Chicken Thigh Stew with Duff Pastry - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Chicken Thigh Stew with Duff Pastry, see recipe below!
    Ingredients:
    6 or 8 CHICKEN THIGHS, SKINLESS, BONE IN
    8 CUPS CHICKEN BROTH/STOCK
    2 MEDIUM POTATOES, CHOPPED
    3 CARROTS, CHOPPED
    1 SMALL TURNIP, CHOPPED
    1 PARSNIP, CHOPPED
    1 MEDIUM ONION, CHOPPED
    1 CUP GREEN PEAS, FRESH OR CANNED
    3 CELERY, CHOPPED
    2 TSBP BUTTER
    1 TBSP CHICKEN OXO or SEASONING
    1 TSP WHITE PEPPER
    1 TSP SEA SALT
    1 TSP THYME, FRESH or GROUND
    5 TSBP FLOUR
    1/4 Cup water, for roux mix
    Method:
    • In Medium roaster add, chopped veggies in stew size cubes, broth, seasonings,
    EXCEPT ONIONS, cover and put in a 375º oven for 30 minutes, FIRST before adding chicken and onions.
    • In a frying pan on medium heat add chicken thighs and BUTTER, with a pinch of sea salt and pepper, fry for 4 to 5 minutes on both sides then remove from pan and add to roaster, add more butter and onions to cook until soft, add 2 tbsp flour and cook for a couple seconds then add 2 cups vegetable broth and continue cooking then add to roaster.
    • Continue cooking chicken thigh stew for another 40 minutes in oven covered and then remove from oven, put on the stove top. Remove some liquid from roaster if to much and keep to add back in at the end stage.
    • Then mix together 3 tbsp flour and 1/4 cup water in a mason jar with lid, mix well, pour into roaster with stew to thicken broth.
    • Then you can add the duff pastry in pieces or all one piece across roaster.

    • Place back to the oven uncovered to bake pastry on the same heat 375º for 15 to 20 minutes or golden brown.
    Remove from heat let rest or serve
    Duff Pastry:
    2 Cups white or wheat flour 1 Tbsp white sugar
    1/4 Tsp salt 1/2 Cup cold butter, more if needed
    1/2 Cup carnation milk 4 Tsp baking powder
    Method:
    Mix all dry ingredients into a bowl, then add pieces of cold butter and mix well together.
    Add milk to mixture working it in with your hand or mixer until almost into a ball.
    Continue on forming into a ball then put out onto a piece of wax paper or parchment paper. Cover with a sprinkle of flour and roll out the same size as your roaster top, or take pieces and place on top like tea buns and bake that way.
    "The chicken stew you are making the pastry for must be almost cooked before putting the pastry over the top".
    After place the pasty over top put back in the over 375º for 15 to 20 minutes or golden brown.

    This reminds me of how I make chicken and dumplings only I cheat and use Bisquick. I bet it's delicious!

    Another great recipe,i made one last week without the pastry, i cut a green and red pepper , fried them up with button mushrooms and onion, removed that and browned my chicken thighs, 6 mins on each side poured the peppers and mushroom and onions over the chicken added a cup of chicken stock, just enough to the top of the chicken, cover it and cooked for 30 mins on med high, then added cornstarch to thicken up it was great, watching you go me trying out new things, have a wonderful day.

    Bonita you have taken me down memory lane today. I grew up in Cape Breton and my grandfather's family was from NFLD and this was a Sunday go to meal at my Grandfather's. I still continue with many of his traditional dishes and think of him each time I cook or bake. So thank you again for sharing this wonderful recipe.

    This video is exactly what I needed today in the midst of this COVID virus craze. You could cook cardboard and I'd watch the video just to hear your calm voice and relax:) Although I'm glad it's stew and not cardboard LOL! The stew looks delicious too! Thanks Bonita!     I did make this stew and it was delicious. It made a lot for just my husband and I so after eating for dinner and lunch I turned the rest of it into a soup adding chicken stock and some cream. It was delicious also. And the pastry is wonderful.

    This recipe reminds me of being a youngster. Our mom would make a chicken pot pie and topped it with her home made biscuits. Yes, we all had at least one biscuit. A smart meal for a family of 11!!

    Looks delicious! I have never made a roux before; I just thicken using some ground oatmeal, rice or arrowroot powder.
    Why is the biscuit mix part called a duff? Is there a difference between duff pastry and any other pastry?
    It sounds like you are having quite a storm up there. It sounds so cold, gives me chills just hearing that wind! And it makes your stew look even better!

      Duff is just another name for biscuit , maritimers have different sayings for other words that what makes us unique 😊

    Looks delicious. I can't get evaporated milk here in Korea. Is it possible to use fresh milk instead?

    Does your flour have to cook for a certain period of time when using for a thickener?

      Hi Gordie, Thank you for your question and for stopping by, when you make the paste for the thickener and if you are cooking it on the stove top cook for about five minutes just until you see it start to thicken, or mix into the hot liquid cook it in the oven for the remainder of the time until you are ready to eat it. I hope this helps and enjoy to the fullest. It is the same as if you are making a gravy. :) Bonita

      Hi Teri: Thank you for your question? If you wish to use chicken breasts for the meat part that will be ok. Chicken beasts are a little more dry but this recipe should help give it a little more moisture. Enjoy :) Bonita

      Dark meat on chicken and turkey is indeed the best, but if you wish to make it with chicken beasts that will work maybe cut it in smaller pieces. Thank you and Enjoy Bonita

      Here in Newfoundland and Labrador all I heard growing up was my mom and grandma saying lets make a figgy duff or a duff pastry, or pudding with supper. Thats what we grow up with and its pretty much a bread replacer and to help fill up your family with more food on their plates. I hope this helps and enjoy to the fullest. :) Bonita
