How To Make Creamy Spinach & Chicken Lasagna - Recipe

  • A white lasagna - no tomato sauce. This mild, cheesy, creamy lasagna hits the comfort spot.
    INGREDIENTS
    1/4 cup butter
    1 1/2 lbs (680g) chicken thigh, chopped
    1 onion, finely chopped
    2 tsp dried sage
    1/2 tsp salt
    1/2 tsp pepper
    1/4 cup flour
    2 1/2 cups milk
    2 oz (55g) Parmesan cheese, grated
    2 - 7 oz (200g) pkgs frozen spinach, thawed & drained
    9 lasagna noodles
    7 oz (200g) mozzarella cheese, grated
    DIRECTIONS
    1. In a large pot, melt the butter on medium. Add chicken, onion, sage, salt, and pepper. Cook, stirring occasionally, for 8-10 minutes.
    2. Add flour and cook, stirring, for 1-2 minutes.
    3. Add a little milk at a time and deglaze the pot. Add rest of milk and cook, whisking, until slightly thickened.
    4. Take off heat and mix in Parmesan.
    5. Add spinach and mix in lightly.
    6. In a 9x13 baking dish, spread 1/3 of chicken/spinach mix. Lay 3 lasagna noodles across top. Repeat two more times.
    7. Sprinkle mozzarella across top.
    8. Bake at 350°F (180°C) for 1 hour.

    It's nice to leave the tomato sauce out every so often. This one's definitely a comfort dish. 😋👍

      I use a bechamel even in my tomato sauce based lasagnas - as separate layers.

    Perfect! We love lasagna but I’m getting a little bored with the usual beef bolognaise sauce recipe. This will be a great change ,It also has a healthy section with having the spinach in too 😂

    Kevin....I noticed you didn't put that fork of lasagna in your mouth .... just cut to the kitchen! Must have know you would have had to spit it out before it seared the fork onto your tongue! LOL!

    I love a good bechamel sauce with nutmeg, but I guess adding nutmeg with spinach would taste odd. I'd give this variation a go next lasagne 👌

      Hmmm. Yeah, maybe if just a pinch for a subtle back taste?
