(Florida, USA haha) I beed to change it a little because my tongue is too sensitive to the spiciness of the dried chilies. So I will use smoked paprika, caraway seeds, and coriander and parsley instead. Rather than bread or rice, I will use either bulgur or barley, mixed with roasted mushrooms and toasted pine nuts. It might be refreshing to serve cold yogurt on the side, too. Excuse me for changing so much. I can no longer indulge in the heat of chilies. I love the flavors of smoked paprika, caraway seeds, and the crunch of toasted pine nuts sprinkled on top, along with the tadka and chopped coriander mixed in. I love greens in dishes like this, so i might even stir in some spinach or arugula near the end of cooking. If I could get purslane I would use that, but, alas, my grocery store doesn't have any. To those who believe that there is too much oil and/or butter: I watched the video several times, and IMO there is exactly as much oil and butter as is necessary.
