That’s cause he always uses high quality cheeses and those always have high melting points. I’m not a chef but I think the cheese would melt the rest of the way if you let it sit for a sec from the heat from the burger.

I didn’t blow torch my cheddar cheese, instead I simply covered the pan for a few moments for the melt, then topped it with some sliced sautéed mushrooms / softened onions/ and the egg. It was served up on a scooped & toasted soft plain bagel dressed with Kewpie. Yummmmmm.. mine was a little more chewy from the bagel

Cool on a wire rack. Just before serving, sprinkle with confectioners' sugar and, if desired, fresh raspberries. **enjoy 😂**

I made an onion smash burger the other day on my griddle. 80-20 freshly ground beef, thinly sliced onion, salt and pepper and American cheese on a potato roll. Guaranteed it was better than this. And no mess. Full stick of butter. If anything....mine was borderline diet food.

The old Greek guy a little further away takes it to a whole new level, because you get chips whether you order them or not, he will argue with you if you don't get chips with your burger. Learnt that lesson 30 years ago as a teenager and he's still rocking it as one of the best take aways ever, a local legend.
