I've made it twice now, and I love it - it's genuine comfort food on a cold and miserable English winter's day. 🙂 I add a bulb of crushed or chopped garlic - it gives a "kick" to the flavour, and of course keeps the vampires at bay! A bulb, a clove, or nothing - YMMV. FYI ... a simple solution to the "onion problem" is to use a fan to blow the fumes away (or open a nearby window); but I think 50 years of wearing contact lenses has probably densitised my eyes! 🙂
Looks great! I think I will just cut the boiled potatoes up a bit and put them on the bottom with a skoshi more cheese (and a spoon of butter), then the sausage, gravy and some of those packaged fried onions for a topping (they have the jalapeno ones too)... thanks, Greg for all your great ideas!

Just a suggestion if you want it to turn out like a pie when you finish putting everything in the casserole refrigerate it for a couple of hours then cook it, once it's cooked add the cheese on top and then put it back in the oven on broil just to make the cheese melt and turn golden brown like on a pizza. That's how I'm going to try your recipe thanks.

What a perfect combinations that people with acid reflux disease like me have no way to eat those things until the stomach is fully cured :( im in healing process, i wish i'll be better soon so i would be able to eat those bad boys without any problem!!
You should have mixed the cheese into the mash along with an egg yolk. putting cheese on top of the mash melts the cheese but prevents the mash from browning. with the yolk in the mash would give a nice colour and the cheese a nice flavour.
It is like U.S. shepherd's pie (with no veggies). I make your version. Meat, onions, potato and gravy!! Yummo!! Also made with ground beef or beef chunks!! All good! And the wine is the secret ingredient for rich, full-bodied taste!

Hi Greg, I made this last night and forgot to put the red wine in it, I think it was a lot poorer because of that. Does it require any particular type of red wine?, what did you use? I wouldn't know one wine from the other.............

Good recipe. Made my own gravy. Also made hand pies by putting in a turnover style crust and deep fried.

You can do a variation with pre-made meatballs, add some sour cream to the gravy, and work in some button mushrooms.
