    I just tried this in a non-stick bundt pan, buttered and coconut floured and cooked it for 30 min or so and it turned out GREAT!! Thanx for this amazing recipe!!

    There's just something so satisfying about seeing a food being cut into with a fork or spoon, something about how it gives or resists, the texture as it's lifted up away from the plate, that really gives an "ahhhh" finish to a video.

    I have my husbands grandmothers recipe from the depression. They used mayo because eggs were hard to come by if you didn't have chickens. I am so going to make this on a much smaller scale. It is just me. Thanks!

    The recipe online calls for 20-25 minutes, saw other people cooked for 30 min. 25 min minimum-30 min for a 9 inch pan worked for me

    made this cake for mothers day so my husband and I had a keto dessert while everyone else had a oreo dump cake .YUM I thought this was much better than theirs lol. Cut so nice was very yummy will make again!!!! Thank you !!!

    This looks amazing as l am a die-hard fan of chocolate mayonnaise cake, for taste and sentimental reasons. It reminds me of family reunions when l was a kid when someone- probably one of the great aunts or older cousins made this- and it was so unique and different tasting and l rarely have had it outside of a family gathering so it is just one of those special treats that has a lot of fond memories tied up into it.
    Now seeing someone make a keto version of if is like a gift. I cannot wait to try this and thank my mom for sending me this link! 🤗💓

    No when I first started keto four years ago I wasted a lot of ingredients since I found your channel so far I’ve liked everything I’ve tried and I feel more willing to try bigger things like that cake because I don’t feel like I’m wasting ingredients it’s awful to make something and then throw it in the trash I really appreciate your website and I bought your book thank you for your help

    My mom made the best mayonnaise cake ever she replaced eggs with the mayo, but I assume because you make this cake with almond flour, we need the eggs for the rise? I am going to make this cake for sure, it looks delicious and Chocolate cake is my favorite!! Thanks for sharing this!

    Thanks! I made your Earthquake cake and it is sooooo good! I have a few questions.
    1. Can you use cream cheese in the icing?
    2. Heavy Cream in place of coconut cream
    3. Can you use your homemade mayo
    4. Can you freeze

      @@22ERICSHELLY Hello, I was a vegetarian in my teens and now am doing keto, but I have always loved nutritional yeast since my vegetarian days. Nutritional yeast is inactivated, so it doesn't cause bread to rise like active yeast does. It just adds flavor, and since most of them are fortified, it's better to use it towards the end of cooking if possible so the vitamins don't break down. I have seen some keto bread recipes that use it in the dough, but again, just for flavor because it is not alive. It has a nice umami, nutty, cheesy flavor to me. Plus it is useful for thickening sauces and soups. I made keto jambalaya the other night, and added a couple of tablespoons at the end to thicken the sauce since I didn't use a flour based roux for the broth. It's good on chicken, shrimp, roasted vegetables, salads, in dressings, "pastas" in place of parmesan cheese or in addition to if you are trying to cut back on cheese a bit (nutritional yeast has less calories). It tastes better than it smells, so don't let that turn you off. It's high in fiber and protein, so I recommend experimenting with it and sprinkling some on many savory dishes!

      I used stevia and fed a cake to my best friend, she started feeling cold and unwell and I had nausea! What a disaster!! Be aware of the side effect. I have found a nice recipe online, it's 150g melted unsweetened dark chocolate(70%), 1 tbsp coconut oil and a few handful of salted nuts ( use your favourite nuts). Make little heads and refrigerate. Great for a sweet treat!

      Carolyn has said that it is better to comment on her blog because she will see the comments there Marshall than her videos on UA-cam. Coconut milk is sugar-free. And I’ve just started getting into keto baking and the baking supplies are very expensive. I live in Canada, so pricing may be different in the US, but I found only ground blanched almond flour at Costco here in Canada and for a 1.3 kg bag. It is $18.

      Both should last you through many recipes! A bag of whey protein lasts me months and I bake way more than most people. :)

    This looks so good! What do people recommend for those who have nut allergies though...? I can't use almond flour or coconut flour, and that makes a lot of Keto recipes un-makeable for me... :(

      Yes you can do it that... the bake time will change but I can't tell you exactly how long. I would check on it frequently... go with at least 5 minutes less than the stated time and keep checking it.

    I made this for my birthday. Texture was nice but I didn't care for the taste. Maybe it was my cocoa. It did taste better after a couple days. I needed more chocolate flavor. Any suggestions?

      You need to take many of the same measures you do for conventional baking at altitude. Please google the article by King Arthur Flour as it is very thorough.

      @@AllDayIDreamAboutFood I think so. Anytime I had coconut cream my nose stuffed up instantly. Just like it does with regular cream. Sadly this is the main thing we use with keto. If you could think of anything I’d be so appreciative. Your recipes are amazing.

    I have seen chocolate cakes that grease the pan with crisco or butter, then use a dusting of cocoa powder instead of how we'd dust traditional cake pans with flour. Do you know if this would work for a keto cake? I don't have parchment paper. Thanks.

      So this is a bit complicated but you need to figure out the area of each baking pan. For my recipe, the area of a single 8-inch circle is 50 square inches. So that would be 100 square inches total, if you're doing two layers.
      The area of a 10 inch circle is 78 square inches. Which means you will have too much batter for your pan. I would recommend planning on one or two cupcakes in addition to your single layer 10 inch cake. Hope that helps!

I went ahead and made a second batch cause I wanted a 10 inch 2 layer cake, & it came out beautiful.. each layer is 1 inch high. I can't wait to frost and decorate this cake.. Thank you for this recipe.. also it's my 1st Keto cake 😘

    We can thank the Great Depression for the Mayo cake. The first time I had heard of it, I thought it was really strange, but then I realized what Mayonnaise is made of. Oil and eggs.

    Can you use another sweetener like monk fruit or finely ground allulose? I don't like the cooling effects of Swerve. In addition do you have the link for the pre-cut parchment paper.

      In the cake, yes. In the frosting, that's trickier and I can't say for sure. Evenly finely ground, I think that the alluose would result in some grittiness in the frosting. Here are the parchment circles! amzn.to/3nrs7KU
