Use baking soda to tenderize meat. This may sound weird, but stay with us. As Cook's Illustrated explains, baking soda alkalizes the meat's
surface, making it harder for the proteins to bond & thereby keeping the meat
tenderer when cooked. ... ④ Cook as desired, then bite into a seriously tender piece of meat.

Watching these videos are making me miss my mom. Especially seen Paula in her dress and flat shoes. So precious. I sure hope her children realize how blessed they are to have her and not take it for granted. Time is precious dont waste it...
A surefire Southern tradition! My wife and I were watching this and when Paula snuck some more salt into the pan, my wife said, "That's just like my Mama does!" Jamie knew what was up from the get go! Two things I learned was to just use the egg whites for a binder on the steak, and the other was the reason it's called "Chicken Fried Steak." My friends in Texas always call it Chicken Fried even though it's the same thing we always called Country Fried. Well, Jamie cleared that up with a perfectly logical explanation that it's just like frying chicken! I had a hankerin for this when I saw some cube steak in the store the other day. Now I'm gonna go back and get some and make this wonderful dish. Thanks ya'll!

I hope my son will come home and visit me soon. BTW these comments are funny. People are mad about Jamie being mad about salt and others are mad about him tasting the gravy with the spoon and putting it back in the pot. No Pepper on the table? OMG! LOL! Paula it thrills me to no end to see you use wet concentrated stock. We absolutely love it. They make so many wonderful flavors!
I just started using it. It is so much more flavorful. Plus you don't have to worry about using up the box of stock! Yes, I know you can freeze it or use an ice cube tray but I always forget it in the freezer. Especially with all my Hubby's ice cream lol 🍨🍦

I use far more black pepper than my family does. I love a lot of it on meals like this, mac and cheese, vegetables, ect.

Setting fried food on a rack instead of paper towels keeps them crispier and you won't lose any delicious breading🍷

My Grandfather was the cook when I was growing up. Every Sunday he made smothered pork chops with gravy,rice,with big azz biscuits. Mann I tell you.... memories! I didn't start cooking til age 30 but well on my way💙💙💙

Great video, Ms. Paula! Years ago I got a "chicken fried steak biscuit" from a food truck in Van Nuys, CA,with a chicken breast piece on it, and it wasn't even breaded. Next day, I told the truck owner, and she said, 'yes, it was grilled, not breaded, we'd run out of the breaded ones.' Told her that chicken fried steak is beef, and she said 'no, it's chicken.' No, it's beef. Coworker spoke up and said, 'no, it's chicken, it has chicken in the name, that's how you know it's chicken.' Heaven help us all, if the majority of people think that chicken fried steak is chicken meat... What do they think the "steak" part of the name means?

One of our favorite dishes with our home grown beef. Can't beat it.
Thank you Miss Paula and Jamie. This is one of my top favorite meals. You brought back memories when you mentioned the wooden spoon. My sons are in their middle 40's now, but back in the day I would use one on their butts. That is until the youngest one hid it, and I never did find it. Those were days when mothers did that.

Yum! When I was a kid, my mom would fix country fried steak fairly often. Sometimes when she was real busy, she would put it in the oven to simmer while the biscuits baked. My neices said it would take 2 hours to get it on table! It didn't, they were just hungry kids! Fond memories of days gone bye! Thank you, Paula Deen!

I dredge my steaks in flour and crushed saltine crackers combined and leave the gravy on the side.......so crispy on the outside

This is the thing about good gravy... you can learn but it takes practice.. you learn what you need and don’t need. My mamaw tried to teach me, you can learn the basics but you gotta do it to learn how.

Paula I love you so please take this with love! My Mom always taught me to never hit you spoon on the side of a glass bowl when you are mixing because it will little chars of glass in the food you are mixing! Always use a plastic mixing bowl or use your clean finger to get the excess off if using a glass bowl.

I do it a bit different, Miss Paula! For cream gravy, You must not leave it unattended. You have to watch it and stir it constantly or it will be ruined. I usually start at a medium heat and reduce it if it gets too hot. To make each cup of finished gravy, I use 1 Tbsp. oil plus 1 Tbsp. Flour cooked together until no lumps, then I add 1 Cup of liquid to make 1 cup of gravy. So lets say you want 3 cups of finished cream gravy, you would cook 3 Tbsp. heated oil with 3 Tbsp. flour until no lumps to form the rue, then add 3 cups milk and stir until thickened.
