Cabbage Rolls - Traditional Newfoundland - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Cabbage Rolls, made with fresh local green cabbage and so much more. See recipe below!

    Ingredients:
    1½ lbs lean ground beef
    1½ cups rice ( any type )
    1 medium onion (chopped)
    2 small cloves garlic (chopped) or 1 medium ( optional )
    ½ tsp pepper
    Pinch sea salt
    1 tsp onion powder
    ½ cup chopped salt beef ( optional )
    1 large can crush tomato
    1 can or bottle pasta sauce ( any type )
    2 small carrots chopped ( optional )
    1 medium or large green cabbage
    1 cup water ( add to roaster if needed )
    Method:
    Pre-heat oven to 350°F
    Cooking time 1½ hours.
    Preparation time 1 hour.
    Half fill a large boiler with cold water then place your full cabbage in boiler, cut off the large green leafs and place in the bottom of your boiler, add a pinch of sea salt, bring water to a boil. ( don't over cook your cabbage because you won't be able to roll them.)
    Parboil cabbage until leafs are a little soft then cut each cabbage leaf off with a fork and knife and put on a plate to cool.
    Tip From a viewer, March 14/18:
    Bonita, an easier way to remove those leaves is to first remove most of the core BEFORE you place in the boiling water, and then when the boiled leaves are ready to remove use a large metal serving spoon (the rounded side) to slide up under the leaf from the cored end. Your leaves will lift off, and no boiling water will run onto your hands, nor will you accidentally tear the leaf with a fork or knife.
    You can leave the cabbage in the boiler to continue cooking and remove leafs or remove the cabbage to cut each leaf.
    Cut salt beef into small cubes cutting of any fat from beef, place in another small boiler and cook for about 45 minutes to 1 hour. Then drain off water from beef, please beef in a place to add with all your ingredients.
    In large bowl add ground beef, rice, chopped onion, garlic, grated carrots, salt and pepper, onion powder, ½ bottle or can of pasta sauce and ½ can crush tomato's, chopped pre-cooked salt beef , mix all ingredients together.
    Start by taking one cabbage leaf and scooping about ¼ cup of your beef and rice mixture into each leaf more if needed and roll it away from yourself, until all cabbage, beef and rice mixture is used.
    In large roaster add a small amount of you pasta sauce and crush tomatoes in the bottom then layer each cabbage roll one way then the second layer the opposite way until their all layered, top with the remaining crush tomatoes or pasta sauce and a cup of cold water, unless you have enough liquid in the roaster, top with pinch salt and pepper.
    Cover roaster with a lid or foil wrap, place in your pre-heated oven for about 1½ hours, check the cabbage rolls half way through to make sure no liquid is dripping out or gone dry, then when cooked remove from the oven.
    Start plating cabbage rolls and top with sauce from your roaster , you can serve your cabbage rolls on its own or with perogies and garlic sausage.

    My dear 96 year old mom used to use a 1/4 pork & beef & bacon to 3/4 rice mixture or 1/2 meat to 1/2 rice, sometimes she would use buckwheat instead of rice and then she would lovingly roll the cabbage roll and finally patiently tuck in the sides. I used to watch how she would bake and cook without recipes, they were all locked up in her head, it is only now that she has passed that I realize how much her and previous generations knew, not like todays generation that would be lost without an I-Phone, i-Pad, or computer, I, we miss her so much. I will surprise my daughters and grandkids this Christmas and use your recipe. Thank you and have yourself the greatest of days.

      Oh my what a wonderful age and I'm so glad you kept her recipe for her cabbage rolls. All our amazing elders didn't write down their recipes only kept them in their heads. This is why it's so very important to tap into our elders and get their recipes from days gone by. My mom and dad would make these cabbage rolls together and one would mix in the ingredients and the other would roll and tuck them.     Made cabbage rolls yesterday. Another inspiration after watching your video, but I forgot to take a picture. They turned out really good except, I think I should have cooked the rice first as it wasn't a soft as I'd like it. I made my tomatoes sauce with fresh tomatoes and basil and onions and sportiness in some bacon bits. My mom always put straps of bacon on top of her cabbage rolls. Anyway, ate some for supper, gave some to my daughter in law and froze the rest for future. So good! Thanks, Bonita!

    Thank you for posting this. My mom used to make these when I was little. We lived in Utah. When we moved to Missouri our friend showed us her German version that had sauerkraut and sour cream. That was also delicious.

    l use the disgarded leaves on the bottom and on top of cabbage rolls. The price of our veggies and fruit keep going up in price so l waste very little . Great video l enjoy your channel thank you cheers from BC

      Thank you for your message and for stopping by, in our family we always had cabbage rolls as one of our regular meals. My dad was an organic farmer and had lot's of fresh green cabbage and he made cabbage rolls lots. It's not a traditional recipe for our province but one for our family.     This is a laborious recipe of love. It is so yummy. You are such a hard worker. Cooking already can be laborious, but adding filming to it adds hours of work. We sure are lucky you enjoy sharing your yummy dishes.

    Yum! My husband and daughters made two big roasters of cabbage rolls on Christmas Eve. My husband’s version is Sarma (his family Serbian recipe). His variation is using V-8 juice for the sauce. Lots of garlic.

    The ethnic variations are really amazing! I've just started making stuffed cabbage in my Instant Pot. For your future consideration: We Jews battle between the baked version (yours essentially), and the stewed version, but ours is always sweet and sour. Consider adding chopped raisins, ginger snap crumbs, brown sugar to your meat. Excess cabbage leaves, torn leaves get chopped, added to chopped onions, chopped tomatoes, garlic, and for a medium to large cabbage, about 3 tsp of sour salt/citric acid, and more brown sugar, which forms the soup for the rolls to cook in. Play around with it. It seems cabbage rolls all have a common denominator - chopped beef, onion, rice, and cabbage leaves. Thank you - great video. I cannot imagine a better lunch or dinner during a winter's Nor'easter in Newfoundland.

      @@bonitaskitchen many years ago , I lived in the NWT for a while and got to know many Nfld-ers. The are fantastic cooks. There was one meal I learned to make back then but can’t remember what it was called. In a pot you cooked turnip, potatoes,cabbage, salt beef or pork (not sure which one) and a bag filled with orange split peas. When that was all cooked, wow that was so delicious! The other I really loved was salt cod and homemade bread. Yummmy! Lol

    What a beautiful head of cabbage!!! Won't find anything like that where I live. My mother made cabbage rolls and I LOVED them. She called them "guimpkis" (sp). One of my favorites that she made many, many years ago. Watching you plate the cabbage rolls, I kept thinking, "Where's Raymond??" LOL Thank you for this video!

      Haha Right! Raymond wasn't very far from those cabbage rolls for sure. That is so lovely about your mom making these cabbage rolls as well, growing up here in Newfoundland the meals was pretty much the same in every house hold.     That big boiler you used reminds me of growing up my family is from NFLD and every Sunday was Jiggs dinner cooked in one about that size lol it would be on the stove boiling all day .

    We've always made these with sour kraut instead of the tomato and cooked on top of stove. I like the idea of putting them in the roaster better and the tomatoes look yummy. Don't forget the mashed potatoes.

    I have never made cabbage rolls, but my mom did and I liked them. This a little different and I might try this, maybe my husband will try them. Can’t make cabbage rolls for one person.

    You should line the bottom of your roaster with cabbage leaves to prevent burning or sticking then add some tomato sauce followed by your cabbage rolls, finally cover your cabbage filled roaster with cabbage leaves and cover then bake.

    Hi I also freeze my whole cabbage . Make sure you take it out the night before to defrost I always have a cabbage in the freezer so when I have the urge to make cabbage rolls half the work is done ☺☺☺☺

    Love your videos! Can the cooked cabbage rolls be frozen for later eating? Only one in my home that eats them and it's a lot of work for only 4-6 rolls. Please let me know. Thanks for sharing your skills.

      Valerie Mercer thank you for your message and for visiting my channel, you can freeze the cooked cabbage rolls. Let the cabbage rolls cool and put maybe four in each freezer bag with some sauce and date the bag and freeze them. Enjoy

    My late Ukrainian mother-in-law lined her baking dish with cabbage leaves and then covered her finished dish with more cabbage leaves. If you do that, you'll find that you use 2 heads of cabbage to make one baking dish full of cabbage rolls. She used the exact same baking dish that you have.

    l like using those first few large ones to line my pan with sauce underneath it ,, but l also core as much as l can so the leaves will just pull off easier after blanching them ,Also my think is l roll them all up and put them on a cookie sheet and par freeze them, and then put into large zip lock bags and all the extra leaves divide them up and bag them too, So when we cook them, l just take out what we need and then sauce them up and put some of those leaves on bottom and top, (can't beat a semi burnt cabbage leaf in my opinion) and cook them till done. never any waste, and they last us for most of the winter, Normally put in 6 for the us. more if they are a bit smaller,

    Bonita, have u tried freezing the cabbage over night and thawing it in the morning? Interesting how in NL we use tomato sauce, but not tomato soup like elsewhere. I'm making them today with tomato soup for the first time. I'm gonna add some carrot today as seen in your video to try. Thanks from up the road from ya.

      Hi and thank you for your message, I'm glad you enjoyed our recipe, I don't like frozen cabbage thats why I would make it this way and the way our elders would make it to keep the cabbage fresh and part boiled. My mom would say frozen cabbage cooked after got a strong odour, but thank you for sharing your method. We use tomato soup as well but I like the pasta sauce better, because of its extra flavours.       @@bonitaskitchen I make like a casserole with this too. You chop up the cabbage and mix it all together. When my hands are too sore, that's the way I do it. I have bad tendinitis and carpal tunnel syndrome in my hands

    About the rice. Are you using instant rice like an Uncle Bens rice? Seems to me if using somethink like Jasmin or basmati seems it might better to cook that rice first. I really cannot see the regular rices fully cooking in either oven or boiling. How about freezing these things? Reminds me of my nan.

    Great. The outer dark green leaves are mostly cut off by the farmers. The customers don't want cabbage you have shown in the beginning. The customer prefers the "bowl". Sad. Much food get's wasted on the field. I'm sure, that the dark green color of the leaves has health beneficial's like chlorophyll, iron and others. Such a color is wanted in product's like Japanese Matcha Tea.

      Thank you for your message Bjorn, green cabbage is the best part of a cabbage. I grow up in a farming house whole and my dad pretty much used all of the vegetables for everything, nothing was wasted. Our cabbage rolls were mostly made with green cabbage, you may need to boiled them a little longer or soak them over night but they are delicious. Merry Christmas to you and your family. Bonita

Its not needed to complete the recipe only for us NL people who likes salt beef and having a taste in with the cabbage rolls just stands out.     I was surprised to see you use those big outer leaves. I would think they'd be too tough. My mother made wonderful cabbage rolls and I've never made any as good. She had one version with tomato but may have had another with mushroom soup. That was 60-70 years ago so I can't ask her. I don't know anything about salt beef as I live in western Washington State and I never heard of it until I started watching your videos. Love your accent by the way. It's very subtle but it sounds like you drop all of your H's. I find it fascinating.

The outer cabbage leaves are the best, you do have to part boil them first and then after you put at the bottom of your roaster so they cook more. So so good, you don't have to put salt beef in them, here in Newfoundland and Labrador we love our salted beef so having it in different recipes is tasty. But not needed to make this recipe. My accent is part British and part Irish, our back ground is British. Canada was apart of Britain up to 1949 and joined Canada confederation.       The rice cooks well, with the liquid and sauce in the roaster helps steam and cooks the rice and beef really nice. This recipe is my favourite and years ago my dad would cook this on the stove top in a boiler with his cast iron wood burning stove, But I like the oven roasting because less work. Enjoy Bonita

    Why not core the cabbage before boiling it? Some cooks use those huge outer leaves to line the pan. No criticism intended. Love your channel.

      Hi Thank you for your message and for visiting my channel, I guess if you like to core your cabbage before blanching it that is ok. I like to blanch it first and cut the leaves off and then its ready to roll them. But lining your pan with a few of the green leaves helps them from sticking the to bottom of the pan. There are so many way to make them and each is equally delicious. Thanks Bonita

      I know right! When we visit friends and family there we are so surprised that the cabbage got all the leaves removed. But if you ask the produce manager have they got any green leaves in the back sorting room, they may. Because they remove them when they arrive and only sell the white head.     What is chopped salt beef? Is it corned beef? Could you use Libby's Canned Corn Beef?

      Hi Barry: Thank you for your message and for visiting my channel, salt beef is a salted beef or pickled in course salt that you can buy in Newfoundland or in same other province in Canada. We use this beef in Jiggs Dinner and many different meal, its not the same as corned beef. You don't need to add this ingredient in this recipe if you don't have access to it, you will enjoy these delicious cabbage rolls with the other ingredients the same.     My mom used to freeze the head of cabbage. When thawed the cabbage would be soft. Therefore you did not need to boil the cabbage.
