How far ahead can these be made? I heard you recommend topping with fruit before serving. Just trying to figure out what I can make in advance for my daughter’s first baby shower. Trying to take some of the stress out with my hectic schedule of preparing the cake, appetizers and help with the decorations. My whole family is about 2 hours away in any direction and my parents live 3 states away. 6 days to prepare.

Can I just use egg white for the cookie base instead of the whole egg? I’m asking because there are some people I know who have sensitivity to the yolk, but I know would love the cheesecake filling.
Honestly I do not know how it would turn out. There's a possibility it could work but I really don't know. If you do try it I would love to know how it goes. :)

I would probably plan on assembling the day of the event. The cups/filling could be made 2-3 days in advance. :)
