Screw any pot pie that doesn't have the bottom crust. The contrast of the slightly dumpling like consistency with the crisp crust is what it's all about. And flip it upside down. My god, man, doesn't anyone value nostalgia anymore.
I love chicken pot pie! I use the exact recipe except mushrooms. I make my pies in ramekins instead of one large pot and freeze half of them wrapped in I use cellophane and aluminum foil. I use rotisserie chicken for extra flavor and convenience since I don’t have to cook it. So yummy! 😁😋
Thanks for this reminder of a classic. Ordinarily pot pie would follow a roast chicken... but if a whole chicken, uncooked, simmer with herbs, onion, celery, etc. to flavor the meat and the broth to begin with. Peas, carrots, herbs... I live in France, and cognac is always a good idea, usually flamed. Pâte feuilletée is indeed a lighter choice and easier to buy than to make (layers of butter)... Bon appétit !
Cannot hack Yukon gold - I find them mushy compared to beautiful Manitoba Red's. Big difference in taste. I also make the stock with onion, celery, carrot, salt, peppercorns and a tomato scored on top will clear the broth. Skimming it as it comes to a boil also helps and simmer it a little longer. Then I have few meals of chicken soup before making the pie. And I add celery to the pot pie. So very similar. Someday maybe will try the cognac. But your pastry looks wonderfully delicious. Yum!
When I use to cook them to save time in the kitchen I would use shredded chicken, frozen mixed vegetables, cream of chicken and mushroom soup and store bought pie crust. I thought it worked really well.
I have been making this recipe for years, its a family favorite. I'm usually too lazy to turn the chicken stew into a pie, but its delicious and comforting either way.
Martha this was an excellent demonstration. Should I brown the bottom crust of a large pot pie prior to adding the filling? Next, add the filling, top with unbaked pastry and heat until brown, for about 25 to 35 minutes? I love the inside crust. You teach the most informative and precise utube cooking demo. Thank you...
Would've loved a good shot of them done. It was a bit quick. They look good! I'm going to try them ; ) Used your braising turkey recipe for Thanksgiving. It was delicious. Thanks!
I have been watching u for a long time may be 30 years u still are the best chef in the world and make all ur recipes very easy-to-use make thank you god bless 🙌 u
Wow amazing looks tooo yummy delicious pot pie well prepared well explained always favourite will try soon super amazing presentation stay blessed stay connected
OMG !!! Those are absolutely delicious ! Full of good yummy chunks, with that beautiful crust and with the least amount of salt, unlike the junk in the supermarkets . I can't think of anything else I'd need to go with them. Have them just as they are, no sides needed ! BTW the mushrooms add a real bonus .
Last minute all I could find was puff pastry shells..any suggestions on what I should do? I'm either going to make the shells solo then plop one on top or bottom..but..oh gosh idk ..I have yet to open the shells box to see what they look like. I don't know if I can roll them out perhaps and use them as a topper? Eeek
Mmmmmmm; 👀 looks sooo good and right for my tummy 😋. 😘 Love, peace & respect to Martha Stewart for sharing her spirit's richness & talented by her rich as in beautiful cooking & baking skills.
Maybe use sage as your herb. Could exchange sweet potato for the white potato and even cube butternut squash in place of the carrots. And just ignore any rude comments. Some folks are so unhappy, they have to try and make others unhappy, as well. 🙂
I’ve never heard of mushrooms and potatoes in chicken pot pie. My ingredients in pot pie are pretty much like chicken soup just a thicker creamy sauce.
We love this with a bit more veggies: added celery, and possibly more types of mushrooms maybe even a few squares of bell peppers :) Never tried cognac, just white wine, which is kind of great… but who knows, maybe other types of booze can add to the joyful taste also 😜😉!

Thank you Martha, I admire you too much! You are my teacher in so many ways! Thank you forever!
The crust it to beautiful and perfect to cut.
Martha. My husband likes beef pot pies. Do you have a recommendation? Thank you. He will love this recipe, especially with fresh thyme.
Martha girl! 🥰
God that looks Pretty.
i’ll have to make this but add celery
I thought something was missing... 💁🏽♀️
Quite surprised she didn’t use celery myself.
I also HAVE to have peas in there too
Same 💯
Just did that😂😂
Watching Martha Stewart reminds me of better times.
Yep good old days before 9/11, Iraq war, Afghan war, & COVID... 😑

These are the most beautiful pot pies I have ever seen. This is a very special way to please family and friends. Thanks, Martha.
I like crust on the top and bottom 👍🏽👍🏽 11-7-2023❤
I agree, I’d have to add a crust on the bottom too💕
I like to add leek. Adds a delicious flavour.

Facts.
I always feel ripped off when it’s missing the bottom crust.
Gotta do the bottom and top crust. Otherwise it’s not a real pie.
@@alohr3491 I’ll think about cutting her some slack. That’s how they make toilet pot pie in the big house. Choke it down with some pruno…
No bottom crust is criminal!
I use a pie crust to line our cast iron then pre-bake it for about 5 min. Add the filling and put a puff pastry on top. 🥧😌
That is the ultimate winter comfort food.
I make these a lot and they are the most delicious pot pies. The puff pastry is the crowning touch. Thank You Martha!
Dear Martha!
I am writing to you from Russia, from Siberia.

If you don’t have puff pastry, large size biscuits make a great crust
What about pizza dough?
Pie crusts in Canada. It's thicker than hers. Creamier.
@@ednaatluxton4918 I like it! What time does the next flight to Canada leave? I need to go to the ATM first
Yum!!! Love chicken pot pie! I add a bit of tarragon and marjoram too. I like the way you prepare it all before assembly.
I never thought to use puff pastry to get that light flakiness! I just roll out my regular pie crust. this saves so much time!

Me too, don't use mushrooms. Thank you for the tip about the use of rotisserie chicken.❤🍽
Thank you for the rotisserie chicken tip! I'm making this for Christmas dinner for 6 this Saturday!
What size ramekins would you suggest?
Canned chicken will also work in a pinch if you don’t want to cook a whole chicken or debone a rotisserie chicken- its just as delicious
She makes it look so easy. Martha rules!!!!!

You forgo the celery. Love it from scratch!! The cognac is a really nice touch. Great recipe!!❤❤❤❤❤

yuk!
We do not put mushrooms nor cognac in our pot pies!lastly, we also have a layer of puff pastry on the bottom, like a real pie!
Never mushrooms! Always celery
My first chicken pot pie was 10 years ago with your recipe ❤
@TerraKiev: And you’ve never made one since!?!? What do you know, buy the huge ones at Costco?
I could eat the filling by itself. Looks so delicious.
Damn Martha! Is it no surprise her crust came out so perfect 🤣.
When I use to cook them to save time in the kitchen I would use shredded chicken, frozen mixed vegetables, cream of chicken and mushroom soup and store bought pie crust. I thought it worked really well.
Well yes it works well but homemade taste so much better!
Definitely great shortcut. Some spices and fresh herbs added makes it even better
Might as well get the swansons frozen pot pie for $1.
Martha is as close to my Mother as anyone can get. My Mother and MS would have gotten along swimmingly. 🎈
I have been making this recipe for years, its a family favorite. I'm usually too lazy to turn the chicken stew into a pie, but its delicious and comforting either way.
Looks wonderful, thank you. I would only modify this to use the stock coming from the chicken. That would save a bit of money.
I'm making this for Thanksgiving!
Delicious, I loved to cook and eat chicken pot pie. Thank you for your recipe!!! ❤🍽
Nicely done, veggies are a bit big though. And I need a bottom crust.
Have to have bottom crust 😊
Less crust is ok w me but agree on the size of everything. Definitely need to chop those veggies & chicken smaller
Definitely needs a bottom crust.
thank you, martha ~ mine is cooking now. smells so good, very homey.

Not with potatoes…
Crepe filling sounds amazing.

I loooove homemade chicken pot pie, only once while though, this recipe looks outstanding 😊y mom put biscuits on top YUM
Red lobster biscuit mix on top to bake in is really good and reminds me of dressing aka stuffing which is even. Better..
i prefer a much soupier pie, with a crust on the bottom. the cognac was interesting tho ill have to try
I love chicken pit pie
I am going to make this

A tip for those watching their weight. When you're eating a double layer of pastry you don't need the extra starch of potatoes.

Do we unthaw before baking?
It looks good. I'd add a bit of heavy cream and tarragon.
Yummy Martha thank you
Good food recipe.
Thank's Martha 😊🎉, Columbia SC
I love her, but really only salt n pepper as Seasonings? That's crazy.
I love chicken pot pie, but no potatoes in mine. I use ina's, but Martha's just looks better to me.
I like peas in it too
Thank you
It's far easier to just pick up a couple of hot fresh rotisserie chickens at the grocery store or Costco. Boiled chicken doesn't sound very flavorful.
agreed. cheaper, easier, tastes great
That's what I do too! Saves so much time.
Doesn't taste the same. Tastes good, but not the same.
Did you ever read what’s in Costco chicken, not good
I prefer a little more sauce for eating with the pastry. Make mine with fresh tarragon and celery.
