    Haven’t made a lemon meringue pie in 40 years because I got lucky the first time and everyone told me how hard it is to do and scared me. I figured I’d never get lucky again! So 40 years of lemon bars later, I watched your video. I love your videos and have had a lot of success with all of your cookie recipes. I especially love your poor stand mixer… anyway. THIS PIE WAS FANTASTIC. Excellent recipe. Thank you for cracking the code.

    Next time I make a pie I'm definitely using your meringue recipe. I hate a weepy pie also, but my sister and I have always used our mom's recipe. Love all your recipes.

    Every time I have made your meringue recipe it has turned out beautifully and no it never beads or sweats. And another thing it is so glossy nothing else comes close to this. Even up to 2 days it doesn’t flop. I found it much better thank you so much. Your meringue recipe is by far the best I have ever made thanks again ❤

    I just made this to your exact measurements and it has turned out absolutely beautiful, I wish I could show you how gorgeous it looks, the peaks are SOOO high, and lightly browned and the filling is tart and delicious, the pastry perfecto !!! Thanks so much, hopefully it wont weep (thats if there is any left later on)

    Sam,, I love that you take the time to "test and perfect" your recipes to offer the absolute best recipe there is... BUT... I, myself, would really like to see your "testing and perfecting " method! How do you know how much of what to "fix" a recipe? I'd really like to see the process!

    Wow! Making this for my family now. Really excited about making "Italian Merengue". Have always made "French Merengue " with varying results. This is a wonderful alternative.

    Great tutorial. I was glad to see you scrape out the filling and the meringue from the bowl. I heard a chef (I can't remember his name.) to treat that bowl like it was your Christmas bonus. It made me laugh, but I always scrape the bowl clean since then.

    I found you when i used your cheesecake recipe and was amazed by it. Just put my pie into the oven to darken the peaks. Im really excited to try this once it's finished. I'm sure it'll come out just as good as the cheesecake did!!👍👍👍👍

    I have been doing my pie filling in the microwave. 2 minutes at a time, remove and stir after every 2 minutes 6 minutes and it’s done. No standing and stirring, stirring. Give it a good stirring after the 6 minutes and pour in pie shell.

    Gorgeus cake! That lemon filling looks so sliky ... ! The meringue is Swiss meringue. Italian meringue is made with syrup, but what matters is that pie turns out delicious.

    I've tried my Granny's recipe for YEARS! It was my absolute favorite, and I never got to perfect it before she was gone. It is literally THE ONLY thing I can't get right. Her recipe uses flour though, my filling is always runny. I am going to try this one, hopefully it tastes similar, I've never tasted one like hers 😅

    Does the lemon filling stay firm and not weepy when stored in the fridge? I have a recipe that I make at Thanksgiving time and my filling always gets watery after a few days. The only thickener in my recipe is cornstarch. Is it the egg yolks that keeps it from getting watery?

      I have successfully stored this pie in the fridge for several days without weeping. The trick here is we are using a swiss meringue topping, where most recipes use a french meringue topping.     I adore lemon meringue pie! This looks delicious. Sadly I'll probably skip this one because I'm the only one in my house that eats it and I would definitely eat the entire pie alone. Gluttony isn't an attractive trait 😂

    I have previously tried 3 pies (different recipe) and in each case the filling has not set up properly and remained runny. I am anxious to try your recipe soon! Do you recommend adjusting anything given that I live at an elevation of 7,200 feet? Thank you!

    Looks great and I love the taste of lemon. Why do you add the vanilla extract after whipping the egg whites, why not add before whipping? This will be my first pie of any kind, wish me luck! I love your channel.

      The egg whites won't whip quite as nicely/easily if you add the vanilla before whipping. :)

    I just wonder how the lemon pie that you hated as a kid was runny , have like a puddle between the crust and the meringue
    When we make the lemon filling with all that egg yolks and corn starch how it would end up runny ? Also the meringue once we beat the whites it's stif peaks so how would it be soggy ?

    I think lemon meringue pie is my favorite pie. I love how refreshing it is. It just seems lighter than many others. Although French Silk is also up there. But my husband is not so fond of lemon. I look forward to trying this.

    I don’t eat eggs I just bake with them . But I don’t eat meringue. Can I make thus pie and pre bake the crust, make the filling and bake at 375 for 10-12 min?? Just not use meringue

      It needs to be chilled in the refrigerator. You don't need to freeze it. :)

    This is not an italian meringue. It is a Swiss meringue.
    Swiss: the whites and sugar are gently heated over simmering water while cooking.
    Italian: a hot sugar syrup is drizzled into the egg whites as they whip.

    i usually make lemon chiffon pie, it's a gelatin based pie with similar ingredients but no meringue layer problems!
    i want to be able to make one of these without weepy meringue. maybe this breaks the cycle. all my past tries turned into lemon flavored puddles :(
