I made this today. Oh my goodness, it is so yummy and easy! I confess, I didn't have any plant based milk. I simply used whole milk. The recipe turned out very thick and creamy. A lovely substitute for chocolate mousse. The recipe made the perfect amount to fill 6 dessert cups repourposed from Costco Tiramisu.
Looks great! I'm going to have to sprinkle a little espresso powder in with the cocoa powder for that hint of mocha! Thanks so much! I was needing something chocolaty and low carb!!!❤❤❤
You can avoid that whole tempering process by thoroughly mixing your eggs with your milk at the outset, but it requires stirring until the milk comes up to temp.
Looks good and creamy. I have used a can of coconut milk plus Lily's chocolate chips sweetened with stevia but cost is high. A cheap instant single serving mixture is 1/4 cup Peanut Butter Powder + 1 packet Stevia + 1 TBSP unsweetened cocoa powder + mix in enough cold water to form a pudding, not much water about 1/8 cup
Even after using the blender, I usually pour anything with eggs like this through a strainer. I'm never quite patient enough to heat it slowly and completely avoid any bits of scrambled egg 🙂
I was really wanting some pudding this weekend and you totally confirmed my thoughts of a proper recipe. ❤ thanks, Carolyn!! I love your Ultimate Guide to Keto Baking ❤❤❤❤
Thanks! I've actually been craving pudding lately for some reason. The base should be easy to use for many different flavors. I got some Lilly's butterscotch chips on clearance not long ago. I'll have to try those! Of course chocolate is my favorite... so thanks for that!
you know those keto recipes that claim to be SOOO Good, & then taste chalk? This isn't one of those! Dang, this was very good! If you have a choc craving & are doing low carb, keto, etc. this will hit the spot. My sister made it for us, we are both doing keto, carnivore "lite" she made with coconut cream instead of heavy cream, to keep us losing weight, cream stalls us out. Not kidding, it was very very good, creamy, chocolatey, definately a keeper, in fact she is making more for us as I type this! Thanks for the recipe!!!!
Have you ever heard of jumbo raisen cookies, they were soft and cake like texture, moms used to make them when we were little 60s? Or maybe 70s. Omg if you could duplicate that recipe ... it would be like a dream come true
@@rosm6621 Yeah, makes it a bit easier since you can skip that step by just blending powdered yolks into the liquid and warming it to just before it starts to simmer. Makes for a very smooth custards without cracking or separating eggs and dealing with tempering them. Just avoid bringing it to an actual simmer because that can still cause the proteins to coagulate. I frequently make banana custard in a similar way using coconut milk and Jocko banana cream protein powder. I typically add about 2 tbsp of egg yolk powder per cup for a very rich and creamy custard.
Your cookbooks are my favorites! I can't wait to try this recipe and I'll send it to my sister-in-law as well. She's the true chocoholic in the family.
I really appreciate your wonderful recipes and that you always offer alternatives for dairy free, vegan, etc. Is there another alternative for a thickener, something I have in my pantry, such as arrowroot powder? Would that work as well as the 2 options that you give and if so, how much would you add? Thanks!
My family has been making chocolate gravy for the last 100+ years. I haven't been able to eat it since I started keto in 2018. When still hot this looks exactly like chocolate gravy. I'll be using it for that the next time they make chocolate gravy! I'll just need to find a good clean keto biscuit recipe!
Thank you for the recipe. I used to make homemade pudding often but haven’t for many years and not since I began following a keto diet. Question: This recipe and a lot of your recipes call for “Swerve” but that brand makes multiple sweetener options and I never know which one you are referring to. Can you please clarify which actual sweetener you recommend? Thank you!
That looks awesome! The hillbilly in me wants to pour it over hot biscuits and call it chocolate gravy, like my ancestors used to do. I need some keto bisquik. 🥰
Why? This is keto the idea is to not use carbs. YOU can use w/e sweetener you want but it might leave an aftertaste if it's fruit, unless it's monkfruit.
First time Id heard of glucomannan (maybe heard Konjac root previously I think) - now Ive got a pack ordered for my next monthly delivery from Amazon :) Thank you.
Butter and those milks are fine on keto why the heck would you omit them? You need every ingredient for a reason when baking/cooking especially keto dishes.
It's not going to kill you, cooling down a hot dish will leave a skin unless you probably let it cool a bit as you're stirring it and then put it in the fridge. Wrapping it will trap moisture though.
This is for people on a keto diet... they CANT have carb filled foods with that high fructose bs the company's call sugar. A desert is called a desert for a reason it's not supposed to be eaten all day and 276 calories is not a lot.. kilo calories haha get a load of this fuckin' loser over here 😆
What's the problem? Many of us consume these and have no issues. Don't assume everyone is the same. And don't assume that all of us can eat sugar without issue.
Thank you Carolyn!
YUM ~Great recipe! I love your happiness, dancing and singing!
You can also make an amazing mousse with Lillys Chocolates and heavy whipping cream. That's it. No sugar and not many net carbs.

Looks wonderful. Saved to my recipes. Thank you Caroline.

Oooooh I’m going to try this too!
You can avoid that whole tempering process by thoroughly mixing your eggs with your milk at the outset, but it requires stirring until the milk comes up to temp.
Yep. I've been doing this for years. It's so much easier.
You could also warm the eggs in hot water before shelling them to bring them to room temp.
I’m so grateful for this channel❤️

YUM-O! Thank you for this. (Do you remember the precursor to pudding in a plastic cup???? Did you eat it out of a can? That's a long ago memory!)
Oh wow, I had forgotten about that, but you're right!!
That looked fabulous. Thats going on the list for sure!
*The perfect way to satisfy my sweet tooth without any guilt. Can't wait to make it again!*
if you want to save some time and effort, powdered egg yolks are pretty great for this
Would you then not have to temper?

Oh my yummies.. cant wait to try this .. between fb and youtube I am getting some great recipes from you!!!
Would arrowroot work as a thickener in this recipe?
Thank you.
Love chocolate pudding!
Yum!
All spills, splashes, and grated foods are cooks treats 😋

Im looking forward to doing the Chocolate Pudding dance!! 🎉🎉🎉🎉🎉🎉🎉🎉🎉🎉🎉🎉🎉🎉
😂 Wish I could see it!

Oh my goodness!!
I love biscuits & chocolate gravy.
Funny, years ago Southern Living Magazine featured it!
Best intro to a show hehehe
Can i use monk fruit sweetener instead of allulose?
Why? This is keto the idea is to not use carbs. YOU can use w/e sweetener you want but it might leave an aftertaste if it's fruit, unless it's monkfruit.
First time Id heard of glucomannan (maybe heard Konjac root previously I think) - now Ive got a pack ordered for my next monthly delivery from Amazon :) Thank you.
we made ours without it, still was creamy, choc yum
I've never watched your videos but I just subscribed!
Yummo, I'm making it today,, thank you ❤
Yay! Thank you!
Yum! Looks delicious 🎉❤
That looks incredibly yummy!
Do you recommend covering the pudding with plastic wrap (on the surface of the pudding) to prevent a skin from forming?
No, it'll trap moisture on it.
If I replace the milks and butter does it change the macros?
Butter and those milks are fine on keto why the heck would you omit them? You need every ingredient for a reason when baking/cooking especially keto dishes.
Could you add gelatin to make a
Chocolate pie filling?
Just use this, no need for extra ingredients. Pudding is pudding not gelatin. One is more thicker, the other more gelatinous.
I buy monkfruit sweetener with erythritol. Can I use that. What is the ratio to sugar when I’m baking?
Very nice 👍👍
What whip cream are you using?
Yum!
I don't have glucomannan. I'm thinking about using beaten egg whites as a substitute. Has anyone tried this method?
Where to purchase glucomin?
How many calories and carbs are in one cup of the chocolate pudding
Could I imake ot banana pudding and can I use all cream
Try it, see what happens.. THIS is why she bakes/cooks because she knows things will work and turn out good using those ingredients.
Is there a trick to not allowing a "skin" to form on top of the cooling pudding? In the past I've used plastic wrap.
It's not going to kill you, cooling down a hot dish will leave a skin unless you probably let it cool a bit as you're stirring it and then put it in the fridge. Wrapping it will trap moisture though.
arrowroot?
❤️❤️❤️
❤️🥰❤️
Interesting, but can’t have butter ,
no sweetener either .
❤️🙏
Chocolate custard
Why not just buy some sugar free instant pudding?❤️
You can if you don’t mind eating all those chemicals.
I'm sad that that little bit is a serving
At 276 kcal, you might as well have the real thing...
This is for people on a keto diet... they CANT have carb filled foods with that high fructose bs the company's call sugar. A desert is called a desert for a reason it's not supposed to be eaten all day and 276 calories is not a lot.. kilo calories haha get a load of this fuckin' loser over here 😆
Come on now, swerve and allulose? For real? What does that do to your bowels? 0:15
What's the problem? Many of us consume these and have no issues. Don't assume everyone is the same. And don't assume that all of us can eat sugar without issue.
What does having a stick up you do to YOUR bowels kjd?
YouTUBE
"Chock" full of oxilates.
Allulose is a form of fructose so not really sugar free I feel
Your body doesn’t process Allulose which is why it doesn’t account for sugar.
It’s all about the insulin response. Stop being a Karen.
No insulin response and you pee it out
The body doesn't break it down or absorb it. It comes out in the urine. It is also great for helping to control hunger and for our gut biome.
Look at the video dr boz did on allulose
Yum!
