I bought Scharffenberger and Guittard cocoa powder and baking bars when they were in the stores this christmas to experiment with making a drinking chocolate. Will need to make up four batches-one all Scharffenberger, one all Guittard, one all Ghirardelli, and one with Hershey’s cocoa matched with Baker’s chocolate-and run some taste tests. What I’ve learned so far from just using 1T cocoa powder and 1T allulose in my cup to make hot cocoa is that a plant milk just isn’t necessary. I mix the powders in my mug, hydrate them and mix into a paste with 1T heavy cream, then add boiling water from the kettle and use my milk frother to make it all creamy. The Hershey’s powder needs some help with a couple nuggets of cocoa butter thrown in, but it has just half the fat that the premium cocoa powders do so that isn’t surprising. Sometimes anise extract is a nice add-in.
I make a simple cacoa drink in morning . 1 tablespoon of organic baking cacoa with 1 tablespoon of Monkfruit sweetener and 2 tablespoons of coconut cream . Blend with coffee frother . Simple and easy and all products from Costco . I would use Allulose but not easily available in Canada . The online price for the small amount of Allulose is way too much .
I use a pure unsweetened chocolate block from Willies Cacao (I’m in the uk, not sure if it’s available in the us) and when I put it in chilli I use a fine grater…I’d do that with this mix, then just stir well with a balloon whisk. Save all the processor dust 😄 I like the flavour variations with this too!

I make something very similar, but add the spoonfuls of cocoa etc to a mug as the milk is heating..add a tiny bit of cold milk to the mug to make a paste then the hot milk..or half milk half water..but if your organised..this way is probably better.

I made this - without the collagen. I used Half & Half for the milk. OMG! It was so good! It was sweeter than I would prefer, but that is easy to fix. I used powdered vanilla, which might have contributed to the extra sweetness. I’ve been in the mood for hot chocolate lately, so this was timely.
Thank you for this recipe! I love, love, love it. I have made two batches; the first one has unflavored collagen protein and I use it with HWC & water (coffee), and the second batch I substituted my favorite chocolate protein powder (Equip) for the collagen. Both batches are great with a little HWC and water/coffee. Also, I found if I finely grated my chocolate bar, I could mix the batch with a hand whisk - less messy for me. Love your recipes and appreciate your time and effort to bring us great recipes and videos!!!

You read my mind. Hot cocoa was my daily treat at bedtime. But the options available are awful. I attempted to do the copycat swiss miss recipe. It was better than everything I tried and helped me realize I was overshooting the amount of cocoa required. Making it keto left it lacking big time in creaminess. I can't wait to try your version and maybe get my nightly treat back. 😊
Hi Carolyn, this mix was much tastier than the low carb hot chocolate powder mix I bought, I had a fine sugar free chocolate of 90% cocoa that worked amazingly in this hot chocolate powder mix. This recipe is also good for me because I have lactose intolerance ! I made it once with lactose-free milk and once with almond milk, both hot drinks were so delicious. You made me happy, thank you . This turned out very well, I used Jay Rob Egg white powder in place of the collagen & only 1/4c of monkfruit powdered sweetener, no salt of course. Thank you, very good recipe & with added cream may not even need the protein powder. I am in UK
Yummmm! Love your recipes and used many or variations according to Australian equivalent ingredients. While I am nearly always happy with my efforts I live alone. Making 2, 4 or more servings at a time I tend to freeze leftovers for another time. I nearly always find that freezing most things is a disappointment when I use them again. The worst is pasta and pasta dishes like lasagne, nearly always throw them out as they are tough and dry. Would appreciate info on recipes I can make and freeze that are still edible the second time round. Have been living a keto lifestyle for over 2 years, lost 25 kilos and reversed diabetes. Just want to know what I can cook and freeze, particularly main meals and snacks. Have plenty of treat/sweet foods that freeze well but struggle with my meals.
I see you used most of the Chocolate secrets: Multiple types of chocolate (both dutched and normal processed from different sources), vanilla, salt but you missed instant coffee and palm oil (gives it a silky smoothness). The primary issue with your mixing technique is that the chocolate needs to be cooked or it will taste grainy, so add it to your pan of milk and whisk it frequently over heat.

This is delish. I use my electric milk frother to mix it comes out really foamy but use an extra tall container or it will whip it out of a cup. YUM thank you!

This recipe actually calls for 10-12 oz of your favorite milk. In the print out recipe, she writes that she uses 10 oz hemp milk and 1 oz heavy cream. All of that being said, just add cream and water together to your preferred taste.
Have you tried KOS organic coconut milk powder in a dry mix? Only 1 ingredient (no fillers)! This is what I use in my keto instant hot chocolate mix. Just coconut milk powder, cocoa powder, sweetener and a little salt.
I just use sugar free cocoa powder (dark) and hot milk of your choice ……..can use some hot water mixed in to your own taste. I don’t use any sweetener’s…….as I don’t really like it sweet.

I ran out of almond milk one day and added water and almond flour in my blender. Ta da! Almond milk! I don’t know how much I used, I kept adding both until I had the taste I wanted. Do you think there’s a way we could do something like that with this recipe?
How is that "keto" with no appreciable fat in it?? Adding coconut and or some butter will add so much to this mix. I also seriously question your sweetener choices. I do without it altogether lately, but my first choice would be stevia. I used to used a dash of maple syrup.
Why does it have to have fat in the mix? It's just a sugar-free mix and you add the fat with your milk choices. And keto is NOT all about fat anymore. I question your choice of sweeteners too 🤣
Keto, is ALL about the fat, in that its the only macronutrient that does not elevate blood glucose levels and hence a lower insulin response. The fat will also satiate and make more creamy texture.

Most keto experts (including myself) have come to recognize that all fat, all the time, isn't always the way to go and we need to rely more on protein. And too much fat can cause insulin resistance and keep blood sugar levels elevated. Additionally, keto is not one size fits all. Before you berate me on how wrong I am, do a little reading into it - the keto perspective is changing and the emphasis on fat is decreasing. While this is anecdotal evidence, it holds absolutely TRUE for me and my body, as well as many of my readers and followers. I am an older woman who's body is changing and I noticed a distinct shift in the past 5 years or so in how my body metabolizes macro-nutrients. I can no longer consume fat-focused meals. Nor do I want to. Too much fat the night before and my fasting glucose levels are elevated. Too much fat in a meal and it takes MUCH longer for my glucose to come down. Too much fat, and I feel sluggish. More protein and my body feels energized. More protein and I can kick ass in a tough workout. And yep, I test my blood sugar daily, so please tell me I am wrong. It is very typical in a male dominate world for everyone to assume that men and women respond exactly the same way to the same treatment. But it's a fallacy and a dangerous one at that. Women of all ages don't respond to fat-heavy keto the same way men do. But older women in particular find they struggle to lose weight and bring down blood sugar when they focus too much on fat. I am by NO MEANS advocating for a low fat diet. But I am advocating for a protein-forward model. And for us not to consume fat with abandon all the time. So this recipe is perfectly keto friendly. It is extremely low in carbs AND you can choose to add fat via the milk or cream you use.
Well, I can't argue with your personal experience. I had a 92 reading 1 hr post meal last night. Sugar alcohols cause me bloating, so, I can't imagine what they are doing to my microbiome. Meanwhile, I see links to heart attack and stroke with erythritol use. Me, drinking hot chocolate with zero sweetener as I type this...but, with butter, coconut oil and organic whole milk. Sounds like you just need someone to cook for! :)

They are all very good quality ingredients, I think you could easily just make the mix and be happy with it.
I'm guessing you don't need milk because you add heavy cream.

I don't know what brand you're using but I find little to no taste from almond milk. But hemp milk or macadamia milk are also great options.

Just made it up. I used full fat canned milk, about 3 tablespoons and hot water like you do with old fashioned cocoa. Turned out great.
Mix nut milk and heavy cream in a 3 to 1 ratio and it is perfect to make KETO hot cocoa.

I ran out of almond milk one day and added water and almond flour in my blender. Ta da! Almond milk! I don’t know how much I used, I kept adding both until I had the taste I wanted. Do you think there’s a way we could do something like that with this recipe?
You can certainly add it as the milk but I think adding the almond flour to the recipe itself would result in a terrible texture.
I’m not this fancy… cocoa powder, a sweetener packet, a pinch of salt a drop of vanilla extract into milk of your choice… that’s it… easy…

How is that "keto" with no appreciable fat in it?? Adding coconut and or some butter will add so much to this mix. I also seriously question your sweetener choices. I do without it altogether lately, but my first choice would be stevia. I used to used a dash of maple syrup.
Why does it have to have fat in the mix? It's just a sugar-free mix and you add the fat with your milk choices. And keto is NOT all about fat anymore. I question your choice of sweeteners too 🤣
Keto, is ALL about the fat, in that its the only macronutrient that does not elevate blood glucose levels and hence a lower insulin response. The fat will also satiate and make more creamy texture.
@@karlbe8414 Sorry, friend, but it's no longer fat fat fat all day long. Most keto experts (including myself) have come to recognize that all fat, all the time, isn't always the way to go and we need to rely more on protein. And too much fat can cause insulin resistance and keep blood sugar levels elevated. Additionally, keto is not one size fits all.
Before you berate me on how wrong I am, do a little reading into it - the keto perspective is changing and the emphasis on fat is decreasing.
While this is anecdotal evidence, it holds absolutely TRUE for me and my body, as well as many of my readers and followers. I am an older woman who's body is changing and I noticed a distinct shift in the past 5 years or so in how my body metabolizes macro-nutrients. I can no longer consume fat-focused meals. Nor do I want to.
Too much fat the night before and my fasting glucose levels are elevated. Too much fat in a meal and it takes MUCH longer for my glucose to come down. Too much fat, and I feel sluggish. More protein and my body feels energized. More protein and I can kick ass in a tough workout. And yep, I test my blood sugar daily, so please tell me I am wrong.
It is very typical in a male dominate world for everyone to assume that men and women respond exactly the same way to the same treatment. But it's a fallacy and a dangerous one at that. Women of all ages don't respond to fat-heavy keto the same way men do. But older women in particular find they struggle to lose weight and bring down blood sugar when they focus too much on fat.
I am by NO MEANS advocating for a low fat diet. But I am advocating for a protein-forward model. And for us not to consume fat with abandon all the time. So this recipe is perfectly keto friendly. It is extremely low in carbs AND you can choose to add fat via the milk or cream you use.
Well, I can't argue with your personal experience. I had a 92 reading 1 hr post meal last night. Sugar alcohols cause me bloating, so, I can't imagine what they are doing to my microbiome. Meanwhile, I see links to heart attack and stroke with erythritol use. Me, drinking hot chocolate with zero sweetener as I type this...but, with butter, coconut oil and organic whole milk. Sounds like you just need someone to cook for! :)

Same thing! It's all hydrolyzed collagen (makes it easier to digest). You will see it called collagen, collagen protein powder, or collagen peptides.

Why would you have to? This is a mix... meant to be made the same way most hot chocolate mixes are made.
