thank you for your question! The water in your canner should be boiling for a hot water bath. Once mine starts to boil I back off on the heat a little bit but keep the water at a constant, steady boil. I hope you give these a try and that they are as good as your grandma’s! Thanks for watching and commenting and have a great weekend❣️ 😊 ~ Josie
I am viewing from the Netherlands. This is all new to me. Nice. I have a question though. After canning, are the tomatoes cooked enough to eliminate the poison in them? Thank you.
Hello, here in the states people eat green tomatoes all the time. We eat them fried, in salads and pickled. My wife (Josie) when we first was married over 40 years ago didn't care for tomatoes but now loves them. We eat green tomatoes every year as hundreds of thousands of other people here do that never have had an issue. I would suggest trying them in small quantity if your not custom to eating them. But I think you'll find they are tasty. Thank you for commenting and be safe!
Just discovered your channel via this video which we enjoyed. We have a jar lifter identical to yours and would love to purchase a few for family gifts but haven't found any. Do you possibly have a source?
Hi - the jar lifter is very old and was given to me. I have never seen one like it but I absolutely love it. I think it’s so much easier than the new ones. Possibly search eBay…. ?
I agree with you on being easier to use on the average. This one belonged to my Great Grandmother and my wife and I use it all the time: ua-cam.com/users/shortsRaeTdhOecH0 @@OzarkMountainGoats
I make chow and green tomato salsa but I am going to make your recipe. If I use white vinegar instead of apple cider would that change the flavor. If it would then I will use apple cider. I ask because one of my daughters hates apple cider vinegar. Thanks for the recipe and I will subscribe to your channel.
We have it as a small side in a little 1/2 cup or so bowl. Just to stimulate the taste buds with a meal. We really like it with pork chops or catfish. If you try I hope you enjoy. Thanks for watching. / Jim
The recipe I learned from and follow recommends an overnight salt brine in the fridge but says tomatoes can be iced for 4 hours if short on time. The ice brine helps keep the green tomatoes from being so mushy.
Hi Josie, quick question. In your vinegar with the spices, do you add any water? My husband won’t eat it if there is a strong vinegar taste. Most all pickling recipes I use call for a dilution. just curious. Thanks
Hi, and thanks for your question. The vinegar is not diluted. I think it has a little bit of a sweeter bread and butter pickle flavor. Hope this helps! Josie
Hi ~ I’ve mostly noticed that the shelves at our 2 closest Walmart’s are not very well stocked. It seems paper products and cleaning supplies are the worst. Meat prices are pretty high as well. I’ve been preparing for several years. You’ll have to check out my playlist called “Food Storage & Emergency Prepping”. Thanks for the comment and have a great weekend ❣️
is the pot you are boiling the jars a canning pot with a rack inside ? my Grandmother used a canning pot and I was wondering if thats what you were using? Thank you very much!!!!
Benz crazy - Hi and thank you for your question! Yes, the pot I’m using is a canner with a rack inside. That happens to be my favorite brand and it’s called Victorio. It has a very thick bottom which prevents scorching/burning and I actually bought a second one! I use it to make 5 gallon batches of soup, etc. Thank you for watching and have a great week! 😊 ~ Josie
Have you made green tomato mincemeat? I am going to try this recipe tomorrow as we have 20 gallons of green tomatoes to deal with. I also make green tomato pie and green tomato salsa. By the way.....the darned Blackberry cream pie is in big demand. Ralph wants it every day.😋😨
Hi Fiona C, this is Jim. You have a couple that I haven't and I'm sure Josie hasn't heard of but they sound fun. Let us know how they turn out. We love trying new thing like that. Is the mincemeat something you would add to like a mincemeat pie? My mother use to make those. I can see where the green tomato salsa would be yummy. Are you going to video it? Thank you so much, Josie will be home tonight she has been away for 10 days taking care of our daughter that had some health issues and that are much better now. Anyway, thanks again and I'm sure Josie will add to this conversation./ Jim

I've never heard of this but think I will try it as I have more green tomatoes after making Salsa Verde out of them. What a great idea using a pitcher to pour the brine instead of ladling it! Thank you!
Jomama 02 - pickled green tomatoes are really good and I think you’ll like them! Yes using a pitcher to pour hot liquid is much easier and much less messy than using a ladle. Thank you for watching and commenting. Have a great day! ~ Josie
Looks Like A Great Recipe ! Could I Cute down On the sugar in order to keep them more tart or are they tart anyway ! Checking out green tomato recipes and came across yours ! It Does sound really good ! Nice Video !
Petes Little Homestead - that’s cool that you stumbled across our recipe while doing a UA-cam search! I think you could definitely cut down on the sugar. They are pretty sweet but with a bite to them due to the different spices. Very tasty! Good luck on your recipe search - I hope you find one that you really like! 😊 ~ Josie
Rose McCluney - The recipe I have states that the vegetables need to be refrigerated overnight in the salt brine. I believe that’s to pull excess water out of the tomatoes. By covering them with ice and letting it stand for 4 hours, it eliminates that step and makes the process go quicker. Thanks for watching and leaving feedback!
Danny Thurman - hi and thank you for your question. I think you could decrease the amount of sugar. It would just be a matter of experimenting with the recipe. Thank you for visiting our channel and have a great weekend! 😊 ~ Josie
I’m going to try to do these now. I finally succeeded with growing tomatoes & I’m worried that I will be swamped with so many red tomatoes soon. How long do I boil them in the hot water once in the jar?
Carol Ferguson - hi and thank you for your question. I process my green tomatoes 15 minutes. I’m sorry this took so long to respond but I hope it helps! Good luck with your tomatoes ❣️ ~ Josie
Dear Ozark Mountain Goats, let me start by saying that I found it a bit disappointing that I was the first one to like this video. What's up with that? Terrific video! You processed the pint jars for 15', but what about the 1/2 pint jars? Did you process them for 10' or 15'? THANKS!
Evan Panagiotopoulos - Thank you so much for the kind feedback! I process pint and 1/2 pint jars for the same amount of time. Thank you for visiting our channel and have a great weekend! ~ Josie 😊

WHEN SHE SAID JARS HAVE TO BE COVERED BY ONE INCH OF WATER DID SHE MEAN TO FILL THE WATER TO OVER THE TOP OF JARS, OR SHE MEANT THAT TOTAL AMOUNT OF WATER SHOULD BE ONE INCH?
@@OzarkMountainGoats got that, but i was curious when you put jars in the container/pan in hot water, how much water should there be? and does the water keep boiling or is just simmering?
Its in the description of the video. But here it is again~ 5 lb green tomatoes 2 medium onions 1/3 cup pickling salt 3 cups cider vinegar 1 3/4 cups sugar 1 teaspoon ground turmeric 1 teaspoon celery seed 1 tablespoon mustard seed optional - red bell peppers or hot peppers Cut ends off of tomatoes and discard. Slice tomatoes into 1/4 inch rounds or bite-size chunks. Peel onions and slice into 1/4 inch pieces. Add tomatoes and onions to a stock pot or bowl and sprinkle with 1/3 cup pickling salt. Gently toss to coat well. Refrigerate overnight or if you’re in a hurry you can cover with ice and let stand for four hours. In a large pot combine the vinegar, sugar, turmeric, celery seed, and mustard seed. Bring it to a boil and then reduce it to a simmer. Drain the vegetables in a large colander and rinse lightly. Pack pint size, sterile jars with the vegetables. If desired, add a few thin strips of sweet or hot red pepper. Fill each jar with spice liquid leaving 1/2 inch headspace. Wipe rims and place lids on jars then secure with rings. They should be fingertip tight. Hot water bath for 15 minutes.
Finger tight" means something is as tight as it can be made by hand, without the use of tools. For example, when canning, you should tighten the lid on a jar fingertip tight, using only your fingertips to turn the band. Hope this helps!

I’m from Waldron Arkansas and years ago we would go down to Mena Arkansas, to the Fish Net Restaurant and they served pickled green tomatoes and this recipe is close to what they had. They would also sell jars of this to take home, but they have since closed and I couldn’t get it anymore. So sad! I’m am so excited as I just picked the last of my tomatoes this weekend and I am going to try it. Thanks so much! Are you still putting up new content?
Thanks so much for comment. They are very good and we have a restaurant in Mt Home called Fred's that sell a good pickled green tomato. We will be putting up more content later. We have had a few family members that have been sick that we are helping. Plus we both had covid that threw us both for a loop. We are better now and as soon as we get caught up with family and goat breading we will do some more videos. Thanks again and have a wonderful day!
Mmmmm.... these pickled tomatoes look amazing! Thank you for sharing, I am glad I came across you today, just subscribed, looking forward to more recipes!
Calm Chords - thank you so much and we subbed you back! If you’re in need of a good laugh, watch the bloopers at the end of our wild plum jam video 😆😂 Thank you for visiting our channel! Josie
Thank you. Awesome job.
Melita Obergh - thank you so much and thanks for watching ❣️
I really want to try green pickles tomatoes
They are very good! 😋
Thank you so much. This is a great “how to” video. Clean, prepared kitchen, not too much chit chat, clear instructions and demonstration, very calm and pleasant delivery. I haven’t canned anything in a long time, you gave me confidence to begin again. Thanks, too, for the tip about storing the extra tomatoes. I have subscribed to your channel. God bless!
Thank you so much Charlotte for the kind feedback and for subscribing to our channel. I hope you enjoy getting back in to canning. It’s very rewarding - especially in today’s crazy world! 😊 Josie
I used your recipe last year and canned 12 quart jars. Oh my gosh! I have one jar left. Because of death in the family, I didn’t get to make it to the tomato farm in Warren, Arkansas. So, I will cherish my one jar until next year.
Wow, I’m so glad you like the recipe! Hopefully next season you’ll be able to make a double batch ❤️
I have never picked before. And I've never tried pickled tomatoes before either ... one day when I get a chance to actually try...hopefully soon!
That's a cool tool to get the lids out, is it a magnet?
I love your shirt !!!
If you like pickles you will probably like the green tomatoes pickled. Yes it is a magnet. Thank you so much for watching!
thank you for sharing this, the only thing I ever ate was green tomato pie that my aunt made. I am going to remember this for next year . I love your channel so fun to watch and learn. Hello from Minnesota
GrandmaSewHappy Homestead - thank you so much! I hate to see food go to waste so pickled green tomatoes and green tomato salsa really helps use up the last of our summer garden harvest. Thank you for the nice feedback and thank you for watching! 😊 Josie
I would like your recipe for the green tomato salsa please
I've got mine covered with newspaper. I'm going to do the pickled tomatoes though. Looks great
She's Gone Country Farms - thank you Victoria! We just picked the last of our tomatoes because we’re getting a hard freeze tonight. We’ve decided to make some green tomato salsa with it. It’s a new recipe for me so hopefully it will turn out well! Thank you for watching! 😊 Josie
I find it interesting that the first place I ever ran into pickled green tomatoes was in Harrison Ark.
Kevin Brown - i hope you liked them, we sure do! 😋
I loved them. Not many fish shacks in these parts though.
Great video.I can do with out the sugar tho.
Good luck! 😊 ~ Josie
Hello! how cool is your basement for storing the paper-wrapped tomatoes? Thank you!
Nola Lewis - hi and thank you so much! I’m so thankful we have a basement food storage and equipment room. At our previous house we kept everything in two different closets. It worked but having everything together makes it much nicer. Thank you for visiting our channel and commenting. Have a great upcoming weekend! ~ Josie
@@missmelody22 - possibly the brown sugar. It can cause discoloration. Otherwise I don’t know. 🤷♀️
Thank you for commenting and be safe!
can they be stored at room temp or the refridgerator
After being canned they are shelf stable until opened. Once opened they need to be refrigerated. Thanks
Nice come to your kitchen and eat
Thank you and thanks for visiting our channel!
Great video! 🧡🍂
Thank you so much for watching!/Jim
Just discovered your channel via this video which we enjoyed. We have a jar lifter identical to yours and would love to purchase a few for family gifts but haven't found any. Do you possibly have a source?
Hi - the jar lifter is very old and was given to me. I have never seen one like it but I absolutely love it. I think it’s so much easier than the new ones. Possibly search eBay…. ?
I agree with you on being easier to use on the average. This one belonged to my Great Grandmother and my wife and I use it all the time: ua-cam.com/users/shortsRaeTdhOecH0

Certainly sounds good although I've never heard of it before. We might have to try them if we have green tomatoes left.
We have it as a small side in a little 1/2 cup or so bowl. Just to stimulate the taste buds with a meal. We really like it with pork chops or catfish. If you try I hope you enjoy. Thanks for watching. / Jim
Why ice? I grew up eating pickle green tomatoes, we treated them as and used the same brine as cucumber pickles.
The recipe I learned from and follow recommends an overnight salt brine in the fridge but says tomatoes can be iced for 4 hours if short on time. The ice brine helps keep the green tomatoes from being so mushy.
That just like my mom’s recipe, but hers calls for white vinegar and no turmeric. I want to try yours, too, and maybe add some red sweet peppers.🙂
It’s fun to play around with different recipes 😊 Hope it turns out well for you ❣️
Hi Josie, quick question.
Josie
Josi we live pickled tomatoes. Are ya noticing shortage where you live also and are you prepared for it such as storing food just curious.
😊 ~ Josie
Made it with apple cider vinegar. Hope it will be ok? Vs. Just cider vinegar???
Is it the same thing?
Jean Eaton - no worries, it’s the same thing! Enjoy! 😋 ~ Josie
How long you leave it for before open a jar?
You can eat right away if you wish but we wait at least 4-5 weeks so flavor can meld together. Thanks for question.
Fiona C - you crack me up! I’m thrilled that your family loves the cream pie 😋 That makes me happy! I have never heard of green tomato mincemeat but it sounds really interesting and I would definitely try it. Thank you for watching our channel and leaving such nice feedback. Jim and I really appreciate it! 😊 Josie

Thank you so much for visiting!
Hi , It's my first time trying to pickle green tomatoes, it's looks good and I have lots and lots of green tomatoes. I am sorry but I don't see the recipe posted, I only see the ingredients. Can you please send me a link or paste it here. Thanks Sylvie from Ontario, Canada
Sylvie Carriere - hi and thank you for your comment! I have added the recipe to the description. Let me know if you have any other questions. I hope you enjoy the pickled green tomatoes. We think they’re delicious! Thank you for watching, commenting and have a great day! 😊 ~ Josie
😊 ~ Josie
Are these green tomatoes sweet tasting like sweet pickle relish? Do I have to put sugar?
The recipe calls for sugar. They are not naturally sweet. If you follow the recipe they will be as sweet as sweet pickles.
Did you get the actual recipe from the restaurant?
No, I just did some searching and found a recipe that looked good. I think it tastes very much like the restaurants.
A what is the purpose of the ice bath?
Rose McCluney - The recipe I have states that the vegetables need to be refrigerated overnight in the salt brine. I believe that’s to pull excess water out of the tomatoes. By covering them with ice and letting it stand for 4 hours, it eliminates that step and makes the process go quicker. Thanks for watching and leaving feedback!
I tried it,, wow,, thanks,, I never changed a thing,, and after eating some, why would I?
777dwane - that’s awesome, I’m so glad!! Thank you for the kind feedback ❤️
Can you add less sugar?
Danny Thurman - hi and thank you for your question. I think you could decrease the amount of sugar. It would just be a matter of experimenting with the recipe. Thank you for visiting our channel and have a great weekend! 😊 ~ Josie
Can you use cherry tomatoes in this too?
I have never seen it done with cherry tomatoes but that’s a great idea! I would love to know how it turns out if you decide to try it 😊
I eat these too, but they come jarred from the grocery store - whole, actually. I know, cheat; but at least I appreciate the concept :)
Hey, nothing wrong with that! I enjoy canning and gardening so it works well for me 😊 Thank you for watching and commenting.
This is my grandmas piccalilly recipe. She just cut the veggies in strips.
❤️
I did add red bell pepper.
Sadie Mitchell - sweet bell peppers are great in pickled green tomatoes! ❤️
Do the tomatoes get rinsed after sitting in ice bath
Ralph Tamez - yes, I rinse the salt brine off before packing them into jars. Thank you for your question and thank you for watching! 😊
Ozark Mountain Goats thank you, making this today...Ralph in Boise, Idaho
Ralph Tamez - that’s great! I hope you like them 😊
How do I find the recipe?
It’s in the description
I’m going to try to do these now. I finally succeeded with growing tomatoes & I’m worried that I will be swamped with so many red tomatoes soon. How long do I boil them in the hot water once in the jar?
Carol Ferguson - hi and thank you for your question. I process my green tomatoes 15 minutes. I’m sorry this took so long to respond but I hope it helps! Good luck with your tomatoes ❣️ ~ Josie
Ozark Mountain Goats: thank you! I think they did ok. I hope they all popped. I don’t feel a give in them. Do you think that’s right?
Dear Ozark Mountain Goats, let me start by saying that I found it a bit disappointing that I was the first one to like this video. What's up with that?
Terrific video! You processed the pint jars for 15', but what about the 1/2 pint jars? Did you process them for 10' or 15'? THANKS!
Evan Panagiotopoulos - Thank you so much for the kind feedback! I process pint and 1/2 pint jars for the same amount of time. Thank you for visiting our channel and have a great weekend! ~ Josie 😊
if you will put a damp kitchen towel under your cutting board it won't slide on you
Can you use tomatoes early in season before they get ripe or no? I just started gardening & am starting to upload videos on my page as well. Hope you'll like & subscribe.
Sorry, for some reason message went to spam. Yes that is what you want to use green tomatoes. Thank you, I'll check your site out!
Sugar is poison, can I skip sugar?
WHEN SHE SAID JARS HAVE TO BE COVERED BY ONE INCH OF WATER DID SHE MEAN TO FILL THE WATER TO OVER THE TOP OF JARS, OR SHE MEANT THAT TOTAL AMOUNT OF WATER SHOULD BE ONE INCH?
When canning, always leave one inch of headspace. That means only add water to within one inch of the top.
@@OzarkMountainGoats got that, but i was curious when you put jars in the container/pan in hot water, how much water should there be? and does the water keep boiling or is just simmering?
@@otherone1234 oh ok, yes cover the jars completely by an inch of water and keep a light boil going until complete.
@@OzarkMountainGoats thanks
got it, thanks, now where do I get/buy green tomatoes in Long island NY? lol I know there is plenty come September, might have to wait till then...
Don't confuse syrup with brine.
secure your cutting board with wet cloth underneath
Great tip! Thanks for watching 😊
Why can't you just give the recipe
Its in the description of the video. But here it is again~
5 lb green tomatoes
2 medium onions
1/3 cup pickling salt
3 cups cider vinegar
1 3/4 cups sugar
1 teaspoon ground turmeric
1 teaspoon celery seed
1 tablespoon mustard seed
optional - red bell peppers or hot peppers
Cut ends off of tomatoes and discard.
What does finger tight really mean. Not so tight so air can escape?
Finger tight" means something is as tight as it can be made by hand, without the use of tools. For example, when canning, you should tighten the lid on a jar fingertip tight, using only your fingertips to turn the band.
Hope this helps!
