    For a better option to sugar in your sauce, use a pinch or two of baking soda to neutralize a little of the acidity in the tomatoes. This is a fantastic option for people watching their sugars or those who don't like Americanized sweet tomato sauce.

      @@Mainecoonlady. No problem cooking my sauce. It's an all day affair. 🤣 Parmesan rinds and a few pats of butter at the very end also combat the natural acidity from the tomatoes.

    A hack I learned was to make smaller lasagna by assembling in loaf pans. Right now, it's just me and my mom, and the large lasagnas we made would mostly go to waste. Make one for supper, freeze the rest, bake the others later.

      @@uwubelle817 To freeze, let the mix cool, it should be fairly cool anyway since you didn't bake it, but I don't know how soon after making the sauce you're assembling the lasagna. Tightly seal it in foil and write the date on it (and contents). Thaw in the fridge for a day or so before cooking. Maybe add ten minutes to cooking if it's still a bit soupy.

    My son requested lasagna for Father's Day. I made the sauce the day before and put it in a slow cooker on low overnight. I put the lasagna together before church and put it in the oven at 225 F until after church, 3 hours later, and it was fabulous!!! It wasn't over cooked and it held together perfectly! I make my sauce and ricotta mixture similar to yours. I didn't have any Italian sausage which would have made it even better!! I love to watch you cook and have made several of your recipes which are a-maz-ing!!!!

    I made this for Mother's Day for my wife and WOW, it turned out perfect! In fact, the ingredient ratios for a 9"x13"dish were just enough to meet the pan height without it spilling over in the oven. I split it into 8 servings, each one a meal unto itself. All my portion slices held together wonderfully because I used John's recommendation to let it rest 30+ minutes (I let it go about 45 minutes and it was still warm and delicious). I can't thank you enough for making Sunday dinner a big hit this year, John! Thanks for making such a great channel and being a great cooking teacher! :)

    I made this recipe and it is 100% the best dish I have ever made. The measurements were exactly as they should be . I couldn’t make this more delicious if I tried. The dried basil adds a depth of flavor and I did end up adding red pepper flakes like you said. Thank you so much for this wonderful lasagna recipe! ❤

      Indeed, this is the best lasagna recipe I've ever used, period. Other recipes go heavy on the ricotta mixture, but John's ratio provided just enough light creaminess and body without making the whole dish dairy heavy.

    Gotta love a lasagne! I can never get the layers right though, so I cheat! I do an all or nothing, everything in, lasagne style bake with shells (conchiglie) instead of sheets. Makes a nice change to a traditional lasagne and goes great with chips (fries)! ❤

    I made this lasagna recipe, and I have to say, it is the best my lasagna has ever tasted. I have made the sauce several times now, and it too is the best. I hesitated to put that amount of sugar because I used another recipe from someone else, and it was too sweet. My first batch didn't come out quite as good because I halved the amount. Now I use the full amount and it's perfect. I find all of the recipes John has given, and I have made have ALL been awesome in flavor. I will be getting his cookbook!

    Ok I made this and I used the lemon zest and even a little fresh lemon juice from the lemon and my goodness you could definitely taste the difference it tasted sooo incredible after the lemon definitely recommend using it

    In my family we usually love :
    extra virgin olive oil for the "soffritto" (i usually cook carrots, celery and onions in it)
    A little bit of white wine before adding your tomato sauce
    Bechamel sauce
    Mozzarella
    a little bit of parmigiano cheese on top to get that delicious crust

    You make the sauce and ricotta just like my mother did! Her family was from a town not far from Naples. actually, she grated parmesan into the ricotta, and mozzarella into the layers as well. Great job!

    Great recipe. Pretty close to my Moms. Sauce, of course needs to simmer for at least 3 hours to slow cook the tomatoes until sweet, but ingredients are spot on. I use tomato purée with no tomato paste. This makes the sauce smooth and less acidic. Construction. When placing lasagna pasta in layers, I was taught to alternate the directions of each layer. Horizontal, then vertical to knit the layers together firmly and assist in cutting/serving a compact portion in plating. I also make a low carb version with baked, breaded (or not) eggplant. The eggplant adds an amazing flavor to the sauce, sausage and cheeses. My Italian Mom would like your lasagna. That says a lot! Cheers!

    Good looking dish!
    Our families don't like the ricotta cheese. My mom substitutes cottage cheese for it, and it is okay.
    My wife tried alfredo sauce... OMG is it good! It isn't a traditional "layer", but everyone loves it.
    Another trick my wife found was to layer the cooked sauce/ sauces with uncooked noodles in the crock pot/ slow cooker all day... and the pasta is perfect by adjusting density of pasta with moisture content of sauce.
    We just cook the meat sauce the night before with our other supper, assemble in the morning and cook on low.
    Super convenient after working all day, and super good with some garlic bread and a caprese salad.
    The caprese sauce/ dressing is 1/2 cup honey, 1/2 cup balsamic vinegar and 1/2 cup dried basil, boil until reduced by 1/3rd, strain. It looks like black honey - It tastes like heaven. It refrigerates for months...

      You can also substitute with a bechamel sauce and if you'd like add fontina, a nice melting cheese.

    This looks so good! For me tho, I prefer a Bechamel sauce (nothing wrong ricotta if that's what you guys like). Little bit lighter, little bit smoother. Good work

    Hello John, Thanks so much for making this simple lasagna recipe, My husband Bob, was asking me to make him some Lasagna, but us living in So. Cal. the hot summers I did Not want to turn on the oven. But I am so glad I found your recipe and baked it today. I am going to share with you, this Lasagna recipe got me alot of Honey do;s favor, looking forward to. LOL!!! I ended up with the shredded Mozzarella pkg, but it still came out super duper amazing!!       Absolutely, this lasagna recipe never fails to impress! If you ever feel like tweaking it a bit, trying a different type of cheese can add a new twist. I've found some great variations on CookWithAnna blog that are equally delicious. Keeps things interesting in the kitchen!

    We make our own marinara sauce with tomatoes from our garden. Our goal is to freeze enough for the year. My husband likes to add shredded carrots to add a sweetness and texture, plus more vitamins!!

    Hi John! I just made this right along with you on a very humid day here on the East coast. I don't like sausages so I did Italian chicken sausage along with the ground beef. Boy, was that a work out trying to chop that up as it cooked! I finally had to break out the food processor, lol. My meat ended up minced but I don't mind that at all. This is currently cooking and I can't wait to try it. Thank you so much! I love your videos! ❤
