Just to help avoid any food waste, I always rework trimmed pastry into the shape of bay leaves and sit them on top of the pie. If you do the leaves thin enough, the pies get a bit more visual character without any of the pastry remaining doughy
Or just bake them up separately and eat them like a cracker.

Thank you for mentioning that they can be frozen and at what stage! Since I am usually just cooking for one or two people, I'm working hard on not cooking huge amounts as often as I used to when I cooked for a crowd. Being able to make four pies and put two in the freezer for another day is just perfect!
I'm also learning to cook for just two. It's a challenge, but it's kind of fun!
I make Johns’ steak and onion pie in hot water crust pastry, 8” tin. It costs about £9 to make but I cook it, let it cool then divide it into separate thirds in foil then put in a freezer bags. Each third serves 2, that’s three meals for a couple @ £1.50 a head 👍🇬🇧. I defrost it in the fridge before reheating.
Yum, like buried gold in the freezer. Imagine a cold day that you can't be bothered cooking and you find one of these beauties tucked away. 😋

a little tip here regarding the hot water pastry Roll it out between cling flim so easy remove top layer of cling film lay over pie dish remove bottom piece of cling film firm into place x

Damn! I've just eaten, and now I'm hungry again. As I'm now allergic to beef (go figure!), I'm thinking to replace the beef with pork and add black pepper, as a substitute for pepper-steak pies. Thank you Chef !
I'm allergic to beef as well, every thing oil, fat, cheese, everything. A local pub here in my town, US makes a lamb burger with marmalade, feta cheese, cucumber which is quite good. I wish we Americans were more experienced in cooking lamb properly.
I found I can eat bison/buffalo meat with out allergy issues. Not sure what the availability might be in the UK.

I had some beef to use up so cooked it with onions in the slow cooker yesterday. Going to try your pie pastry today, probably chuck a few cooked potatoes in with it to cook through. I think you are amazing sharing your knowledge, nice to hear an accent I am familiar with, being a north west gal myself! I was taught royal icing by a retired baker, he was fantastic. And sugarcraft by a retired cake decorator. All useful skills, although I am now in my 60’s too!

Fantastic looking pies there John. The ultimate comfort food. I've tried many times to make meat and potato pie like my mum used to make in the 60s, but I just can't get the pastry flavour right. I'll give this recipe a go. I think lard is the key ingredient.

Brilliant, thanks Mr K. I would have never have thought about using tomato puree! I will use wholemeal pastry (wholemeal flour with baking powder) as my wife is diabetic. Love your vids......easy to understand & follow.........Thanks again.
