Hi Greg. Adding vinegar to the water doesn't make the eggs easier to peel. What it does do is raise the acidity (lower the pH) of the water. As a result, if any of the contents of the egg escape the shell whilst it still soft, the slightly acidic water causes the egg to coagulate and stay together; so you lose less, if any, of the egg.
Also what makes the egg easier to peel was he instantly soaked them under cool running water after a boil shocking the egg shell due to rapid temperature decrease
