    Ingredients
    Mochi
    110g glutinous rice flour
    30g cornstarch
    30g granulated sugar
    170ml milk
    20g unsalted butter
    Red food coloring
    Filling
    Whipped Cream
    260g heavy cream
    50g cream cheese
    30g granulated sugar
    Strawberry Sauce
    300g fresh strawberries chopped
    50g sugar
    1 tbsp lemon juice
    Steps:
    Wash and chop the strawberries into small cubes. Grab a pot, bring together strawberry cubes, sugar and lemon juice, and mix well and keep stirring over medium heat until thickened. Transfer into a clean bowl, wrap it with plastic wrap and let it set in the fridge to cool down.
    In a clean bowl, mix well glutinous rice flour, cornstarch, sugar, milk and some red food coloring. Grab a nonstick pan, pour all the batter in, add in unsalted butter, keep stirring over medium heat until thickened and a dough ball forms. The dough ball will not stick to the pan, and the texture is quite translucent and stretchy.
    Dust the working surface and the dough with more cooked glutinous rice flour, wear gloves; keep kneading the dough until it becomes very stretchy. Divide the dough into 6/8 equal pieces and roll them into 6/8 round flat sheets.
    In a clean bowl, mix well softened cream cheese and sugar, add in heavy cream and use a hand mixer to beat until stiff peaks form. Transfer into a piping bag.
    Assemble the mochi. Place the mochi dough over the mochi mold. Pipe in whipped cream, strawberry sauce in the middle, cover with more whipped cream, and wrap it up. Put it into a cupcake liner and serve.

    I doubled up this recipe today and got 18 perfectly mochi in total. I knead the dough by stand mixer actually, save me time and energy, don’t be afraid of it being sticked to the bowl, use the scrapper which should helps to take out 99% off the bowl. Don’t be shy when it comes to flour the surface and the dough, after that use the brush to brush off most of the flour before adding fillings. I use my measuring cup to form my mochi, it depends on the size that you want basically, can be size of 1/2 cup or 1/3, I used 1/2 cup size and got 18 mochi. Be confident with this recipe guys, which is perfect and fun to make. Thanks @u-taste.

      If you double the dough, it makes 18 seeds, so how many grams of shell per seed? I want to try🙂

      @@cuit1239 hmm. My guess to your question is just cut them into 18 even piece using your sense of dimension, or weight the total dough that you have, then multiply it to 18 and you shall know exactly how many grams each using scale. I guess mine were about 38 to 45 grams each.

      That means you you cook the flour in a hot pan until it starts to fragrance, my guess is a few minutes.

      Maybe add a lot of glutenous rice flour to make it less sticky

      More flour definitely . Flour the surface then the medium before you knead.

    followed this recipe and was an absolute disaster. tried 3 times until all ingredients were gone and still could not even roll the dough out. This experience of trying to make it has put me off Mochi forever. Stupid invention. I never want to hear the word Mochi ever again.
