Low Carb Comfort Food: Chicken Pot Pie!

  • Recipe for Low Carb Chicken Pot Pie by Cooking Keto with Kristie
    1/3 cup chopped onion
    1/3 cup chopped carrots (omit if too carby for you)
    1/2 cup chopped broccoli stems (avoid the "florets)
    3/4 cup chopped cauliflower
    1 cup chopped zucchini
    1 can green beans, drained
    2 stalks chopped celery
    1/3 cup sliced and chopped mushrooms
    3 tablespoons butter
    2 cups chicken bone broth
    4 ounces cream cheese
    1/2 cup heavy cream
    1/2 tsp thyme
    1/4 tsp salt
    1/4 tsp pepper
    1/4 tsp Bell's poultry seasoning
    3 cups of cooked chicken
    1/2 tsp glucomannan or xantan gum (optional thickener)
    One batch of Bell's biscuits Recipe for Belle's LC Biscuits (uses egg whites) • Low Carb Biscuits: Go...
    or my Miracle Biscuit (uses oat fiber) • Low Carb Miracle Biscu...
    Saute the vegetables (first 8 ingredients) in butter in a large cast iron skillet (or oven safe casserole) until the vegetables are tender. Add chicken bone broth. Simmer until the bone broth is reduced (about 10 minutes). Add cream cheese and heavy cream and simmer until thickened. Add the remaining seasonings and mix well. Add the glucomannan or xanthan gum if desired. Add the chicken and mix into the vegetables and sauce.
    While the chicken pot pie filling is simmering, prepare the biscuit recipe. Once the filling is ready, drop the biscuit dough on top, covering the filling. (The miracle biscuit dough can be rolled out for a more traditional pie crust topping.) Bake at 350 to 375 degrees for about 20-22 minutes until biscuits are browned and not doughy underneath.
    If you really want to make this decadent add one cup of cheddar cheese and 1/3 cup chopped bacon to the biscuit dough. Enjoy!

      +Zoritsa Nepenthe If you use a small enough amount, it can be a better option than green beans! We have to be mindful of portion size AND the carbs in EVERYTHING!

    So I made this amazing chicken pot pie this evening. It was SOOO yummy. One of my kids, in fact my pickiest kid, said, "You won dinner tonight!" WOW! Another kid said, "How are you eating this carbalicious pot pie!" I was ecstatic to say, "It only tastes carb-ful!" So the seven people who ate this delicious pot pie this evening all thumbs up!     Onions aren't that carby. A whole one has 9g of carb. I can't remember ever eating that much onion in a day, never mind in a meal. ;-)

    I love adding dill, fresh dill, to my chicken pot pie because it cuts down the need for salt for those people who are cutting back on all the salt. What no salt added people really need to know that their heart problems can be ameliorated with magnesium and they won't need to worry about using so much salt. The magnesium is better for their heart problems, and so will the fresh dill. I look out for them all and magnesium adding to their diet will also help people with migraine issues. Magnesium is good for most people; people do not get sufficient magnesium in their diet so and won't have to cut down on salt to help their heart and magnesium is good for everyone. People also need to eat more bone broth which will also fill out their health needs. Your pot pie looks great. Thank you for your recipe.

    My mom always wanted to make a chicken pot pie, but she didn't know how to thicken the sauce. Eventually, she learned a basic white sauce, and heard the recipe for a local, Nashville favorite, "Kleeman's Chicken on Egg Bread" on Dinah Shore's TV show, and she was good to go. The buttery sauce for the egg bread recipe would be perfect for a pot pie! She got busy and started to make her dream pot pie, better than the frozen ones.
    But oh, no! She didn't have the canned vegetables she had been sure she'd have on hand; they had been sitting around for awhile, so surely we still had them! But no.
    So what could we do? Finally she remembered the bag of "California Mix" she'd bought on our first trip to Sam's Club (using the card of her employer, the children's home where she was the bookkeeper): big pieces of broccoli, cauliflower, carrots and pearl onions. We cut up another onion into bite-sized pieces, sauteeing it in melted butter, then layered the roasted chicken, the vegetables, the sauce, including the broth and drippings from the chicken, and then the top pie crust.
    Naturally, we never bothered making a pot pie with peas and corn after that. Pot pie with cruciferous vegetables, carrots, and big pieces of onion, in melted butter and brothy, chickeny sauce, was so much better than we'd imagined, that this became a favorite to make at least a couple of times a month. I have only made it once in the last 22.5 years, mainly because I thought it was too high in fats! To make it keto-friendly only requires a low-carb way to thicken the sauce, and provide a top crust, if needed, or a carb-substitute to take the place of rice, mashed potatoes, etc.
    That's pretty much what you've got here! I will defintely give this recipe a try when I get my act (and supplies) together. This is my mom's birthday, her 96th, so this is great to see on top of remembering her today.

    Before going on keto, I used to top our chicken pot pie with crushed Ritz crackers mixed with melted butter, yummy. Do you think crushed pork skins and butter would hold up as a similar topping?

    Pot pie needs carrots. One serving of Walmart canned carrots is not crazy-high carbs.

    I make a good biscuit dough that I can make sausage balls with or biscuits. I think I will try it on top of a pot pie and I tried it yesterday wrapped around a cheese stuffed jalapeno and it tasted great. I kneed some cold butter and cream cheese into some almond flour until it's crumbly. Then I stir in some sour cream and some cheese. You can use parm or cheddar or both. You can also mix in garlic or seasonings if you like. That's sorta the basic dough which I sometimes add sausage to make sausage balls that I can top with cream cheese. I also want to try making them pizza style with mix ins. I think it would also work for calazones etc. Though if I do that I will kneed in some egg and melted mozz cheese and perhaps a little oat fiber to see how that pans out. Sometimes it's just about experimenting but I like it when someone else has already perfected it and saves me the trouble. I want to figure out a low carb gnocchi that will cook in soups as dumplings. I used to make my chicken and dumplings soup in a dutch oven pot. I would put in the chicken, celery, onion, carrot, broth and then put a package of fresh gnocchi in it and they made the perfect dumplings and were super easy. Now I need to learn how to make them low carb and freeze them.

      basic low carb almond flour biscuit dough
      basic low carb almond flour biscuit dough
      (you can double or triple the recipe)
      calories per serving
      4 Ingredients
      1.5 tbsp cold butter
      1/2 tsp baking powder
      1 tbsp trader joes cream fraiche
      (can sub sour cream)
      1 cup almond flour
      Mash in cold butter with almond flour, I use a fork or fingers.
      Mix in baking powder, cream fraiche or sour cream until it's a biscut dough consistency.
      You can also mix in a little buttermilk powder if you want to try that. If you want to add any cheese and make cheesy biscuits then experiment. That is the basic, one or two biscuit recipe, depending on how big you like them.
      It's a great topping for pot pie, but mind you that the calories and fat content are pretty high, so I do it if I have room for a fat bomb or been intermittent fasting or just ok splurging for a day.

    Can u eat it as is and not put a crust on it? Thinking more like a pot pie soup? Pot pie is one of my favorite things in the world but it would usually include a top and bottom crust!! But now that I'm cutting down I would have to discard the crust (which that is my favorite thing about the pot pie) 😩 any suggestions?

    I'm PA Dutch, and the biggest problem I'm having with this way of eating is having to give up most of the foods associated with my heritage. But this video is giving me hope! We call this bot bie, I don't know why lol. But we don't use crust or biscuits, we use these wide rectangular rolled noodles. And there's this big discrepancy over thick or thin. I prefer thick. I'm wondering if your dough can be adapted into something like that. I'll keep watching, and hopefully figure this out. 😊

    Thanks for the tip about gluccomannan becoming slimy. I used 1 tsp for a batch of zuchinni fritters and they were slimy. I never pegged the gluccommanan as the culprit. I'll have to try them again with less.

    What you to know I tried this recipe last night yum. I used veggie I had on hand (frozen), roasted chicken (purchases from market) and didn't put a crust on top so did not need to put in a oven yum. do you have serving size , number of serving or nutritional info such as carbs ect cal, fiber, fat? Thank you again I am so happy I go to have a pop pie :)

    Hi Kristie, I tried your chicken pot pie last night and love it. I do have a question for you about LCHF. Would you recommend this lifestyle for someone that had gastric bypass surgery? I am a year out and made it to my goal weight and am looking for a way of eating that is low carb. Just not sure if this would work for me, as I have to eat high protein. Thank you for your videos, love so many of the recipes. Mary

      +Mary McCollough Definitely! I'm a failed gastric bypass patient. Had surgery in 1997 and lost about 125 lbs. Gained back about 75 and then went lchf in 2013. Best thing I EVER did!

      +Mary McCollough I focus on fat first and then protein. I keep fats as a source of 75% or more of calories. I keep carbs under 20 total every day.

      She has a couple of great cook books on Amazon. You should check it out. Especially in the beginning having recipes that you know will be good is very encouraging. It also helps you start to have a better idea what you can eat on keto. It can seem overwhelming in the beginning but it isn’t nearly as limited as it first seems.

    Your recipes look very good, except for the insane amount of dairy! !! So much is not necessary, you have many great ingredients! Why so, so much dairy? Really? I have seen many of your recipes and I get turned off when you get into the extreme cheeses amounts! Would not buy your book just because of that, Cristie. Is your famil,'s cholesterol levels ok??

      Chefs At Home with Micki and jeff keep in mind that's stretched over the entire recipe. you can use less onion if you prefer. overall this recipe is less than 7 carbs per serving.

    Why do you do Total carbs instead of Net carbs? I am new to this and some people do Total and some do Net. It is confusing.

      ya know this is exaclty the kind of recipe that convinced my husband to do this! Hut your hubby with the taco bake recipe next and then the jalapeño poppers and the buffalo chicken dip. he'll be sold!

    Thank you for sharing all your fabulous recipes.mi am just beginning to go on a keto diet once again. In 2004 I went on the Atkins diet and weighed 95 lbs when I finished. I felt absolutely fabulous at that time. Although I live on my own--I am a mother of three, grandmother of seven--the seniors around me get very envious when I make myself look better ( in 2004, I had started to gain weight to 135 lbs.
    Now one or more persons are entering my unit when I go out and contaminate my food so I can not loose weight, I have actually started to gain weight. I used to think it was my daughter who sabotaged my food at that time ( I also suffer from PTSD, from early childhood losses, etc, which makes it very difficult)
    When I went down to 123 lbs this past year, I overheard my obese neighbour say:, it's not right, she looks like a young lady!!!!! I cannot worry my children, because I want them to be as successful as they can possibly be. They have had a wonderful, but very difficult life
