  • Welcome to Bonita's Kitchen! Today we will be making Cold Plates, made with old fashion salads and coleslaw. See recipe below!

    Ingredients:
    Mustard Potato Salad
    6 Medium Potatoes
    1 Medium Onion
    2 Eggs
    ½ Tsp Sea Salt
    1 Tbsp Sugar
    1 Tbsp White Vinegar
    ½ Cup Yellow Mustard
    1 Tbsp Cream or Evaporated Milk
    1 Tbsp Butter
    ½ Cup Miracle Whip or Mayonnaise
    1 piece of Celery
    Topping for Salad:
    ¼ Cup Miracle Whip or Mayonnaise
    ¼ Cup Yellow Mustard
    Method:
    In a medium boil half full of water, add peeled potatoes chopped in cubes, onion cut in half, ½ celery and sea salt. Let boil until potatoes are fork tender.
    When boiled drain water off, return potatoes to boiler and toss onion and celery.
    In a small boiler half full of water, add your eggs start the boil until hard boiled. Then peel eggs add one egg to the potato pot and the other slice and set aside.
    Start mashing your potatoes then add butter and cream, mash until combined. Then add mustard and vinegar, sugar continue mashing, then with a large spoon mix in miracle whip or mayonnaise until creamy.
    Then put all your mustard potato salad in a large glass bowl.
    In a small bowl mix together yellow mustard and miracle whip or mayonnaise until all combined.
    Spread mixture over top of salad then top with your sliced eggs, place in your fridge until cool then ready to serve.
    Serves 6/8 people
    Prep time: 20 minutes
    Beet Potato Salad
    Recipe:
    6 Medium Potato
    1 Cup Chopped Pickled Beets
    ½ Cup Miracle Whip, or Mayonnaise
    1/4 Cup Beet Juice
    1 Tbsp Sugar
    ½ Tsp Sea Salt
    2 Eggs
    1 Medium Onion
    Sprinkle of paprika
    1 piece of celery
    Method:
    In a medium boiler half full of water, add your peeled potatoes cut them in pieces for faster boiling time and your medium peeled onion cut in half, celery, sea salt.
    Let boil until fork tender then drain water off and return your potatoes to the same boiler, remove onion and celery from boiler and toss.
    Mash in beet juice and sugar until all combined.
    In another small boiler add your two eggs half full of water and let boil until hard boil, about 5 to 10 minutes.
    When cooked peel and add one in with your mashed potatoes and continue mashing together. The other egg cut in slices and set aside until needed.
    In a large glass bowl add your mashed potato salad, then with a large spoon start mixing in miracle whip or mayonnaise until creamy. Then add your cup of chopped beets and foiled in with the potato salad until combined.
    Then place your sliced egg pieces on top, sprinkle with some paprika seasoning, then put in your fridge until nice and cold.
    Serves 6/8 people
    Prep time: 20 minutes
    Coleslaw
    Recipe:
    2 Cups Shredded white Cabbage
    1 large Carrot Shredded
    2 Tbsp White Vinegar
    ½ Cup Miracle Whip or Mayonnaise
    Pinch Sea salt
    Pinch Black or White Pepper
    2 Tsp Sugar
    Method:
    In a medium bowl with lid, shred cabbage and carrot together and toss together.
    In a small bowl mix together all of your other ingredients.
    Then toss dressing in with cabbage and carrot mixture toss together and more of any ingredients if needed, refrigerate until ready to serve.
    Please note:
    If making it the day before don't add the dressing until about one to two hours before ready to use, serving is for about 6 to 8 people.
    Prep time: 10 minutes
    Cold Plates
    After all your salads are made and your coleslaw, put them in the fridge until your are ready to plate.
    These are other food items you would need for your cold plate.
    Tomato
    Iceberg lettuce
    Turkey roll
    Cooked Ham
    Cheese
    This is where you get creative, anything that you love cold in food can go on this cold plate.
    Pickles
    Bread roll with butter
    cold stuffing
    piece of salt beef
    The old fashioned way was on Sunday when you finished our Jiggs dinner the potatoes and carrots from that meal would be transferred into a salads.
    The stuffing from the chicken or turkey would be used on a cold plate, plus the chicken.
    So plating your cold plate.
    2 scoops of each salad, a scoop of coleslaw, a few pieces of iceberg lettuce and 1 or 2 pieces of slices tomato. Roll your cooked ham and turkey roll then put in plate, cut 1 or 2 pieces of cheese of choice. All of this on a plate kept in the fridge until ready to serve this was one of the best meals of the week.
    Bonita’s Tips: Mash potatoes while hot and let come to room temp before adding mayonnaise. Keep potato salad in fridge until all eaten, good for three days.
    Let cool in fridge until ready to serve.

    My Mom sure LOVED a good cold plate! We had ours every Sunday evening with sliced roast beef or turkey from our cooked dinner. Usually included a macaroni salad. Sometimes also had sliced "boiled ham" from the store. And I enjoyed the jelly fruit salad served with cold Bird's brand custard. Mmmm! Thanks for bringing back some great memories.

    In 1987 my mom and her friends made cold plates for our wedding supper. Very happy memory.

    Nothing yummier than Newfie cold plate!!!
    I like Jiggs dinner just fine but my absolute favourite in this word is cold plate especially the beet salad!

    The cod used to come in small wooden boxes lots of soaking +rinsing always came from the maritime provinces I remember a thick white creamy sauce with peas + carrots wonderful on biscuits, homemade bread , toast baked potatoes or mashed the list is endless!! I'm from coastal Maine so I'm familiar with such things haven't had this dish for 25 yrs!!

    i wish you could ship your meals in the mail to me ;) so delicious and every day I have good meal ideas for my family of five. we just go through your site and everyone gets to pick a meal to have through out the week. Tonight a cold plate wouldnt go astray.

      Right! This is the only way we ever made it but I've had different types of salads from visiting different counties and this is a lovely and easy salad to make. I hope you give it a try, thank you for stopping by and leaving a message. :) Bonita

      Often potato salad was not made with potatoes boiled for that purpose. The mashed potatoes from last nights dinner would become the potato salad for lunch the next day. My mother often made potato salad with left over potatoes. Maybe it is a Canadian thing.

    This brought back memories, my Newfie Aunts crossed the gulf to help with my wedding in N.B. and they did up all the cold plates, beautiful and wow was it good!

    I've never seen potato salads made that way. In our part of the States we leave the taters in chunks, not mashed. Thank you for sharing. .That was very interesting.

      Here in the east coast of Newfoundland we have always made our potato salads this way. But I have made it in chucks before but its not the same, enjoy to the fullest and let me know what you think after you make it. :) Bonita

    Beautiful 🌹🙏 yes I had this in lewisport in 1983 and have never forgotten how wonderful it all tastes and looks.       @@bonitaskitchen I've been searching for brawn, Braun, Mrs Whiteway would grind meat with spices and jar a ton of it and send to us. I haven't found I anywhere nor a recipe. We spread it on toast. The flavor was incredible. Do you know of this my love.?

      Yes this is wonderful for family gatherings, I usually have it all made in advance and then when we are all ready to eat I take everything our of the fridge and place on the counters and enjoy. If you are going to be in a warm area, put the salads on a bed of ice and good to go. Enjoy and have a Merry Christmas :) Bonita

      I'm so glad you found the Cold Plates recipe and video, this is our Sunday favourite. Beet salad was one of my Dads speciality, he was a organic farmer and he had all types of vegetables growing in his gardens. He had a cool storage to put the fall vegetables in to have all winter long. So lovely! Enjoy :) Bonita

    I made apple flips from your recipe and they came out just like the ones you buy in the stores down home always wondered really how to make them and for your cold plates it sures brings back memories of my mother she is passed now and I sure miss her.

    I made myself some feed of jiggs dinner this Christmas 2021. I think with the so called " Sauce " for the mustard salad is also a topping preserve for keeping the salad from drying out on the top. It works great.

    Just stumbled across this video. I use to love cold plates but mom never used cold cuts, she always used the left over meats from our jigs dinner. She would always cook up chicken and salt beef or corned beef. Never had cold cuts till I was well into my 20's.

      Yes Ella, we were pretty much the same but sometimes mom wouldn't have any left over fresh beef or chicken and she went to the shop next store and got a few slices of ham or chicken. :) You didn't have enough in your plate to taste but we loved it.     This was interesting. In my family we mix cubed boiled potatoes, mayo, mustard, sweet relish, chopped eggs, sugar, salt, black pepper, garlic powder, onion powder, fold together, sprinkle with paprika, chill and serve. maybe you could try it.     Up this way, cold plates are usually a fund raiser whenever there's someone in need. Heck, I've already got a couple pre-ordered for this weekend. :)
    Jigg's dinner was our usual Sunday supper, but every once in a while, we'd have what mudder called "ham and salads", which was basically a cold plate without the lettuce and tomato. We still have it every so often, when I'm in the mood to put in the effort.

    we ate and we still do even the summer cold plates almost every night of the week. I would ask my mother what we were having for supper and she would say a cold plate so I just always knew that it would be salads and sliced vegetables in cold cuts of meat left over from day or two before. I love cold plates!! I have decided to see how creative I can get with them now for the past few years. LOL

      Elizabeth Shaw we only had cold plates on Sunday's or Christmas Time, but we would have leftovers for Monday and maybe even Tuesday.     my boyfriend's mother and high school used to make mashed potato salad and I loved it. my mother always made it with chunky potatoes. and my mother is French Canadian that's odd. I always put my eggs in with my potatoes.

    My daughter-in-law makes the best mustard salad. She adds finely chopped apple to hers. Absolutely the best use of leftover mashed potatoes from Sunday supper. I've actually never seen a mustard salad with the extra topping though.

    I also grate in a small apple and a quarter of an onion and I you was quite a bit of black pepper. everybody always says they love my coleslaw so I guess I'll keep doing it that way. :-)

    My Mother always bought the 50 lb bags of potatoes. Russett I believe.
    Is there another potatoe suited for making salad or is the russett pretty much standard?

    This takes me back to my childhood.{1960's} I would spend the entire summer with my Mennonite grandparents and they did NO work on Sunday, with the exception of chores. All meals on Sunday were cold and prepared the day before. My Grandfather was very strict and would not let my Grandmother do any work at all on Sunday. I learned how to make a lot of meals with my Grandmother that I still make to this day.

      Hi Andrea, Thank you for your message and for stopping by, it really don't matter what type of potato you use. But white potatoes are a little more dry and a good potato for a potato salad. I've used red and that one is more wet, also pretty tasty. Enjoy :) Bonita

    Liked your receipt but not what I remember as a kid buying cold plates from church there was a vegetable salad that I just loved and it was real turkey and roast beef noon the less looks great

      There are so many ways to make this delicious cold plate and of course you can use your leftover roast from dinner to add with the cold plate. Buying it from the church they bake a turkey or roast to add to your cold plate instead of cold cuts, you are not going to do that if you only want a cold plate for your own family, that would be a lot of work.     Well I never! In my whole life I've never seen mashed potatoes served cold, let alone mixed with all those ingredients. Learned something new today. I think my family will faint when next I serve them 'potato salad'. Out of interest, is your accent a Newfoundland one? It's different from other Canadian accents I've heard. (I'm a South African, so what do I know?!)

      If your ever near Stephenville Newfoundland during the summer they usually sell cold plates at the Domino Pizza House ....Not Dominos the Pizza chain ... different place that
