Jiggs Dinner and Peas Pudding - Traditional Newfoundland - Bonita's Kitchen

    Today we will be making: Jiggs Dinner it is a boiled traditional meal.

    Dinner for four people
    Jiggs Dinner and Peas Pudding (also called pease pudding)
    1 or 2 pieces salt beef or salt pork riblets 6 potatoes, peel and cut in half
    1 head of cabbage, quartered 1 medium turnip, cut in slices
    6 carrots, peel and cut in half 1 parsnip, peel and cut in half
    1 medium onion, peel ½ bag yellow split peas
    1 tbsp butter or margarine Pepper to taste
    _______________________________________________________________________
    Method:
    - Soak salt beef or salt pork riblets overnight in cold water or boil in large boiler for ½ hour then drain liquid off, add more cold water to lower the amount of salt on the beef then add 1 medium onion to boiler.
    - In a prepared pudding bag, pour ½ bag of yellow split peas in a pudding bag and tie the top with a cotton string. Soak overnight in cold water or start cooking peas in your pudding bag with salt beef or salt pork riblets for about 1 hour then check to see if split peas are cooked.
    ( You can remove the pudding bag from the pot or leave it in the water and add your vegetables with it.)
    - Add cabbage and turnip to your boiler then boil for another 15 minutes.
    - Add potatoes, carrot and parsnip to your boiler, then boil for another 15 minutes or until potatoes are fork tender.
    Peas Pudding:
    - Soak a ½ bag of yellow split peas in a bowl of cold water overnight in your pudding bag, remove pudding bag with peas from water then cook with the second boil of your salt beef.
    - When the salt beef or salt pork riblets and vegetables are cooked, remove pea bag from boiler then cut the string from bag and pour all peas into a bowl, add butter and pepper to taste, mix together.
    - Remove all vegetables from boiler and put in separate bowls.
    Keep your pot liquid/ broth for your gravy
    Peas Pudding:
    Soak ½ bag of split peas in cold water overnight in your pudding bag, remove pudding bag with peas from water then cook with the second boil of your salt beef.
    When the salt beef and vegetables is cooked, remove pea bag from pot then cut the string from bag, in a bowl twisted the liquid out of the bag before you remove from bag, then pour all peas into a bowl, butter and pepper to taste.
    Remove all vegetables from pot put in separate bowls.
    Keep your pot liquid for your gravy or soup broth.
    Prep time ½ hour , cooking time 2 hours
    Raisin boiled pudding
    ¼ cup butter ½ cup sugar
    pinch or salt 1 egg (beaten)
    ¼ cup milk or 1½ water 1 cup all-purpose flour
    1½ tsp baking powder 1½ cup raisins
    1 tsp vanilla
    Method
    Cream butter, sugar until light and fluffy, add egg, milk, vanilla and dry ingredients. Fold in raisins, place mixture into a prepared cotton pudding bag, tie tightly (allow ½” space at top of bag for expansion).
    Boil for approx 1 hour 15 minutes (ensure water is at a high boil). Serve with your Jiggs dinner or dessert.

    Roasted Chicken with Dressing
    Preheat oven to 350ºF, bake time 2 hours,
    1 full chicken (3 to 4 lbs)
    Wash chicken in cold water. Place on plate, then wipe dry with paper towel inside and out. Place chicken in roaster or oven safe pan.
    Dressing (stuffing)
    1 cup bread crumbs ½ onion
    1 Tbsp butter or olive oil 1 Tbsp pure savoury
    Pinch salt Pinch ground or grated pepper
    Mix together bread crumbs, chopped onion, butter and olive oil.
    Add pure savoury, salt and pepper. Mix together with your hand.
    Put all the dressing into chicken. After, top chicken with a pinch of salt and pepper and ½ of chopped onion, ½ cup of stock in roaster then cover.
    Place in your preheated oven and bake for 2 hours or until golden brown, checking it every ½ hour to base with its drippings.
    When cooked, take chicken out of roaster, place on a plate and cover.
    Put roaster on top of stove and continue cooking stock for gravy.
    Gravy: Chicken drippings
    1 cup of stock or vegetable water 1 Tbsp of gravy browning or oxo seasoning.
    ¼ cup flour or corn starch ¼ cup cold water
    Mix chicken drippings, stock/vegetable water, and gravy browning or oxo seasoning together in roaster and let it come to a boil.
    Then mix together, in a bottle with a cover, your flour or corn starch then add cold water, shake well until no flour lumps seen.
    Once your roaster stock has come to a boil, mix in your flour mixture until broth is starting to thicken .

    I hope you realize that you just destroyed any hope of anything I eat for the next week being the least bit satisfying after watching what you have just created! When I was in high school (in the 70`s) my best friend was from Newfoundland, his mother was right off of the rock Newfoundland original as good as it gets. My friend was the last of 15 big boys and his mom never quite mastered cooking small portions, that was a real win for me because she would just drag me in the door and feed me. I absolutely adored that lady and by extension any Newfoundland lady with an apron on just warms my heart.

    As a native of Louisiana having enjoyed Southern, Cajun and Creole cooking my entire life, it is interesting and motivating to see cooking techniques different from those with which I am so familiar. This looks delicious and I will attempt it one day. Thank you for sharing!

    Any traditional recipe that I'm looking to make I always look up Bonita's kitchen first, thanks for helping us Newfoundlanders cook the meals that we grew up on. You should think about doing a cookbook, I would buy it.

    Oh my goodness, my grandma, use to make jigs dinner. It was delicious. We went to Newfoundland once when I was ten years old. Then my grandma would come to visit us in Scarborough, Ontario. Then she would make peas pudding and all kinds of Newfoundland food.

      Your recipe is a common Sunday dinner in Lancashire just add a Yorkshire pudding magic but we cook pudding separate

    My family was introduced to a great version of Jiggs dinner many years ago in Cape Breton. A lovely lady who was my unofficial gran showed my Dad how to make it. He would make it every so often. Always a big Sunday favorite.

I love cooking it for a big crowd not just for two, the steps looks like it's a lot but to me is one of the easiest meals to prepare for a big family or gathering.     Good video. Our local grocer just started stocking Chalkers' salt beef and pork which is done in NL. Best purchase they ever made and considerably cheaper than the other brands. Once you get to know how to regulate the amount of salt to soak out you're home free. All you have to watch then are the potatoes so they don't go to mush.

      That is wonderful and I'm so glad your local grocer have stocked that for you. Its only right to have equal amounts of cultural food available for people. Having the pot liquor to salt is not tasty but if you haven't got time to soak the salt beef just double boil the water and disgrade the first boil. But the potatoes is the last to go in and 5 minutes is more then enough on those, then turn the boiler off with the cover left on to let the steam continue cooking them.     You are Newfoundland's Julia Child. Thank you so much for all your work. These videos are GREAT and so helpful for use who have been away and forget when to put the potatoes on. lol
    You should do a video for ALTERNATIVES.
    * Can't get salt beef in Florida, so I use corned beef and add extra salt in the pot.
    * I make mustard pickles from Chipped Sweet Pickles and mustard.
    * Only recently realized Mount Scio Savory is just winter savory. I order mine on Amazon and it's amazing!
    * etc....
    Of course, when I get the courage, I am going to try your pickles and salt beef and hardtack recipes.

I will keep you suggestion in mind for sure, Most of my video thats more resent I do say if you can't find one of the ingredients replace it with something you have already. When we visited Florida last year I'm sure I seen summer savoury at Public's also I found salt pork for frying scrunches.
      But for sure you can by it online and through Mount Sclo Savoury they ship anywhere.
      The hard tack recipe is a quick and easy one and you can make yourself some Fish and Brewis for Christmas Eve.

    Just made my first Jiggs dinner for New Year's Eve dinner. AMAZING!!!
    I salted the beef riblets for two weeks...it tasted much gentler than corned beef and allowed the meaty flavor to surface. Delicious!
    The real surprise was the pudding...this was my first boiled pudding. Everyone loved it...it got an 'oh my god' rating from the family.

    This was great. Myself and wife and another couple rode our motorcycles to Newfoundland for two weeks and I was never able to get a real Jiggs Dinner. I did have the Hash one morning and it was fantastic. The Jiggs Dinner seems like a New England boiled dinner. Great site I will follow.

    I have lived in Manitoba all my life, so have never heard of a Jiggs dinner. It looks lovely and is a lot of work. It could be a

    Yum yum yum, I love a boiled dinner. Where my husband grew up they didn't do the raisin pudding, but it looks really good.

    Just how I love it and remember it as a child. I always tried to make sure my children knew this meal. Also love fish n bruise with scrunchions. Can’t be beat. Now if I knew how to properly prepare cod tongues 💥💥💥 the tongues we got as kids were huge. No more than one or two in a pan. Now sadly they’re tiny wee things.     First time hearing that tip about pre-soaking the pudding bag. Dad never makes duff for our Jiggs and last time I made it at my place, the pudding stuck to the bag. I'll definitely be using that trick next time! Thanks!

    Bonita is a sweetheart! Her recipes are amazing! I was just thinking, what if you made your own peas/pudding bags and sold them to your fans? It would raise a few dollars and your fans will have a keepsake directly from you and Newfoundland directly! ;)

    Thank you for the guidance! I cheated and used an Instant Pot - cooking the salt beef and boneless chicken breast together in chicken broth, then set those aside and cooked my veg in the broth in the instant pot afterwards. I also made pease pudding. Loved all of it!

      @@bonitaskitchen It came out perfectly! I cut the beef and chicken into cubes, more or less, and cooked it together in the seasoning packet with peppercorns that came with the beef, and chicken broth. I used the 'meat' setting. Now the instant pot did overcook the vegetables a little; next time I'll reduce the time on that to about 25 or 30 minutes as opposed to 40 I think it was on. I combined all that in a bowl afterwards. I still had to soak the split peas the day before and cook them on the stove while the Instant pot was going, but I knew I didn't have your mastery and level of patience to do everything the traditional way! Even so, everyone loved it. LOVED. it. We've never had it before, living in the south of the US.

    I learned how to make this many years ago from my husband's mother who was from Nova Scotia. She called it boiled dinner though :) The difference I believe between the two are that she put it all together into one pot and right before it's taken up she added dumplings into the broth. It actually serves two purposes. First it's another ingredient added to your plate and secondly the dumplings will thicken up the juice :) I forgot to add that I love parsnips in this. It adds a sort of nutmeg earthy flavor to the dinner.

      Yes Wendy, they are pretty much the same only one was with gravy and the other was the pot liquor.       @@bonitaskitchen I have managed home made caramel sauce once. I actually like the Mexican style goats milk caramel sauce , Cajeta, that has some very acceptable premades in jars. I warm it up in the microwave.

    I am of Finnish and Ukrainian background born and raised up in the Northwest Territories. My Nova Scotian husband asked for a boiled/jiggs dinner. He and three friends from the same area agreed that my iteration of your recipe was a success. THANK YOU!
    A passing question through, they traditionally had dumplings rather than the peas. Will have to check your page/site for dumplings and try that side too.

    Bonita, My Mother Made that Boil pudding & she tied it Cheese Cloth I think & she made white sauce with nutmeg & served it warm over the Boil Pudding 🥰😘😍

      mary jemison: Yes Mary, you can put this pudding in a cotton pudding bag and tie to the side of your boiler, you can also make it separate because sometimes there isn't enough room in the boiler.       Hi WW Suwannee: Thank you for your message, that is a good question. Newfoundland is knowing for its music accordion players and Jiggs, my understanding is that this was all about our culture and it was also called Sunday Supper. When you cooked Jiggs dinner it was always cooked for a big crowd or family. I guess there may be more meanings and stories for Jiggs dinner, but a traditional Newfoundland meal cooked mostly on Sunday's. I hope that helps. Bonita

      @@bonitaskitchen Hello Bonita, It's called JIggs Dinner after a comic strip where the main character is an Irish Immigrant named Jiggs who lives in America... I'm from PEI and as most Atlantic Canadians we all have a similar recipe for this lovely meal. In PEI we call it simply a Boiled Dinner and we'd use salt riblets, salt spare ribs, or neck bones Etc and if you are desperate, a cottage roll (very similar to corned beef) we normally do not put in a pudding like you do in Newfoundland, and Nova Scotia (usually blueberry there) we make Dough Boys (dumplings), we also don't have another protein, as they do in New Brunswick, where they tend to use a fish as a protein at times, instead of meat.. In PEI, we tend to break out the mustard pickles, chow chow, sweet pickles and beets... I've been fortunate to have all of these meals several times and I love each and every one of them. They all have their own little twists that make them unique to each Province... I also love your Fish and Brewis recipe, I make it once or twice a year... Great channel, keep it up...

    Look at you go! Cooking up a storm all by yourself. Idk how you do it. I've only had jiggs dinner once before and as delicious as it was, I know that there was so much work put into it (and I wasn't even the one making it so I really felt for them). You also have a few more things made here in your version so all I can say is I'm so amazed! Btw, what is a jigg? I've had it explained to me once before but I really dont remember too well. Isn't it something to do with a fisherman?

Everyone got a different version I believe it's to do with the dance jigging years ago some of our elders were known for being good dancers and that was called Newfoundland Jigg and cooking Jiggs dinner is much like a Jigg from all the running around in your kitchen. :) I hope this helps.       HI ALYN, Thank you for your message, the cooking times of jiggs dinner is......1. salt beef or ribs, after the first water and you drain and add more water add peas pudding bag, after 30 minutes, add cabbage, after 15 minutes add turnip, cook for 10 minutes add carrot, after another 10 minutes add potatoes. If you are cooking a big boiler full the time will vary and each step. Enjoy Bonita

    Boy! I'm really an outsider - I don't know what "salt" pork or beef riblets are.
    Are they spare ribs,(eek), or riblet spare ribs? Salt pork, or salt beef is totally unfamiliar to me in cooking and IF my five siblings say otherwise, they're lying!!!!!
    Might you please explain the salt pork riblets, please, as I would love to make this. There's no other choice.

    I use a pyrex plate on the bottom of the pot to keep anything from sticking to the bottom. It is just the size of the bottom of the pot so it works perfect.

      Savoury is a herb. It is also called "Summer Savoury". It has a wonderful flavour. It is similar to thyme but with a hint of pine flavour.

    I dies for a good feed of Jiggs (cooked supper as my family calls it), I’ve never had the raisin pudding before tho, my dad makes onion and bread pudding in that bag and something else he makes too is what we calls a crust, it’s a pastry type of thing that’s spread out kinda thin on a baking tray and baked till golden... yours looked deadly too tho and the only thing I’d like added is some canned cranberry jelly

    I prefer the “salt beef” over riblets…more traditional, and nicer flavour, in my opinion. When I was growing up, we didn’t use the term, “jig’s dinner.” It was simply called, “cook,” or “cook (cooked) dinner.”

    I am from Kentucky and am very surprised by your Jiggs dinner. The cooking of the peas and pudding both cooked in the same pot as the salt meat. Is the pudding salty? My Gran made her gravy the same way. Thank you for sharing.

      Hi Diane thank you for your message and this is a traditional meal here in Newfoundland and loved and cooked by all Newfoundlanders over the years, The meat is salty but its cooked twice without the vegetables and then the water drain off. After cooked all together and its delicious, with the peas pudding and duff in cotton bags a busy boiler. :) Bonita

      Hi Rebecca: Thank you for your message and for visiting our channel, I don't have a recipe and video posted yet for molasses pudding/duff but I do have one for Plum Pudding and it is almost the same method and you can use less of the fruit and only raisin and the other ingredients.     I was just wondering whether it matters if I usee summer savory or winter savory? Summer Savory is hard to find where i live, but I grow my own Wibter Savory and it tastes basically the same, it's just got a stronger flavor.

    thank you for your help with making jiggs dinner. i have a question, do you have to soak the salt beef and the peas over night

      You are very welcome and for stopping by, you can soak the salt beef over night or boil it twice, once on its own for 1 - 1/2 hours and drain the water, half fill it again with water and start boiling the salt beef again. Then follow the recipe adding your veggies, enjoy to the fullest. :) Bonita

    Bonita, I just saw a comment on The Townsends....showcase food from the 1700's ....where them mentioned they use lamb for salt meat.
    I got to thinking, how come we newfoundlanders have not tried that with moose. Unless someone has tried it and it was't ideal.
    Now I want to try lamb ....in Alberta the only wild meat is deer or bison.

      Paula, Thank you so much for message, and for the Townsends info on salt beef. Years ago I believe our elders only used pork and beef from cattle, maybe they used lamb, but now people is using game meat like moose and caribou, I don't think we have any access to deer and bison here in NL. It would work great, it is a tougher meat but when you cook it you can cook it longer before you add any veggies to your boiler. So if you wish try lamb I can't see why it won't work. Even if you try a small roast and cut it up and give it a try. All the best and follow up if you do. :) Bonita

      HI Thank you so much for your message and for stopping by....thank you for sharing where you are from. When making this meal taking the most salt off the salted beef is a good thing. But sometimes when you cook it you can taste the broth and if it's to salty you can also take some more broth off and replace with fresh water..........
