    LAY HO MA! You're in for a real treat today with this flavour packed and hearty dish. Join me in this episode and learn how to make a tasty red lentil curry recipe right in the comfort of your home! Let's begin
    Ingredients:
    1 cup basmati rice
    1+1 cups water
    1 onion
    2 long green chili peppers
    2 pieces garlic
    2 tomatoes
    1 cup red lentils
    1 tsp cumin seeds
    1 tsp coriander seeds
    4 cardamom pods
    2 tbsp olive oil
    1/2 tsp turmeric
    2 tsp garam masala
    1/2 salt
    1 tsp sweet paprika
    400ml coconut milk
    few sprigs cilantro
    Directions:
    1. Rinse and drain the basmati rice 2-3 times. Then, add to a small saucepan along with 1 cup of water. Heat up on medium high until the water begins to bubble. Then, give it a good stir and turn the heat to medium low. Cover and cook for 15min
    2. Finely chop the onion, long green chili peppers, and garlic. Dice the tomatoes
    3. Rinse and drain the red lentils and set aside
    4. Heat up a sauté pan to medium heat. Toast the cumin seeds, coriander seeds, and cardamom pods for about 3min. Then, coarsely crush using a pestle and mortar
    5. Heat the sauté pan back to medium heat. Add the olive oil followed by the onions. Sauté for 2-3min. Add the garlic and chili peppers. Sauté for 2min
    6. Add the toasted spices, turmeric, garam masala, salt, and sweet paprika. Sauté for about 1min. Add the tomatoes and sauté for 3-4min
    7. Add the red lentils, coconut milk, and 1 cup of water. Give the pan a good stir and bring to a boil. When it comes to a boil, turn the heat to medium and stir. Cover and cook for about 8-10min (check on the curry once in a while and give it a stir)
    8. Turn the heat off on the rice and let it steam further for another 10min
    9. Plate the rice and curry. Garnish with some freshly chopped cilantro and serve!

      Another approach would be:
      - add drumsticks/drumstick leaves/yin choi/snake gourd along with split pigeon peas to a boil till the lentils are done
      - add kashmiri chilly powder and turmeric and salt as per taste
      - add finely blended coconut paste(grated frozen ones seem to be best in BC at least) instead of coconut milk
      - add tempering of mustard, whole kashmiri red chillies (after toastng over the cooktop till it gets a slight char) and shallots. I prefer coconut oil but canola or vegetable oil is fine too but olive oil in this would be too dominant flavor
      This recipe takes about similar time but does not call for any other condiments like cardamom or cloves or cumin seeds, or garnishing with cilantro coz the tempering is the garnish. Tomatoes optional. More of a savoury (though heat level in this is mild) than a sweet dish.

      Looks delicious! I like that you don’t skimp on the rice or curry. Is the coconut overwhelming or just a hint. I’m not a huge fan of coconut, but I’d like to try this.

    I have made this a few times now. It's always so delicious. For those of you who might not try this b/c you don't have all the separate ingredients, here are my substitutions. They haven't impacted the flavor profiles for me. I use a can of Rotel or store brand tomatoes and chilis instead of the individual items listed in the recipe. I rarely have whole spices on hand, so I used ground cumin coriander and cardamom. I throw that into the pan when I saute the onions. Any type of white rice is best so as not to compete with the curry, but I have used wild rice in a pinch. Again not as tasty as white but it'll do in a pinch. This recipe is fairly quick and very easy. Don't wait to try making it as Yeung Man really knows what he's doing.

      His recipie is basically just a variant of Dhal. You can get a basic Dhal curry just by Lentils (of any kind) and Garam Masala - which is already a mixture of many of the other spices in his recipie. Onions, garlic, coconut milk and tomatoes are all just recommended but optional ingredients.

    You are doing a great job for the society❤️ I was a hard core non vegetarian till I visited a farm and witnessed the horror of the dairy industry. The cow is inseminated painfully every 6 months so that calf is born. The calves are taken away immediately without a single drop of milk. The male calves are transported to the slaughterhouse to be killed on the very day. This process continues for some years till the cow is completely exhausted and later sold for meat. That’s the milk we consume. I literally had sleepless nights after watching the cows, their udders become so big they can’t even move. And they run to save their babies from going to the slaughterhouse.
    Thank you for these recepies so that people can choose compassion in their plate instead of pain.

      I'm not Indian but I'm 61 and been eating indian food since the as age of 9 , I have Dahl in the cabinet, I went to get cardamom the other day, too much for me to afford , I wish he had explained the reason to cook the spices in the pan with ghee or oil to release the flavor

    I am yet to find a cook like Yeung Man on YT. He is focused and he zeroes in on the task for the moment: the kitchen is clean and orderly, the ingredients are stored in labeled containers, and the utensils and dishes are nice and versatile; even the food looks forward to being served on his clean plates. The stove is more than happy to cook the ingredients and the music in the background does not jar my delicate sensibilities as I watch his skill and listen to his level tone of voice. The colorful colors -- like this dish -- appeal to the eye! What more do you want?

    Made this curry last night and it was absolutely delicious. I didn't have a can of coconut milk so I used cashew cream and it turned out so thick and creamy. Had lots of leftovers too.     Red lentils are so satisfying. I used to make this for my husband and we'd top it with fried sliced onions with some toasted spices (cumin, mustard seed) It's a full meal and great on a cold day.

    Oh yeah, I’ll be making this one!! I made your creamy mushroom soup tonight, and I made your chilli oil yesterday, so had a teaspoon or two of that over my soup, and they were BOTH delicious! You’d think the chilli oil may drown out the delicate mushroom flavour, but nope… the mushroom flavour still came through! Thanks for your awesome scrumptious recipes, Wil!! ❤️❤️❤️

    It’s daal - bhaat.. 🎉 i’m Indian & my son loves this dish since he was a 3 month months old baby .. now 29.. i have it with yogurt & salad.. i make different versions.. red kidney beans, toor daal, chana daal, mung daal .. chick peas.. black chick peas, whole urad daal etc

    I always appreciate your videos as they are enjoyable to watch a chef prepare food with integrity and soul. Because it is just myself and I wanted a small portion I pretty much cut it in half and used one of the small 5 plus ounces of coconut milk. Also because I didn't have the whole spices, I did use the ground spice and bloomed it all together. Smells great. I used bob's organic lentils and the cook time is a little longer. Added a splash of fish sauce at the end and dinner is served. Thanks for the recipe.

    I've tried maybe a dozen different red lentil curry recipes and this is hands down the BEST! I've made it several times already and I can't get enough of it.. everybody loves it (my non-vegan loved ones also!)! such a beautiful recipe, full of flavor, depth and with all the cozy vibes! highly recommend :)

    For Korean food, I love Maangchi best. She makes it so easy and fun. You are my favorite go-to for these lentil/curry/simple and pure vegan type meals--which I aim to have replace more and more of my all-too-often pasta dinners. I will accomplish this, by becoming accustomed to making these type dishes--to the point I don't think about it or the steps, just wing it from memory and common practice. You, with your simplicity and concise directions, and these inspiring recipes, will make that happen.

      Yeah we make soupy too. Right consistency to eat with rice. Thicker version for eating with Indian unleavened breads.

      @@janetlindsey456 Well usually in india this is more liquidy to consume with rice. But if u plan to make this recipe I say it'll go good wid Roti/Naan which is an indian flat bread since u can hold it easier. U can check videos on how to make them it isn't really that hard. I'll recommend Naan tho instead of roti. Just a personal preference. And also instead of olive oil I'll recommend using Ghee(clarified butter). They bring out better flavours. I wud hav recommended Mustard oil but it's kinda hard to handle so go with ghee or any neutral oil like peanut or sunflower oil. Don't do olive oil

    Excellent! I made this last week, in a large quantity. Did some substituting- I had mixed my red and green lentils together- so used them both and added red quinoa as well. Only had sun-dried tomatoes. These were good along with some dried cranberries. This was a very delicious and spicy stew! The last few days, I would add broth to the curry and make more of a soup consistency- adding cilantro, scallion and lime juice to each bowl. Wonderful recipe.
    Next, I want to make the flavored oil!

    I love red lentils. I have a Masor Dal recipe and an old Gourmet magazine Red Lentil and Carrot soup that anyone can find online (Epicurious) as my favorites but I have yet to find a curry recipe I like. I'm going to give this one a try. 🤞

      It will taste like a falafel, put your own spices in the mix for eg I add raw onion, fennel seeds, green chilli sliced and ginger+garlic paste and lots of corainder leaves in the paste

    I don't cook dal nearly often enough any more- back in my grad student days I would make a pot every week and eat it for 3-4 meals. It's so versatile- you can add any veggie you want after you've brought the dal to a boil, and it will be perfectly cooked when the dal is ready. I particularly like green beans or okra. I think the taste is better the second day!

    Ya really it’s Indian daal(lentil) chawl(rice) recipe. Without daal chawl our dinner is incomplete. I’m vegetarian so I like ur whole recipes. Thanks for sharing. And we said these mix species (garm masala), we add in all curry vegetables but we add dry coriander seeds, black- green cardamom, cumin seeds,cloves, black pepper,cinnamon stick,nutmeg,bay leaves grind them well ur garm masala or mix species ready for use

    As someone who is *extremely* sensitive to hot peppers, I find the difference in heat level when the seeds (and ribs) are removed is negligible at best. Using just a tiny amount instead works better. Your mileage may vary. 😝

    One of the best recipes I’ve ever tried, this was perfection. I served it as is with the rice and cilantro but added avocado as well. I didn’t have coriander so used a little bit of curry powder to compensate. Used coconut cream instead of coconut milk (what I had). Minor changes. Overall Amazing! Everyone loved it!

    Easy and delicious. I added two tablespoons of tomato paste to mine, as my tomatoes weren't very ripe. This helped bring the curry around in taste profile and added some dimension. Definitely a keeper recipe! Thank you!

    We have this with every meal in Sri Lankan
    homes. It is a lot simpler the way we do it. We use turmeric, curry leaves, onion and chilies (green/dry red) to build the flavors. With coconut milk ofcourse. It is never eaten with just rice, It is an accompaniment it with atleast 3 more curries along with rice.

    Wonderful quick Version of a curry! I had all the ingredients on hand and made it right away. I like a lot more veggies in my dishes so I added a handful spinach and some finely chopped mushrooms and had a left over portion with brokkoli 🥦 instead of rice. Yummy! Thank you for the inspiration!

    I came for the possibility of maybe learning something new and probably gaining a broader understanding of lentil curry - but I paused, liked, commented and stayed for the "you won't be able to keep calm and curry on" 😂❤
    Even if step one was something that would otherwise disqualify the dish for me ordinarily, I'd still hear this out because damn, that sleek phrase earned my attention and respect 😊

      This is so much like sri lankan way.. We cook like this except the part that we boil lentils separately and add to the other ingredients after boiling.. And in some variations we add mustard seeds too..and we add curry leaves too.. Coconut milk/cream+curry leaves is a must in sri lanka.

    Thank you for the nice music while you are preparing the meal. I also like the no nonsense approach you have to showing us what to do without any fluff. I also like that usually your only extra tools are a pot or skillet, a knife and cutting board. I do not have a-lot of gadgets so I appreciate that you use this approach.     Lentils called as Da••al in Indian subcontinent is a staple in majority of homes, names are arhar daal(yellow in colour) , massor daal(red lentils same as this video, this can be cooked with covering as well, moong daal which is cooked without or with cover is green or yellow in colour and urad daals which is again with or without cover and black or white in colour), apart from this there are many other lentils or daals but they are used sparingly than these•
    I m gonna try with coconut milk you showed and enjoy this week•

    This is my lunch every day but I call it daal. I don't add coconut milk, but I might try that. I often put some arugala or steamed spinach with it, or roasted oyster mushrooms. I love oyster mushrooms.

      @@letXeqX I use better with bullion. They have a wide variety of flavors so you can change up the base each week. I love their mushroom and roasted garlic flavors!
