Sopa Azteca is indeed part of the culinary repertoire every Mexican grandma will feed you every once in a while and it is common. It’s a good way to get rid of tortilla left overs. But it doesn’t have meat. It’s just the tortilla strips in a thickened tomato broth. Off course topped with cream, avocado, dry-toasted ancho Chile (chopped), etc etc etc

Tortilla soup has been a staple since I was a child in the '70's in Texas. I love tortilla soup in cold weather.
Like you, my grown sons consider my Tortilla Soup an absolute comfort food/must have! We are Texans, originally from San Antonio. I make this in a similar way but instead of beans and corn I add lots of chopped yellow squash or zucchini and carrots AND several jalapeños PLUS MUST HAVE CHOPPED CILANTRO IN THE POT! We also top with tortilla strips just like yours but also lots and lots of shredded Monterey Jack cheese, yummmmmm when the cheese melts into the soup and the crunch of the tortillas, delicious. ❤

Yes, soup is a meal! Maybe less so for a pureed veg soup, but definitely for a hearty, protein packed one! Soups, stews, and chowders are go-to meals for cooler weather in my house. I haven't had a chicken tortilla soup in a while, so might make this soon. I'll do it in the crockpot because that's even easier and let's those flavours meld.

When Hurricane Ike hit Houston our family went to San antonio. I had a really bad stomach virus at the time and I ate a bowl of chicken tortilla soup. I had that with a cold Margarita and it seemed to knock the virus right out of me. I've loved it ever since.

Lately for a very quick fix I've been making cheap ramen noodles, and may add frozen or fresh veggies but I'll add some instant mashed potatoes to thicken it up to use up the extra liquid. Right at the end
Yum! I'm allergic to chicken, but the broth is SO flavorful I hated to use just veg broth. I used chicken-less broth powder this recipe is fabulous even missing the bulk of chicken meat (wah!). The fried tortillas definitely add much more flavor than store bought corn chips, and I added cilantro to top at serving. I forgot to say I added some of the fried tortilla strips into the soup to bulk it up a bit. FABULOUS!
That chickenless broth powder is awesome! I use it often. I’m thinking of trying this with jackfruit for the chicken - I’m not allergic, just don’t eat meat.

For soup being a meal, I think it depends on the kind of soup. If it has a lot of protein (and veggies) in, then yes, it's a meal. If it's like Tomato Soup, then it's only a meal if you have something to go with it, like Grilled Cheese Sandwich.

Every Friday night, my neighbors and I take turns making dinner. Tonight was MY turn. Looking for something different, I made this soup. (I have wicked insomnia and watch UA-cam for hours every night). My neighbors LOVED it....wanted the recipe and asked me if it was hard to make. None of us likes spicy food so I only. used a tiny bit of jalapeño pepper. SO good and so glad I made plenty of extra fried tortilla strips to snack on!

I made this for dinner tonight! I did use chicken tenderloins instead of breasts. I also added a can of kidney beans with the accompanying juice. Very good!

Soup to me is definitly a meal and a warm embrace I love soup....My grandmother made the most AWESOME chicken soup and Beef bone soup with the marrow in the bones ....I never had this soup in Mexico...My husband (RIP) was from a small villiage in Piaxtla Puebla Mexico in the mountains I have had and made many of his mothers recipes Psole was always a fave My daughters still make certain things they learned from when we would go....(tamales, Mole , tortillas adobo red and green etc) my son goes to his sisters when they cook Mexican I dont really do certain foods anymore but I make certain things for my son but convert them to Keto/Lowcarb which I, my husband and son are on and my daughter also converted some recipes because they follow Keto also its hard but can be done
