No you don't have to. I live in Japan and make mochi often. Just the rice flour is fine. Do the process the same general way.

That's the most informative mochi recipe I've seen so far. My mochi was very sticky and any other recipe didn't tell me that's right and I should use other starch to make it non-sticky to my hands - I was supposed to knead the dough in gloves that I didn't have. It was a complete disaster, my whole hands was in mochi and I couldn't wash it off. Thank you for the instruction!

  • @kienla4280

It's much easier and less messy if you wear latex gloves coated with a bit of oil when forming the mochi. Also, it would taste better if the potato flour were pan fried before using as a coating. Traditional, glutinous rice flour (same used to make mochi) are fried to lessen the "raw" taste before use as a topping. I think it is also smart because it would help kill off any bacteria in the flour.

@Wassmer Faby Put the rice flour in a Frying pan (no oil!) on medium heat and continuously stir it until it turns a light Beige color. This should take about 20± minutes.

Hello, sticky rice flour is not available to me, but I have calrose rice medium grain. I grinded it dry and raw and ground it with a little water and sugar at the end. I cooked it in the microwave and it was the same texture and taste of mochi with sticky rice flour exactly so literally that I doubted Rice type, if I do this will it be authentic mochi? In the end, the same taste and texture, where can I send you a video of my mochi?
