They like them because it shows the dedication to something on a physical and mental level as well as those competing at the varsity level are the best in their HS community. They also especially like captains as it supposedly indicates leadership. That said, HS and the coaches know this which is why it's not uncommon for all seniors on the varsity team to be captains, so they can rightly put that on their academy and college applications. They're trying to game the system but I'm sure the admissions officers know this, too.

"you don't need to be a varsity athlete"...but it sure doesn't hurt to be a multi sport varsity player.
