Obviously not a traditional lasagne but some nice twists. I was taught in an Italian family. I noticed when you layered the pasta, you placed the layers all the same direction. To stabilize the filling, I was taught to alternate with vertical and horizontal pasta layers to create a tight weave, so it doesn’t slide apart. I don’t use tomato paste. It adds acid. Leaving it out nullifies the need for sugar. A hearty well balanced sauce should simmer a minimum 3 hours. There’s no acid and the tomatoes become naturally sweet. I like your passion for flavors and techniques. Thanks for sharing.
When I saw tomato sauce, I decided to use good store bought spaghetti sauce instead. I always add a little bit of brown sugar when I make spaghetti sauce.

Growing up and learning to cook Italian food in an Italian neighborhood included how to enhance the flavor of store bought ricotta cheese. We always added Parm or Romano or both , herbs and an egg. Your addition is a great idea to enhance flavor. I’m a lover of that variety of Boursin cheese. Homemade pasta is best and you don’t have to cut it into strips. Just cut it to fit the pan. Meatballs sausage salad & garlic bread make the best meal.

Made this the day you posted it was fantastic. I had leftover meat sauce and ricotta mixture so I boiled a few noodles and mixed it in froze it and reheated it as lasagna soup my family lovedddddd it even better

Little tip if you did have to use ricotta, just season it with salt, pepper garlic powder and a little lemon and some hot sauce or chilli flakes and it'll taste much better. Even with a little parmesan also.

Turned out good. I used no bake noodles in one and made myself a separate one with heart of palm "lasagna noodles" for a low carb version. Both were very good.
This was absolutely delicious. Yet another reason for me to get your cookbook. I will add that I chose to use uncooked regular (not oven-ready) lasagna noodles and they were soft and perfectly cooked by the time it was done. I did 45 mins @ 350 covered with foil and then broiled it @ 500 with the foil off until the cheese was golden brown

Will you make a version of French toast that is made with Sherrie? Then make a syrup with toasted pecans, brown sugar, butter, maple syrup, and cream? The French toast is only exquisite with a fabulous syrup on it.
I'm Italian but I totally agree with you about ricotta. It is so bland plus I don't like its texture which why I am not a fan of traditional pastas made with it. The worst thing for me is when people make baked ziti and such and just spoon or mix ricotta into the pasta. I always add parm and even mozzarella or provolone just to give it some body and taste, but I like what you have done here and am going to try it.

Your recipe isn't too different from mine, but my ricotta mix is just ricotta, real parmesan cheese, herbs, S&P, and maybe an egg if it looks too loose. Garlic is a migraine trigger for me, so I use very little of it in the sauce and none in the cheese mixture, but that's a personal modification, not a recommendation. Garlic is delicious and I would add more if I could do so safely.

If you want to get as close to this recipe as possible just omit the ricotta and sour cream. Just use the Boursin cheese with garlic & herbs and the other ingredients. Boursin has a texture similar to ricotta, ie: creamy like cream cheese. Mix it well and it will mimic the ricotta cheese mixture. Or, you can skip it entirely because the other three cheeses used in this recipe will be sufficient. Many people don't like the taste or texture of ricotta and they omit it from the recipe and don't replace it with anything. The lasagna will still taste very good without it. Or, you can make a traditional Italian lasagna "Lasagna al Forno" with a bechamel (white) sauce. Some Americans use cottage cheese which is far from authentic (as is sour cream) and would be a hard pass for me. I just don't see the purpose of putting these ingredients in lasagna. And, most Italians and professionally trained chefs agree. However, to each their own. Hope this helps. Any of these suggestions will work. :)

I think I'll do half of ricotta and half of cottage cheese. Also add some shredded parma and romano cheese, along with boursin and sour cream
recipe looks good, pro tip though use a potato masher when breaking apart the meat it's easier and creates finer pieces 👌🏾
