I love chicken pot pie soup!! This recipe looks fantastic!! I love to buy a refrigerated pie crust to go with it. Just roll it flat onto a baking sheet, cut into small-ish pieces, season it with some thyme, and bake it while the soup is cooking. Serve it in the soup and it definitely gives it that pot pie taste!!
What a comforting soup! My Dad told me to put a piece of bread in your mouth when chopping onions. He said it would absorb the juice from the onion and then..you could eat the bread.😉 I really like your recipes and your smile.😊

I was a transplant and lived in PA Dutch Country for 37 years. I’ve moved back upstate after my kids were grown. When I make pot pie it’s not a baked pie but cooked in a pot. I roast my chicken for the seasonings and the stock base. And I roll out and cut my own dough for noodles. That being said, this is a super easy substitute if I’m not feeling energetic or just too hungry to wait for allllll that I normally do!! Also I love peas but no peas in this for me thank you. 😁 I love all your videos. ❤

Just got done making and it's amazing but It took me a long time to cook from beginning to end. I bought carrots that were already cut up but I cut them smaller. Any shortcut you can do or prepare ahead of time do it! It's worth it! Highly recommend ❣️👍 I added more potatoes and make sure they are cooked through before you go to the next step! Don't skip the thyme makes great flavor!
On a chilly autumn evening I simply CRAVE chicken pot pie! Steaming right out of the crust, it's so appetizing!! So this soup is really time saving.. chicken pot pie is pretty time consuming for me because I like to make my own crust. it's just so much better.. yummy! Prepping the vegetables earlier in the day saves a lot of time .
Made this and it was amazing!!! I didn’t have thyme so I added Italian seasoning instead and it was divine. The corn was such a nice touch for subtle crunch.

00:53 Your a Chef that truly feels my "pain"! I can't chop onions without crying and my eyes burn for hours. I had to get a food chopper to do it as fast as possible. Love the recipe 😋
If you can whistle, then whistle while you're chopping the onions. It will blow the onion off-gassing away from your face. SHOULD protect your eyes from the fumes. If you start to feel a sting, then step back and wave a dishtowel in circles to disturb and clear out the air in front of your face. That should disperse the gas. Just keep that air moving away from your face.
I would've chopped everything else first and saved the onion for last that way my eyes are saved from burning. I can't wait to try this recipe 😋. I live for this channel.
I made the soup last night and it was good. I added more peas and I used the Yukon gold potatoes. The texture was nice. I used fresh Thyme. Very aromatic. I wish the soup broth was a bit thicker however. I often enjoy soup but don’t feel full with just one bowl. I made enough for leftovers. I needed to add more chicken however. Great soup for a cold day!
Making two is always a good idea! *I make two and freeze one. Now I have one for later...especially if it's something like meatloaf or meatballs for spaghetti...make more and freeze the leftovers. There will never be a time when you aren't thrilled you already have one made _and all you have to do is thaw it!_ Works great with pies, cookies, etc....if you get a lot of company...this is invaluable!

I love this soup!! I substituted the potatoes with sweet potatoes and the milk with almond milk (because I did not have cow milk). I did not have all the veggies, so, I used cabbage/carrot cole slaw mix, squash, and pumpkin. Thanks!!!
That was so easy! I'm definitely going to make it. Perfect cold weather food. Just a small tip John, when I chop onions, I usually put a damp paper towel on my mouth holding it with my teeth and lips this way my eyes don't water bc the damp pt absorbs the onion fumes. Wa-laa, no tears! I know that wouldn't look too professional on camera but the heck...have fun with it!!😄Thanks for all your wonderful recipes!

I cut the potatoes a little bigger than you did but they came out fine and I used half and half instead of heavy cream; will use heavy cream the next time I make it. And I also bought your cook book and the recipes look amazing. Thanks for this chicken pot pie recipe.
My mom would make cream tuna on rice or SOS. Love that! So oddly, I learned to make roux before I learned to cook much else. Macaroni and cheese, cream soups, gravy, scalloped potatoes! On and on. Don’t live with anyone who cannot make roux.
This soup is exactly what I needed for the winter season. I will view your roasted chicken video but by far the warehouse clubs chicken can’t beat the price. My preference is a French type fresh chicken from Whole Foods and roast it. The last one barely made it enough for two people with no leftovers. Thank you for sharing!❤

Also I'm a big fan of using the celery leaves left on the stalk bought for soups and stews. I only use the stalks when they are gone. They are easier to chop and give the same as the stalks do. Taking an onion out of the refrigerator (nice and cold) right before dicing or holding a piece of bread in your mouth and letting it hang straight out (helps to block the onion fumes/ juices) will help to cut down on the tears. Love all of your recipes.I'm going to make this tomorrow. I also have the exact same Le Creuset dutch oven. Same color as well. I make all of my soups in it. :-) I'm buying your book for myself and one for my mom. Thank you.
Down south we throw in some cut up biscuit dough and you got chicken n dumplins💗 Only buy Vidalia or Texas Sweet onions, NO TEARS ever again! Learned this when I was a teenager.

I saw a cooking video that claimed having a wet paper towel on the cutting board next to the onion as you're cutting it will prevent tears. I've tried it and it seemed to work. Plus, I put my onions in the refrigerator too, which helps a little to prevent tears.

I love putting frozen peas/corn in AFTER the soup or stew is done because then they don't get mushy *unless you love mushy peas like I do* and it cools the soup/stew off so you can eat it faster!
This looks soooo good. My friend buys multiple rotisserie chickens at once, shreds them, freezes them, and always has it on hand when she needs it.

Here’s my little secret when cutting onions. Run Onions in cold water first before cutting and no more tears. It works ever time.

I love putting frozen peas/corn in AFTER the soup or stew is done because then they don't get mushy *unless you love mushy peas like I do* and it cools the soup/stew off so you can eat it faster!
