I made this tonight for dinner and it was Outstanding! So Delicious! I added garbonzo beans and the barley you suggested and guessed at about 1/4 cup of barley and it was perfect! I sent a generous portion next door to my neighbor who recently lost her husband. She hasn't felt like cooking. She texted almost immediatley stating how good it was! It's Definitely a, "send some to the neighbors" worthy soup! Thanks so much!

They had various directions on the bag & the one for soup said that after you rinse/drain one cup of the grain, add it to the soup & let it simmer for 25 to 30 minutes. It was yummy! I made the soup just like John did, except I added a leftover Parmigiano-Reggiano rind.. Those rinds are ALWAYS so delicious in soups! I'm glad I made his veggie soup & I'm glad I tried pearl barley! 😋 NUM!!
My mom always put cabbage in her vegetable soup. I still do it to this day. It's added to the soup last and cooked for just a few more minutes to get a little tender. Yum!
My oldest grandson is A HUGE fan of tomato soup with French cut green beans and corn. I've introduced him to a full veg soup with a tomato soup base. Now he's addicted! I make it from scratch. I miss him so much. He's just about to turn 15 and I'll be visiting him so I'll be making it for his birthday. Thanks for the good memory, John. P. I know this has nothing to do with vegetable soup but my grandma lives on the farm. They use animal fat as oil. Once they mixed rosemary in the animal fat and then they fied chicken breasts in it. It was so delicious
for my friends closer to the poverty line, please don’t be scared to use canned or frozen veggies and soup. It’s still absolutely delicious, so warm and comforting and you can eat off a pot of the soup for a little while 💕💕💕
Not so sure can are cheaper LOL. I bought $15 worth of ingredients in cans - just because of convenience. Dump it in a crockpot and a couple hours later it tastes great!

There is nothing wrong with canned or frozen fruits or veggies they both are just as good and have just as good nutritional values as fresh produce the only reason why people might think it is bad is because they don't know how to observe the nutritional label or they listen to the stereotype opinions. I've worked in many industries, and a lot of them in food factories, and the only loss in good canned food is usually vitamin B or C (meaning without the preservatives, syrups, or any other additives) but it is 10% loss of nutritional value to heat seal the cans which is not very much because when you cook, microwave or add to your Fresh produce it loses nutritional value too.

It looks real good. This is one thing that my daughter said that she remembered growing up, we had a big garden and I would make a big pot of vegetable soup with the different vegetables. Two of the things that we put in it was butter beans and okra. My kids loved it.
Ooo, this looks great. I'm looking for new soup recipes for the coming fall and this is absolutely joining the menu! Update, 2/10/23: So after making this a few times for my elderly father, I did a few tweaks. He has issues swallowing so all the veggies are cut up into pretty small chunks. I reduce the quantity of veggies so we have more broth. Leave out the potatoes and corn, and use French cut frozen green beans. Sometimes I add a cup of tiny star or alphabet noodles. As I make my own veggie stock, I use more veggies and get an extra rich version to make up for the reduced veggies in the soup. This is such a good recipe. It's so easy to customize. And it's amazing served with fresh cornbread or cheesy croutons on the side.
I make soups during the colder months; I find prepping mirepoix (onion, celery, carrot, garlic) and the holy trinity (onion, celery, peppers, garlic) beforehand is super helpful. They both freeze well until you need them, a great base for any soup or chili. I know garlic is not an ingredient in those two, but for any soup or chili I'm gonna make it will be in there so get over it.

One thing caribbean people do is to drop a scotch bonnet in - don't split it or anything, just put it on the top and it impacts a lovely flavour without the heat. I use leeks, parsnips and frozen spinach with my onions, bell pepper, celery, potato and carrots and always a dash of Worcestershire sauce, ketchup instead of canned tomatoes. I often add red pepper flakes, turmeric and cumin too. I like to blend my soup with an immersion blender so it goes nice and thick - not keen on chunks of veggies in thin soup.
I watched this recipe last night, and while I was fallins asleep, it got carved in my head. I cooked it for lunch today. I used fresh tomatos and added eggplant too. I had frozen chicken broth home. It turned out delicious, just fantastic. So tasty and much easier than a canned soup. Loving it. Thanks for sharing great recipes.

My mom always added cilantro for soups and it adds so much flavor to it! It's a Mexican thing I think but I love it! Soups without it taste like something is missing lol

Yay.. I made the soup !!! But (even though I had cilantro, I completely spaced out adding it. DOH!) There were SO MANY veggies in that soup!! .. One thing I did add which was stellar, was a rind from a Parmigiano-Reggiano that I had. That makes just about any soup soOOOooo so delicious! I'll be using my cilantro later this week. 🥰xoxo
BARLEY!!!! I LOVE BARLEY VEGETABLE SOUP!!! Never thought of that. What We've been doing recently is doing a soup VERY similar to what You're doing but with something added - cook 2 pork chops in a slow cooker on high. Season with only salt/pepper and a little steak seasoning. Set on high - 3hrs done. Remove all the bone and roughly chop up and add to soup. Let Me say this - O M G!!!! The BEST thing about this soup is SECONDS!!!!💝💝💝💝❕❕
So I've been loving my allium mix of leeks, onions, shallots, scallions, chives, and garlic, sauteed with thyme and a new favorite Savory. I've been known to make up batches of this and freeze cupcake size amounts for later use. Vegetable wise I love squash either summer or winter varieties (I dehydrated patty pan squash so available year round) and lastly some stewed tomatoes and some canned beans.

This was a very useful process for making my first proper soup. I have honestly never used garlic cloves in cooking before, and accidentally purchased 2 heads of garlic thinking that each one was a clove. Luckily I didn't put the whole lot in.
I made vegetable beef soup last night. I added two bay leaves, 1/2 tsp. dried oregano, and 1/2 tsp. dried thyme. SO GOOD!! It gave tomato broth incredible flavor 🤌🏻

I add a few green apples to my veggie soup they add such a delicious complex flavor to the soup . You don’t taste apple but it adds it’s fresh taste to the soup. I make a tomato based stock for this soup. Yummy 😊
I've made this soup following his recipe! I did tweak a bit since I didn't have some stuff but it still worked out. Flawless directions and advisory, and improv. Potatoes, carrots, I made two pots worth, one diced tomatoes and one hand-crushed whole peeled tomatoes (2nd one is better if you don't like the dice tomato texture). Peas, fresh green beans, corn, onions and garlic. Lots of fresh parsley was great. I used ground sage, and dried basil instead of fresh thyme, plenty of salt, black pepper, sugar to taste and balance out flavors, i added chicken buillion powder for that UNF/richness. I used chicken broth instead of vegetable since I like chicken broth. and it was missing something so i added some chili flakes to spice it up and it was delicious. My family loved it, adding some cheese really rounds out the flavors. Thank you so much for sharing, been wanting to make this forever. I made so much! I have to share some with the neighbors.
Went to make this last night and discovered the potatoes in my pantry were in terrible condition so I subbed a random can of white beans 😂. Threw all the random veggies in my fridge that needed to be used and it all still turned out delicious
I love homemade vegetable soup with or without me. I have found that the soup gets better with age, so, I try to put it all together, at least two days before I intend to serve it. This soup is just wonderful and amazingly easy to prepare! I am wanting to lose a few pounds (like 20lbs) so I thought I would give your recipe a try! It filled the whole kitchen with this amazing smell and now my hubby says "I don't have to cook supper tonight!" LOL

Add chunks of cabbage, maybe turnip root or rutabaga. Brown small chunks of chuck or “stew meat” with the aromatics. Add BARLEY! Yum! Add couple of dashes of Lea & Perrins. You can replace can tomatoes with healthy V-8 juice - big tall can. Back in the day, there was alphabet macaroni to add to veg soup.😊
Omg...I just made this soup last night... fantastic!! I'm not a cook by far but this is an easy recipe to follow! I have made many of your recipes and they all have been great!! Makes me feel like I can cook! I even had to buy more spices that I never used before and I really enjoyed it! Barley Porridge is a warm breakfast dish that we usually make for anyone who’s feeling down/depressed. The barely is finely ground and is coked with milk and honey/date molasses is added to sweeten it. Great healthy substitute for those pre-made kids cereals (e.g. Cerelac) since it has a similar consistency but much awesome for guy health!
Another time saver in lieu of buying mirepoix - especially if you like to make soups and stews - is to buy one of those mueller vegetable choppers. Just watch your fingers changing out the chopping grids! Makes super quick work.
No matter WHAT i cook and eat, i ALWAYS sit back and totally enjoy a good vege soup, it's better than everything else. Some crunchy bread on the side and THATS food for the gods !
I love a good vegetable soup. However, I don’t usually use celery, but I do add some cabbage. Not a whole lot, but cabbage gives soup lots of flavor. Have not tried ton, but I will, and a little dill. In fact, I used to have a wonderful recipe for. I’ll have to look that up. By the way, I’m a big fan of your tomato soup, and have made it several times. This last time, I actually used real garlic, and I do think it made a difference. I also added half-and-half, and I like the texture and flavor. A couple of our local restaurant serve their tomato soup with grilled pimento cheese sandwiches. I sometimes do the same. If a southern touch. I love your recipes, because they are fairly simple and straightforward. You always ask for ingredients I usually have in my kitchen, and that is a plus.

Parsley is a unsung hero of herbs, imho they've been pushed aside as a throw away garnish, when in reality they pack such a healthy addition to most dishes. I chop the stems, and add them in the beginning. Then in the last 15 minutes I'll add the leaves. This little wonder plant is easy to grow, or shop. If your looking for an economical green, Parsley. Can you tell I've been studying herbs? haha.

I love vegetable soup and usually use beef broth for the liquid. I also like to stir in a nice dollop of pure horseradish. I don't care for green beans in the soup but if I is have some frozen ones I will put them in. Also, adding to the broth, I like a can of V8. Thanks for sharing your recipe. Have a Blessed day.

Thanks for an amazing vegan soup.... I love chickpeas in the soup as well. A bit of paprika, chopped spring onions or chives and some coconut milk are great additions.

This is one of the food that just make me feel good. I highly recommend trying this with lentils or vermicelli which we use in our soups a lot. We also have "bulgur", the big ones fit perfect with this too. Thanks for sharing. :)
Hey hey i just tried making this recipe at home from scratch just like you did, wow what a soup! I didnt have a dutch oven but a big saucepan thing so i used that and at first it looked like too much ingredients once they were all cooking and getting the broth, but wow the potato were tender and all that. Great recipe!
For me I add hamburger meat to beef it up so it last a little longer in your tummy and you won't have to go back too many times to get full. Love your channel. :)

Awesome recipe. I use pretty much the same veggies as you do, but I will also add a small sweet potato or a turnip, depending on which one I have. Also a bit of green cabbage.
The only veggie I always use frozen must be the beans - I just hate trimming them! :-) And I'd use a bit of fresh rosemary, too - goes sooo well with thyme! Real yummy recipe!
in morocco we use carrots potatoes and zucchini for vegetable soups. along with moroccan spices like turmeric and paprika and lot of herbs parley coriander and celery. Perfect 😍
Veggie soup is always a winner👍 I love roasted corn and yellow squash in mine. For busy moms use bags of frozen veggie mixes and dinner is ready with no mess. Also so good for your body and weight maintenance.

I put in some French bread in the oven and it was so…good doesn’t even cover how great this meal was. It was too much for one person to finish, though, so I separated into mason jars and gave out to friends. Can’t wait to hear their response.

Broccoli lovers could add the chopped stems here. When I was young & poor I used to do a similar mix and add red lentils for protein & thickening. Mash it up & add cheap dehydrated mashed potato powder to feed a 6-12 month old as well without too much mess. Good way to meal prep as well.
Tomatoes transform it from soup to stew. In my culture, it is a crime. We just use mortar and smash garlic and coriander, then add olive oil to them and add them at the end. We top it with a hint of shredded lemon zest.

Wonderful soup and lots of fiber! I added some stew meat and a mixture of whole milk and sour cream. I sprinkled a bit of cheddar cheese on top. You are right it is just perfect and doesn't make you feel too full.
I make beef barley soup with allspice and pepper corns. The all spice really complements the beef. Cabbage is also adds lots of flavor to soups. I also love cayenne pepper for an extra kick!
V8 spicy cocktail juice is great to add for more flavor. Can also add some dehydrated veggies such as kale or spinach that have been powered for more flavor and nutrients.

Use cabbage and being from deep south we also use okra.
Gotta be careful with cabbage. If your body isn't used to it, you'll have to clear your schedule for the next day

I am probably a minority here, but I love brussels sprouts in vegetable soup. To me they take on a nutty flavor in the soup.

A large squeeze of fresh meyer lemon juice in each bowl before serving really brightens in up plus you won't need as much salt!

I had sweet potatoes instead of potatoes and I put chicken broth because I didn’t have vegetable broth turned out amazing. This is my family‘s favourite meal. I love how you cook so simple and so good thank you. 💜
My mom always added cilantro for soups and it adds so much flavor to it! It's a Mexican thing I think but I love it! Soups without it taste like something is missing lol

Yay.. I made the soup !!! But (even though I had cilantro, I completely spaced out adding it. DOH!) There were SO MANY veggies in that soup!! .. One thing I did add which was stellar, was a rind from a Parmigiano-Reggiano that I had. That makes just about any soup soOOOooo so delicious! I'll be using my cilantro later this week. 🥰xoxo
BARLEY!!!! I LOVE BARLEY VEGETABLE SOUP!!! Never thought of that. What We've been doing recently is doing a soup VERY similar to what You're doing but with something added - cook 2 pork chops in a slow cooker on high. Season with only salt/pepper and a little steak seasoning. Set on high - 3hrs done. Remove all the bone and roughly chop up and add to soup. Let Me say this - O M G!!!! The BEST thing about this soup is SECONDS!!!!💝💝💝💝❕❕
So I've been loving my allium mix of leeks, onions, shallots, scallions, chives, and garlic, sauteed with thyme and a new favorite Savory. I've been known to make up batches of this and freeze cupcake size amounts for later use. Vegetable wise I love squash either summer or winter varieties (I dehydrated patty pan squash so available year round) and lastly some stewed tomatoes and some canned beans.
First chef ever who tasted his own cooked food and gave honest reviews that what needs to be cooked more and what needed. I wanted to make soup being in an other country all own my own dun know much cooking but thanks to you
This was a very useful process for making my first proper soup. I have honestly never used garlic cloves in cooking before, and accidentally purchased 2 heads of garlic thinking that each one was a clove. Luckily I didn't put the whole lot in.

I made vegetable beef soup last night. I added two bay leaves, 1/2 tsp. dried oregano, and 1/2 tsp. dried thyme. SO GOOD!! It gave tomato broth incredible flavor 🤌🏻
Love veggie soup. I like to put zucchini in my veggie soup and snow peas. Sometimes I'll put fresh cheese tortellini for a heartier soup and serve with thinly sliced scallions. Thanks for sharing your recipe John. 🙂❤️

I add a few green apples to my veggie soup they add such a delicious complex flavor to the soup . You don’t taste apple but it adds it’s fresh taste to the soup. I make a tomato based stock for this soup. Yummy 😊

I've made this soup following his recipe! I did tweak a bit since I didn't have some stuff but it still worked out. Flawless directions and advisory, and improv. Potatoes, carrots, I made two pots worth, one diced tomatoes and one hand-crushed whole peeled tomatoes (2nd one is better if you don't like the dice tomato texture). Peas, fresh green beans, corn, onions and garlic. Lots of fresh parsley was great. I used ground sage, and dried basil instead of fresh thyme, plenty of salt, black pepper, sugar to taste and balance out flavors, i added chicken buillion powder for that UNF/richness. I used chicken broth instead of vegetable since I like chicken broth. and it was missing something so i added some chili flakes to spice it up and it was delicious. My family loved it, adding some cheese really rounds out the flavors. Thank you so much for sharing, been wanting to make this forever. I made so much! I have to share some with the neighbors.

Went to make this last night and discovered the potatoes in my pantry were in terrible condition so I subbed a random can of white beans 😂. Threw all the random veggies in my fridge that needed to be used and it all still turned out delicious
I love homemade vegetable soup with or without me. I have found that the soup gets better with age, so, I try to put it all together, at least two days before I intend to serve it. This is the soup I take to church potluck. Everyone seems to like it.

Pearl barley is a “Must Add In” for most of my soups - the best! I use it as a replacement for rice in my soups.

I like tomato paste in the soup rather than the canned tomatoes. It gives it a richer taste.

Add chunks of cabbage, maybe turnip root or rutabaga. Brown small chunks of chuck or “stew meat” with the aromatics. Add BARLEY! Yum! Add couple of dashes of Lea & Perrins. You can replace can tomatoes with healthy V-8 juice - big tall can. Back in the day, there was alphabet macaroni to add to veg soup.😊
Omg...I just made this soup last night... fantastic!! I'm not a cook by far but this is an easy recipe to follow! I have made many of your recipes and they all have been great!! Makes me feel like I can cook! I even had to buy more spices that I never used before and I really enjoyed it! Barley Porridge is a warm breakfast dish that we usually make for anyone who’s feeling down/depressed. The barely is finely ground and is coked with milk and honey/date molasses is added to sweeten it. Great healthy substitute for those pre-made kids cereals (e.g. Cerelac) since it has a similar consistency but much awesome for guy health!
Another time saver in lieu of buying mirepoix - especially if you like to make soups and stews - is to buy one of those mueller vegetable choppers. Just watch your fingers changing out the chopping grids! Makes super quick work.
No matter WHAT i cook and eat, i ALWAYS sit back and totally enjoy a good vege soup, it's better than everything else.

I love a good vegetable soup. However, I don’t usually use celery, but I do add some cabbage. Not a whole lot, but cabbage gives soup lots of flavor. Have not tried ton, but I will, and a little dill. In fact, I used to have a wonderful recipe for. I’ll have to look that up.
By the way, I’m a big fan of your tomato soup, and have made it several times. This last time, I actually used real garlic, and I do think it made a difference. I also added half-and-half, and I like the texture and flavor. A couple of our local restaurant serve their tomato soup with grilled pimento cheese sandwiches. I sometimes do the same. If a southern touch.

Question, do you have a recipe for a fresh cucumber salad? My grandma used to make one where I believe she soaked the cucumbers in salt and used sour cream and other ingredients, it was such a fabulous summer dish.
Parsley is a unsung hero of herbs, imho they've been pushed aside as a throw away garnish, when in reality they pack such a healthy addition to most dishes. I chop the stems, and add them in the beginning. Then in the last 15 minutes I'll add the leaves. This little wonder plant is easy to grow, or shop. If your looking for an economical green, Parsley. Can you tell I've been studying herbs? haha.

I love vegetable soup and usually use beef broth for the liquid. I also like to stir in a nice dollop of pure horseradish. I don't care for green beans in the soup but if I is have some frozen ones I will put them in. Also, adding to the broth, I like a can of V8. Thanks for sharing your recipe. Have a Blessed day.

Thanks for an amazing vegan soup.... I love chickpeas in the soup as well. A bit of paprika, chopped spring onions or chives and some coconut milk are great additions.

This is one of the food that just make me feel good. I highly recommend trying this with lentils or vermicelli which we use in our soups a lot. We also have "bulgur", the big ones fit perfect with this too. Thanks for sharing. :)
Zucchini gives great flavor and cabbage. For kids i chop carrots and zucchini very small and add a tbsp on finely chopped parsley at the end .
Hey hey i just tried making this recipe at home from scratch just like you did, wow what a soup! I didnt have a dutch oven but a big saucepan thing so i used that and at first it looked like too much ingredients once they were all cooking and getting the broth, but wow the potato were tender and all that. Great recipe!
For me I add hamburger meat to beef it up so it last a little longer in your tummy and you won't have to go back too many times to get full. Love your channel. :)

Awesome recipe. I use pretty much the same veggies as you do, but I will also add a small sweet potato or a turnip, depending on which one I have. Also a bit of green cabbage.

The only veggie I always use frozen must be the beans - I just hate trimming them! :-) And I'd use a bit of fresh rosemary, too - goes sooo well with thyme! Real yummy recipe!
in morocco we use carrots potatoes and zucchini for vegetable soups. along with moroccan spices like turmeric and paprika and lot of herbs parley coriander and celery. Perfect 😍

Veggie soup is always a winner👍 I love roasted corn and yellow squash in mine. For busy moms use bags of frozen veggie mixes and dinner is ready with no mess. Also so good for your body and weight maintenance.

So I made this vegetable soup and oh my god! It was delicious. Thank you so much. Seriously, this was so yummy, and tasty, and flavorful. I put in some French bread in the oven and it was so…good doesn’t even cover how great this meal was. It was too much for one person to finish, though, so I separated into mason jars and gave out to friends. Can’t wait to hear their response.

Broccoli lovers could add the chopped stems here. When I was young & poor I used to do a similar mix and add red lentils for protein & thickening. Mash it up & add cheap dehydrated mashed potato powder to feed a 6-12 month old as well without too much mess. Good way to meal prep as well.
Cabbage is fantastic in a soup like this.

A little bit of cabbage has a lot of flavor. I always try to put some into my veggie soup.
Tomatoes transform it from soup to stew. In my culture, it is a crime. We just use mortar and smash garlic and coriander, then add olive oil to them and add them at the end. We top it with a hint of shredded lemon zest.

I made this exactly as described and it was the best vegetable soup I’ve ever tasted.
Wonderful soup and lots of fiber! I added some stew meat and a mixture of whole milk and sour cream. I sprinkled a bit of cheddar cheese on top. You are right it is just perfect and doesn't make you feel too full.
I make beef barley soup with allspice and pepper corns. The all spice really complements the beef. Cabbage is also adds lots of flavor to soups. I also love cayenne pepper for an extra kick!

V8 spicy cocktail juice is great to add for more flavor. Can also add some dehydrated veggies such as kale or spinach that have been powered for more flavor and nutrients.
