How To Make Pork & Cheesy Corn Rice Enchiladas - Recipe

  • A satisfying enchilada - full of pork, rice, corn kernels, and cheddar cheese.
    INGREDIENTS
    ENCHILADAS
    2 tbsp olive oil
    1 lb (450g) thinly sliced pork
    2 tbsp chili powder
    1 tbsp paprika
    1/2 tsp salt
    2 cups cooked rice
    1 14-oz can corn kernels, rinsed & drained
    4 oz (110g) cheddar cheese, grated
    8 tortillas
    TOPPING
    3/4 cup taco sauce
    7 oz (200g) cheddar cheese grated
    DIRECTIONS
    ENCHILADAS
    1. In a frying pan, heat the oil over medium. Add the pork, chili powder, paprika, and salt. Cook, stirring occasionally, for 8-10 minutes.
    2. In a bowl, combine the rice, corn, and cheddar cheese.
    3. Divide the meat mixture amongst the tortillas. Divide the rice mixture amongst the tortillas.
    4. Roll and place in 13x8 baking dish.
    TOPPING
    1. Drizzle the taco sauce over the enchiladas.
    2. Spread the cheddar over the taco sauce
    3. Bake at 350°F (180°C) for 30 minutes.

    Looks great Kevin. That make enough for 2 or 3 days or so. Also, thanks for the cultural spot about "respect" in Japan. Yes, it is a cornerstone of the culture.

    Mmmmmelting cheese, you can never go wrong with that! 😋 We were always taught to finish all our rice, never leave a grain behind. 🍚 I imagine you could even add beans to it too. 👍

      I was considering adding black beans, but decided to go without this time. But, yes, a great addition.

    That looks great! I'm presuming there's not many hispanic grocery markets in Osaka to get corn tortillas. Unless you get a tortilla press and make them.

      I've never found one. Just the flour tortillas I can get at Seijoishii.
