    I have a victory to share;
    I am saving a ton of money just by NOT buying chips, soda, cupcakes, bread, processed foods, frozen dinners, and various other crap foods. Leaves me with the means to buy all the red meat, butter and eggs that I want. And as an added bonus, I am so much more healthy. No more inflammation, hyper tension, no more day naps, lost 40 lbs. And for some reason my eyes are better and strangely, I can see more colors!!

      I had severe knee pain. At 28 years old my knees gave out walking up a flight of stairs. Thankfully my elbows and wrists were fine because shimming up the handrails was how I got up. And I always have been super active. That was technically right after I started carnivore and was detoxing of all the stored up oxalates. Since the majority of them left me, I have not had any issues. I was pure carnivore for 6 months and have been animal based/hyper carnivore, eating mostly meat and eggs with also raw dairy and certain low oxalate fruits and vegetables that don't mess me up, and even then only eating locally grown plants in season. So glad to not have had to change careers as I'm in construction and the joint pain was so bad I couldn't have gone another year.

    If you’re worried about grease splattering all over the inside of your oven when cooking flanken ribs or bacon or anything else, simply cover what you’re cooking with another sheet of parchment paper. It does not affect the cooking time or browning and eliminates at least 95% of the grease splatter.

    Here is a tip from someone who vacuum packs everything! If you are vacuum packing anything with extra juice, blood etc, place the liver, fish, oysters, even sauce into a cheap ziplock bag bag first. Squeeze every bit of air out of the bag and then place it into a vacuum bag and vacuum pack. NO bad seals and stays super fresh for well over a year!!!! I have never had anything that got freezer burn!!!!!

    • @piedpiper7051

      @user-mv5zi3nn7r 2 місяці тому +7

      @@piedpiper7051 Yes, just a sandwich ziplock as the vacuum packing bag is protecting it from the extreme cold. The ziplock sandwich bag is only controlling the liquid so it doesn’t get sucked into the heated sealing edge.

    • @user-mv5zi3nn7r
      @user-mv5zi3nn7r 2 місяці тому +9

      I vacuum pack homemade soups this way. Fill the ziplock bag to the brim without any air and then carefully place it in your vacuum bag to seal it. I’ve had fresh oysters 3 years old believe it or not that taste like I just shucked them. Oddly, when I sent this idea to Foodsaver and they said they recommend using a piece of rolled up paper towel to absorb the liquid during sealing. I’ve found that to be a terrible idea.

    I have been on carnivore for almost 7 weeks and I ate a piece of cake yesterday. I was starving for about 3 days and had eaten quite a bit of food before I did it. I feel guilty or not right about eating a ton because I am around 350 pounds but my stomach had been growling for 3 days and I just was hungry. I am congested today and that has been gone for most of my carnivore journey. I have to work through this but I needed to get this mistake off my chest so I can go on. I need to save my life and this is one of my last hopes to do it. Please keep up your journey to help people like me. We are out here and need people like you to keep us going. I started out at 400 lbs and I've lost over 120 lbs on carnivore. I've never been starving. I am 67 and have had problems losing weight all my life. Carnivore is the easiest way I've tried.

      It happens to all of us. Two steps forward, one step back. It's concerning that you're hungry on carnivore, though. You should be eating until you're full every meal and getting at least a 50/50 protein to fat ratio.

      We should meat up! I'm in Haiku and my friends think I'm nuts. I windsurf and take my dog to Ho'okipa or Kanaha almost daily. I started omnivore ketosis in late 2018 and went nearly plant free for 2.5yrs (I experiment with some ferments and sample an avocado, apple-banana or orange from the yard occasionally). Some visiting friends (on a cruise) wanted to go to lunch today so I took them to Ulupalakua Ranch and ate elk and lamb rare. Way too expensive, but they treated and got an earful of my thoughts about their diet sodas, condiments and buns. Shootz 🤙

    I started purchasing the entire steer from a local farmer that is supposed to be 100% grass fed, no hormones, no steroids and no antibiotics. He drops off the steer at the butcher of my choice and I pay the farmer directly for the entire steer then I pay the processor directly for dispatching and processing and then I typically have someone I can split the entire steer with. That 1/2 cow typically will last me for 9-10 months and after the math of the steer and processing fees it averages at about $6 per pound for the entire steer and it's already vacuum sealed and ready to freeze. A half cow will typically fill up an entire stand up freezer.

    Highly suggest anyone who has a backyard somewhere without rules against it, get chickens! They're funny, productive pets and surprisingly easy to care for! We have 11 (losses happen) and we're getting a dozen more chicks next week. Grow a garden of chicken-friendly produce just to give them treats and supplement feed costs, and all that nourishment will go straight to their yolks for you! I do what I call a 'split scramble,' where I separate my yolks and hard scramble the whites only, then to preserve the nutrients in the yolks, I turn off the heat and stir them in at the end. The residual heat of the pan cooks the yolks to a perfect translucent coating on the whites. It's decadent!

    One recommendation I’d like to advise: I did the 1/2 cow purchase but highly recommend getting the stand up freezer instead of the chest freezer. Items that get piled on the bottom will not get rotated in enough and a lot of your beef could freezer burn due to excessive storage times.

    • @hanko5750
      @hanko5750 2 місяці тому +11

      Buy a MARKER and date your packages, they learn to "rotate your stock". 😉 Chest freezers hold the cold better, most chest freezers can handle a 2 day power outage without the meat thawing. I've had both types, the chest freezer is the winner.

    • @bluesue6687
      @bluesue6687 2 місяці тому +16

      What helped me with my chest freezer is getting the reusable grocery store bags and filling with types of meat then labeling the handle. Steaks in one bag, chicken in another, roasts in its own and so on. It’s easier to get to each section from lifting out whole bags while they sit on each other.

      I use stack-able plastic containers that fit nicely in the freezer and keep different types in different containers. I also have closed plastic containers for my dogs meat, as he is also carnivore and some of it (like the tribe) can smell. But all the meat fit into my big freezer. And yes, living in South Africa where we constantly have load-shedding and theft of electrical cables, my fridge has been off for 48h many a time and all was still frozen, so I had no losses.

As far as beef goes I have small cattle farm and we usually have 2 slaughtered each year by Amish, the even vacuum pack for us. Once you eat fresh farm beef you will ever go back to store bought. I would suggest to other carnivores to try and find Amish slaughter or packing house , they will sell beef also. I recently bought 100lbs of chicken breast from them for $2 per pound . which is much cheaper than local grocery’s here in Kentucky . I cook most my beef in air fryer, burgers are so juicy. I line grayer and rack with foil. Again check out any packing houses in your area, they are much cheaper and better product.

    A word of caution when buying a half or whole cow. The processor that the rancher used skimmed a lot of our choice steaks. We watched YT videos that talked about the wet weight, dry weight, and how many steaks and roasts to get. Our neighbor also bought from the same processor and weighed the meat he received. He was cheated as well. This was a new venture for this rancher, and he was taken advantage of as well. Sadly, processors are compared to used car salesmen and this guy was both. If you choose to go this route, educate yourself or get good references.

Also I'm on a fixed budget so I buy commercial grade striplion and ribeye as it costs 1/3 of the price rn striplion $3.99 lb Canadian vs $14.99 for AAA. Commercial grade btw in Canada is mature cows and ungraded so they tend to be leaner and less tender but small sacrifices so I can do this WOE.

For the first few months I pretty much only ate ground beef, which I would cook on high heat. I'd have to cover it in sauces and spices to make it palatable, and it was terrible reheated. I switched to steaks and instant pot roasts because I realized the ground beef was giving me a histamine reaction. Anyway I tried your method the other day because I had some grounds in my freezer and WOW!! What a difference it made. Tender and delicious with only salt on it. Thank you so much for the tip!

    I often like to fry up a couple eggs in the same pan after searing my steak. I then toss the eggs on my rested steak. I fry the eggs so they have runny yolks so when I cut them they run all over my steak. I find this easier and less wasteful than separating the yolks and saving the whites. Since I already have a hot pan in front of me, it takes very little extra effort.

    I have never tried a raw yolk with my meat. However, if I’m having a boiled egg, I like the yolk to be soft if I’m having a fried egg I always have sunny side up so I like a runny yolk so I will have to try the raw yolk with meat. As for me prices, I don’t worry about it anymore several years ago I seen it getting more and more out of control particularly in North America. So I decided to do something about it. I now purchase a side of beef once every two years from a farmer who raises it grass fed and grass finished so it’s 100% organic, I still have half of it left in my deep freezer and I paid 4 dollars a pound for this and that’s Canadian dollars. There isn’t a supermarket anywhere in North America that I can get organic beef for prices anywhere near that. Now to do this it takes a large investment to first time you do it and it also takes time to prepare it all and store it. Which you wouldn’t have if you just bought it directly from the supermarkets but considering I’m getting it at about 75% cheaper I think it’s worth my time and initial investment. Now for equipment, I purchased a multitude of things to help me achieve this. Starting off with a chambered vacuum sealer this is more expensive than an external vacuum sealer. But there are more advantages to my chambered, vacuum sealer and depending on how much you’re using it, you can save significant money. What the external vacuum sealer I worked out how much a bag would cost for each item I wanted to freeze. It worked out about $.75 a bag however, my chambered vacuum seal bags were only costing me $.3 a bag. That’s a significant saving overtime. Now there are some items you can’t fit into the chambered, vacuum sealer like a whole salmon. However, I can buy the food saver external bags and use it for items like this as the chambered vacuum sealer is capable of ceiling outside of the chamber so a whole salmon is no problem I just have to change the style of bag I use. The chambered vacuum sealer also allows me to liquids, soups, marinates, and freeze them.. I can also take canning jars and put them inside and vacuum, seal them without having to put them on a stove top, and into a canner. Taken documents, put them into some bags and vacuum sealed them so if I ever have a flood or some damage in my home, the documents have a better chance of surviving.. I also bought myself a decent meat, slicer a complete set of butcher knives, some meat storing food, safe, tubs, a sausage, stuffer, and a meat grinder. This cost me lot of money the first year and I didn’t save on my first time doing my own meats because of all the equipment however, every other year after that I have saved significantly and I have tools to do a bunch of my own stuff. so once every two years I buy a side of beef and I see it all up correctly. It is good in my freezer for up to three years. Any steaks I make on the bone wrap in butcher paper then I put it inside the vacuum seal bags and seal it. This way the bone won’t punch the bag and let my meat get freezer burn. Meat not on the bone I just seal up in the bags. I also buy a whole pig. I make my own ham several styles of bacon, streaky rashers back rashers, and I take the picnic pork roast and turn it into a shoulder of bacon to make the traditional Irish bacon and cabbage. Think of a shoulder of bacon like a pulled pork only bacon flavor. Using my vacuum sealer I do dry cured bacon, which means because it’s not liquid injected there is no water in my bacon when you buy a kilo of bacon in the store 25% of it is water you’re paying for water in your bacon. Dry, curing bacon. Can take anywhere from five days to 14 days on the bacon making so it’s a slower process. Doing the liquid injection it can be done in about six hours. This is why most stores and supermarkets like it done this way plus they can charge you for the water weight which is almost quarter of the weight of bacon your purchasing. I also make cured meats and smoked meats Coppa, and prosciutto. I’m surprised how well they have turned out my jerky is not bad either my sausages can be hidden miss. I try many different recipes so I get to work out really well and others are a complete flop but to be honest, the art of sausage making is a real skill it’s not as easy as people may think. I purchased 20 chickens from an organic farmer, too, and save money there. I will take four of them and sealed them up for roast chickens and the rest. I butcher myself into wings, drumsticks, thighs, and breasts. I take the bones from all of these animals, the chicken, the pig, the cow, I will roast each of them, add some vegetables to it, and create homemade stocks and broth. I will take the fat from the cow and make tallow and from the pork I will create my own lard.. best thing in the world to use instead of all of these oils and also works real well in baking products. My great grandmother’s tip for baking for all those people who like to bake use duck eggs. When it comes to baking, they are far superior to chicken eggs. The bigger yolk means you get better rise in your product and it tastes richer too. so yes I process a lot of my own food now I am lucky if I spend $30 to $40 a week at the grocery store. As most of my products comes from the local farm. Give me majority of my fruits, vegetables and herbs come pretty locally, and I have learned true tanning dehydrating and freeze drying as well as freezer. Many of this produce can be stored up. I’m still learning, but I found the convenience of supermarkets may save you time, but will happily empty your bank accounts for that convenience. if I was to buy a 10 pound bag of spuds at the supermarket locally it will cost me about $11. I get a 50 bag from a firm no more than 12 miles away from me and it only cost me $25. Now in fairness, that’s a lot of potatoes for myself. But I will put about 35 pounds of it in my freezer. I may grab some grated potato and put them in the bags and freeze them for hashbrowns. I prepare some of the potatoes ready to go for roast potatoes and freeze them. I also do the same to chips and scallops. Some of the potatoes I’ll chop into nice little cubes. Add some vegetables like peppers and onions put them into nice portion, size bags and freeze them. Perfect to go with a breakfast. Take it out of the freezer put the bag into a boiling pot of water cook for about 15 minutes. Cut open the bag be careful it’s hot drop into a hot skillet with some lard or tallow. Perfect with your breakfast. There is so much I make now for myself. I make my own peanut butter better than anything in the store, my own Nutella I make my own catchup. I grind up my own flour, making my own bread I make pasta sauce and many types of pickles and fermented foods, I make my own butter, sour cream and even have started to try and make cheeses a couple of turned out good and some terrible. This is something you can do with your family, bringing everyone closer together and giving you much healthier options and after your initial investment, which is expensive, you will save significant amount of money. Sorry for waffling on, but this is something I’m passionate about nowadays and it has saved me thousands of dollars so whenever I get the chance to tell people about it, I go a little over the top.

    I bought a great air fryer at Ephrata Re-Usit shop for $12.99 and perhaps new! Love it Also bought a Bella Cake Maker for about $5.00 with 5 cavities. This week, I used it to make small portions of ground bison and often use it for pasture raised eggs. Makes perfect eggs! Love it
