Omg... these cookies are so dang good 😂 I ran out of cream cheese filling, so I had one dozen with cream cheese, and one dozen without cream cheese... they are fantastic either way 😮😊 seriously the best pumpkin cookie I have ever had.😊

I use a cookie sheet pan that doesn’t have sides so that I can slide the cookies and papers off onto the counter to cool. Paper the pans again add more dough and bake them, repeat. Works great when I have lots to bake. They then peel off the paper undamaged and cooled. I can even reuse the paper again to bake the next batch if it is not too hot. I think I might make a carrot cake cookie the same way but raisin instead of chocolate chips. Drizzle some glaze on top to make pretty ❤

I really think the removing the water from the pumpkin made a huge difference. I had home pureed pumpkin so I drained it first (using a jelly bag) then patted it with paper towels. I got a huge amount of compliments on your recipe! thanks so much.

Hello! Thanks for the recipe, it's yummy and gourmand! I tried and follow all the steps but it wasn't cooked enough inside I don't know if it was because of the frozen cheesecake. So I put 5mn more but still. I just tried 6. Then the rest (2nd round) I putted at 375°C and 15mn and it's cooked and still soft inside. Thanks for all the tips! Have a good day!

I’m just baking them now. I have something you might want to correct. You have the “blotting” the pumpkin, with its directions on paper towels AFTER you say add the pumpkin purée in the previous paragraph. Maybe switch them. I almost added it before it was blotted. Just a suggestion. I am waiting them to come out of the oven and they look great. Thank you. They’re so good! I made too big of cookies, they are about 4-5”.

I would say they are manageable by around 20 minutes, normally by the time my dough is done. :)
