      Hi i hope you can answer me.
      Yesterday i did it but did not get chowie and a little hard.
      I did two mistakes.
      First.
      I put water and the flavor all together at once and became liquid.
      But olso i put less sugar (100 grms)
      Couse i didn't have much sugar there.
      So... Here's my question for let them be elastic i need to add more sugar? And how much?

      @@shagundhir5824 It must be a glutinous rice flour. The one she mentioned in the video is a brand called "Mochiko", but any glutinous rice flour works.

      The only substitutes for cornstarch are potato starch or tapioca starch.

    so many negative comments about too much sugar. Dessert is different all over the world, mochi is not something you have every day it's a treat, so it's eaten sparingly and usually on special occasions. The video said if you plan on eating it the same day you make it, to add less sugar. the extra sugar is to give it a desired look even when stored for later use.
    Like I said this is not an every day type of dessert. Thank you for sharing this video 😊 I love all the videos you share. I appreciate all the hard work and effort you all put into making these.

      calamitasCorvus I too think that people should do research but I also understand that when it comes to "healthy diets" that there's a lot of misinformation that is too common. So in my eyes it's understandable why they ask for the nutritional value is or if there's other ways to adjust the values without compromising the dish. Others who aren't necessarily health freaks but do have a specific diet they need to follow just want to know the values because they have a blood disorder and are curious to see if they can eat it or if not wonder if they can adjust it in any way to fit their dietary needs.
      I myself have hypoglycemia and because I've consulted with nutritionists and endocrinologists I already know how to adjust this dish to fit my dietary needs but I'm also aware that not many sick people can afford to go see dietary specialists and just go by the first piece of information they can find online (which could work, injure or kill them).

    All these people complaining about the sugar should NOT watch a video on how to make hard candy.... or truffles.... or fudge.... or caramel..... or any other kind of candy!! It's candy, people; no matter where on earth it's made sweets like these will always be mostly sugar... goodness.

      +Angela Pace If you have a pot then you have a steamer. If you have a lidded wok then place chopsticks in the bottom to create a platform for your plate.
      I've inverted a ramekin in a pot to make a platform for the plate too.
      As long as there is room between the edge of the plate and the pot then steam will get up to cook the food on the plate.

    "Buhuhuhu, so much sugar, buhu..." Come on, guys! It´s a sweet treat. You are not supposed to eat 2,5 punds per serving. ;)
    If you eat store bought chocolate and other sweets (or burgers made by the golden M) you´re consuming at least the same amount of sugar than eating one daifuku.
    And even if you´re preparing it yourself and plan to eat 2,5 pounds you simply reduce the sugar untill you are happy.
    It´s just a recommandation. No evil guy will pop up next to your stove, hitting you with a baseball bat, because you didn´t stick 1:1 to the recipe....

      Yes, I know that. I witnessed the process of traditional mochi-making when I went to Japan. But nowhere in the title it says "100% traditionally made mochi". They don't use the huge wooden mortar and pestle in this video, too, but nobody's complaining about that. ;) It's just an easy-to-do recipe, adjusted to the western (American), sugar-spoiled tastebuds. All of the Japanese sweets I tried (and believe me, I tried a lot) were very subtle in sweetness, very gentle and mild in taste, and I think that lots of Westerners wouldn't like it that much.
      I just don't get all of that crying about the sugar content. This works with 1/3 cup of sugar per every cup of mochiko, too. Or with no sugar at all. So just make it the way you like it. :)

      People don't realize how much sugar is in candy, cookies, cakes, etc. until they make it themselves and physically see how much sugar is needed to make the sweet treats we eat!

    Same horrible thing here. We tried it twice. Followed the instructions to a t. Measured grams, set a timer, controlled temperature. It all was fine until after steaming it. The dough went in just like in the video and came out like a rock. The first time we tried to get it soft with the sugar, which part of it worked, but the rest was just hard clumps. We were able to make 5 mochi with that red bean paste, but after a few hours they looked like eggs sunny side up. This time, we just threw the dough out after it came out of the steamer as a rock hard lump again. Will try microwave recipe next time and if that doesn't work, then no more mochi.

    Love this recipe! I used shiratamako instead out of personal preference with matcha and it came out so smooth. When it was still hot you could barely tell the difference between the anko and the mochi!
    Was so delicious

    They did say you can use less sugar. It will harden within hours however.
    When it gets hard you'll have to toast it or nuke it, then serve it in hot green tea. It's quite good that way.

    I once went to Hawaii and saw mochi ice cream. At first I thought it would be gross, but it was really good! Although I'm from Massachusetts, where there isn't a lot of Japanese food, it's one of my favorite desserts!

    Dang, I really wanted this to work! I read the other troubles about the mochi clumping up and I made sure to be careful. Ended up with a clumpy mess. Not smooth in the least. I made sure to heat the sugar well too

      Make sure cover when you are steaming. Dont let the hot steam drop to your dough

      Same. I covered to steam and used a towel so it didn't drip into the dough and still a clumpy mess no matter how long I stirred the sugar in. This is my second failed attempt and I am back to the comments to troubleshoot. I will probably just give up on this recipe and go back to my less sweet microwave recipe. 😞

    Hmmm I used the exact measurements but my dough after adding water looks a lot more runnier and watery then hers. I used glutinous rice flour, does that make a difference?

    hi, i tried making this, but when it was in the pot and i had finished adding the sugar, the mochi was very uneven. The mochi would not become liquidy and it was very uneven with some soft chewy parts and some hard parts. any idea of what i did wrong?

      Two possibilities. 1. The rice was not cooked through. Maybe increase the time for steaming or maybe the steam was too weak?2. Sugar was not melted and blended in well. It's very important to melt the sugar well and blend in with rice each time.Hope it will go well next time you make it!

      JapaneseCooking101 the sugar would not melt and just stayed in chunks. i left it in the steamer at the highest temp. for 20-25 min too. the mochi just wont become the liquidy texture :(

    You ladies got to be very strong , 2 cups of sugar for one cup of flour.. I ate two mochi with a lot of tea , and it almost got me killed with its sweetness. Then the sugar shock kicked in and finished me. Yes , this is my ghost haunting you!

      Regular rice flour will not work for this recipe. Not sticky enough. It has to be Mochiko to make Mochi.

      +Elif Korkut As Mochiko is almost impossible to get here or faaaar too expensive, I am using glutinious sticky rice flour which works as well (but has not the great taste of Mochiko). You can buy the sweet sticky rice and cook it by yourself as well and then you have to mash it very good (like these Mochi-making-machines). This worked for me as well ;)
